0:00
- Good morning, my friends out there.
0:03
The next few videos that y'all are gonna see
0:05
is gonna be all about five star recipes
0:11
from y'all's perspective out there
0:14
and I certainly respect
0:16
when y'all give any of the recipes five stars.
0:20
Just knowing that y'all like 'em and they work for you
0:25
So this next recipe that's been a five star
0:28
for a very, very long time is a double orange pork chop
0:33
and I'm to the age where I can finally admit
0:38
pork may be my favorite protein of all
0:41
and of course pork chops, Lord have mercy.
0:44
You give this girl a bone-in pork chop
0:47
and you won't know what it was
0:48
by the time I get through with it.
0:50
Now, I've got four center cut beautiful pork chops
0:54
and I'm just seasoning them up
1:02
and these are beautiful, beautiful chops.
1:15
Now, if I was not afraid anybody else would get this,
1:21
I would make one of those black with pepper for Michael
1:23
but he's gonna have to suffer without it.
1:27
All right, I'm gonna cut on my eye to about medium high.
1:35
I'm gonna add four tablespoons of vegetable oil.
1:43
All right, so in this bowl, I've got orange juice
1:47
and I've got a orange marmalade.
1:51
I thought I brought me a spoon over here, did I not?
1:57
And I'm just gonna, ooh, splash,
2:01
I'm just gonna mix these two together,
2:04
what I don't get all over me.
2:10
Our pan's getting hot.
2:11
I'm gonna add the three tablespoons of butter
2:14
to the four tablespoons of vegetable oil.
2:23
All right, so we're gonna cook these about six,
2:28
about six minutes per side.
2:33
I hope I can fit 'em all in here, Theresa.
2:35
Them some healthy chops.
2:38
- [Theresa] They are healthy.
2:41
- Yes, we is healthy people.
2:43
So I don't wanna flip flop those.
2:46
I wanna just turn 'em once.
2:51
So I wanna make sure that I don't turn them too early.
2:56
I wanna get them nice and brown.
3:00
I think I'm ready to flip these, y'all.
3:08
- [Theresa] Well, it may be the way I cook pork.
3:12
- [Paula] Maybe it is, Theresa.
3:14
- [Theresa] I don't think mine look like that.
3:15
- Well, now these are not like,
3:18
all right, I'm gonna just bust open that,
3:21
that little piece of fat so it'll go down in there,
3:26
get down in there and cook evenly.
3:33
Now, you certainly don't have to get chops this thick.
3:37
You can get just a regular fried pork chop thickness
3:44
or you could even use the boneless pork chops
3:47
but I will tell y'all this,
3:49
the bone is what keeps these tender and moist.
3:54
So we cook those probably for six or eight minutes,
3:59
So we have turned them over
4:01
and we're gonna do the same thing on the other side
4:04
and then we're gonna drain but all but a few tablespoons
4:08
of the butter and vegetable oil.
4:12
Okey-doke, y'all, I'm fixing to take our pork chops out
4:18
and put 'em on my plate
4:22
and I'm just gonna put a little piece of tinfoil over 'em
4:24
very loosely to just kinda keep 'em warm for us.
4:35
And I'm gonna reserve like three tablespoons
4:42
and I'm just gonna guess at that.
4:45
All right, I'm gonna move this up to about medium high
4:50
and then I'm gonna add my orange juice
4:55
and my orange marmalade to the pan.
5:01
Oh my gosh, I just do love, do love that orange marmalade.
5:17
Gonna make sure you get all those little brown bits
5:21
that have so much dadgum flavor in 'em.
5:25
Okay, y'all, our orange glaze is boiling
5:31
and I'm gonna let it boil till it reduces down
5:33
and that's gonna probably take six to eight minutes
5:38
Okay, y'all, that was about six to eight minutes
5:42
and you can see that it's slightly thickened.
5:47
So we're gonna put these beautiful chops back in there
5:59
and we're gonna flip 'em a few times to make sure
6:04
they get plenty of that orange flavoring all over 'em.
6:14
Okay, so we're gonna turn our heat down to medium
6:18
and we're gonna let them sit there and drink,
6:23
drink up that wonderful sweet glaze.
6:30
Hope these are ready, y'all.
6:38
Oh yeah, that sauce is getting nice and thick now.
6:54
So we're just gonna pour a little of that sauce
7:00
on top of 'em and then I'm gonna come over here.
7:08
I'm gonna pour the rest into our little syrup or gravy boat,
7:14
whatever you wanna call it.
7:20
Since I lost my cornea, I can't judge distance.
7:24
So if I'm going to try to thread a needle
7:29
and it went right there,
7:30
I would be over here trying to thread midair.
7:37
So that's why I don't really like to drive anymore.
7:44
Look, that's the best part.
7:56
If you like orange, you're gonna love this.
8:01
Now, all I have to do is cook some rice
8:07
and maybe some fresh broccoli or asparagus
8:10
and I'll have our whole meal.
8:18
