- In today's video, y'all,
0:02
I got a hankering for an orange cake.
0:05
And I like to do candied oranges when I'm making that cake,
0:10
because it just adds a great sweetness.
0:14
I mean, it takes an orange cake over the top.
0:17
So I have peeled four oranges.
0:25
I've got a special peeler right here
0:28
that Kari's mother gave me,
0:33
and it is the best peeler,
0:38
it's for peeling things where you want a real thin skin.
0:42
And look, it hardly left any pith on it.
0:45
And I started getting a little deep there.
0:47
But depending on what size you want 'em.
0:50
But, I say I peel these, I really didn't, Theresa did.
0:56
- [Theresa] I was about to say.
0:58
- And she did it with a knife.
1:00
But if you have one of these peelers
1:04
that are made for thin skin things, look at that,
1:08
not one speck of pith on that.
1:14
I'm bragging on Jill giving me a great peeler.
1:20
So let's see if I can get one more little strip out of this
1:29
it's all the pith it left.
1:32
Love it, this is gonna be so good on that cake.
1:35
I don't like where it left so much pith.
1:38
But anyway, you can store these up in your refrigerator
1:42
in a airtight container for a couple of weeks
1:47
You know, this would be good to me in a cup of hot tea.
1:54
- With chocolate. - Hot iced tea
1:57
- [Theresa] Orange and chocolate go good together.
2:02
All right, so, I'm gonna get my sauce pan,
2:07
and let's see what I want to cook those in.
2:15
I think maybe it'll fit in this.
2:18
And we really don't want this to come to a boil.
2:22
I'm gonna put my water in,
2:27
and then now, it calls for a cup and a half of sugar, but-
2:34
'cause half of it's for, the other half-
2:35
- Yes, the sprinkle after we-
2:38
So, you say that's a cup, Theresa?
2:41
- [Theresa] Yes ma'am.
2:42
One cup, and then a half a cup.
2:45
And then I've got a half a teaspoon of salt.
2:48
So we're gonna to bring this over the heat
2:54
and stir that until, you know, the sugar dissolves,
2:58
and then we're gonna add the orange peelings.
3:03
Okay, y'all, I can see that my sugar
3:08
and my salt is now dissolved,
3:10
so I'm gonna put my orange peels in there.
3:13
And you don't want this to boil,
3:17
it could get your oranges to turn little brown,
3:22
and you don't want 'em brown.
3:24
So we're just gonna simmer this.
3:29
- [Theresa] I forgot to give you the vanilla.
3:32
- [Theresa] Not sure when that goes in, but-
3:34
- I can't remember either.
3:36
But anyway, I'm gonna watch this
3:38
and make sure that it does not boil,
3:43
that it just simmers, 20 minutes.
3:47
And I got out my rack to drain 'em on.
3:50
So, we're getting closer and closer to that orange cake.
3:53
Okay, so our orange peels have been simmering
3:56
for about 20 minutes, and I never let them come to a boil.
4:01
Now I'm adding a teaspoon of vanilla,
4:03
and we're gonna let that sit for 10 more minutes,
4:07
and then we're gonna put 'em on our rack.
4:13
There we go. 10 more minutes.
4:17
Okay, I added my vanilla,
4:19
and this has been sitting 10 more minutes,
4:22
so we're gonna come down here.
4:27
I put it over the sink so the syrup won't go everywhere.
4:39
I'm gonna try to put 'em in a single layer,
4:44
but I'll probably run outta patience. (chuckles)
4:47
So we're gonna let this cool,
4:50
and then we're gonna sprinkle them
4:52
with the rest of our sugar, and then let them dry,
4:57
and they'll be ready.
5:01
It tells you just to let those cool enough
5:05
to start getting tacky.
5:09
I don't think we want them to dry all the way,
5:11
because the sugar might not stick to 'em as well,
5:21
and we definitely want that sugar on them.
5:25
The last time I made these,
5:27
I think I let 'em cook a little bit longer
5:31
because these still have a lot of body to 'em.
5:38
So you can play around with it and see,
5:42
do it the way you like it.
5:45
We'll get 'em good and dry.
5:48
Okay y'all, so that's it.
5:51
We're gonna let these dry.
5:53
And Theresa reminded me the last time that I made these,
5:58
it took forever for them to dry.
6:00
So, put your patience belt on (chuckles)
6:04
and let them get totally dry,
6:08
And use them in your favorite cake recipe,
6:10
or your cookies, or in your hot tea,
6:15
however you wanna orange rind. (chuckles)
6:19
Love and best dishes, y'all.
