- Y'all, I get the sweetest emails
0:03
and letters from y'all ever.
0:06
So I just have to read you this one.
0:09
This was sent to me December the 14th
0:18
And you've just got to listen to this.
0:21
I can remember the day vividly.
0:24
My name is Dee Pantana
0:26
and I've been watching you for over 20 years
0:28
and I live in Stone Mountain, Georgia.
0:30
I can remember the day vividly
0:32
when I spoke with you on the phone.
0:35
My mom happened to be living with us at the time.
0:39
She lived with our family for 13 years
0:41
and she read the paper daily,
0:43
and one day she happened to read an article
0:45
about the bag lady and said I should call you.
0:49
So I called you at your restaurant
0:50
after I read that great article about how you got started.
0:55
You were so gracious and asked if you could call me back
0:59
in about 15 minutes because
1:01
you were finishing up at the restaurant.
1:03
And I really didn't think you would call me, but you did.
1:08
You were so kind and helpful to me
1:09
about getting a business started.
1:12
So I had a little business called DeeDee's Sweeties
1:15
and sold cakes, pies, and cookies
1:16
in a few restaurants, friends and family.
1:19
One of my best sellers was an unusual coffee cake
1:23
baked in an iron skillet.
1:25
I bake it in a nine inch cake pan now.
1:28
My sister gave me the recipe 44 years ago,
1:32
but I changed the flavor from almond to cinnamon/vanilla.
1:38
And it's really delicious if you add pecans and raisins.
1:41
And I'd love to share the recipe with you
1:44
and hope you'll try it and enjoy as much as others have.
1:53
what a sweet, what a sweet note.
1:57
And you know, I've worked really hard over the years,
2:00
but when I get things like this,
2:03
it makes whatever work I did so worthwhile.
2:09
So here is DeeDee's coffee cake, y'all.
2:12
It's one cup of brown sugar, a half a cup of white sugar,
2:17
one and a half sticks of melted butter,
2:20
two eggs from my chicken coop.
2:22
We finally got the chicken coop finished
2:25
with 10 little chickens in it and they're so precious.
2:29
I've got to show you Phyllis Diller.
2:33
That's the only one I've named so...
2:34
- [Eddie] We have to name a few more.
2:36
There's one - I know.
2:37
- [Eddie] that is just striking, all black,
2:43
and I think she should be named Elizabeth Taylor.
2:46
We'll name her Elizabeth.
2:49
Michael wanted to name him poached and scrambled and fried.
2:54
Over my dead body, Michael Groover.
2:59
- [Eddie] We're not gonna let him participate
3:02
So two eggs, one and a half cups of all-purpose flour,
3:05
a teaspoon of cinnamon, a pinch of salt,
3:09
or tad more of the cinnamon she says,
3:12
a half a cup of chopped pecans, optional,
3:15
and a half a cup of raisins, optional.
3:18
I think it's best with the nuts and raisins.
3:21
A cinnamon roll is not a cinnamon roll, DeeDee,
3:24
unless it has raisins and pecans in it,
3:26
as far as I'm concerned.
3:28
So we are gonna add the wet ingredients,
3:34
add wet ingredients into a mixing bowl and mixed by hand.
3:44
Our wet ingredients would be butter.
3:49
What else is wet here?
3:59
all right, this is a half a teaspoon right here.
4:02
So I will do this twice.
4:07
Oh, and a little overflow you made it.
4:14
All right, let's see.
4:18
And look at these beautiful eggs.
4:20
And when they start producing so much
4:22
it's hard to keep up with them.
4:24
So we date them when they come out of the coop.
4:30
so we will know to use the oldest ones first.
4:39
I love, I love the color of that egg, Eddie.
4:42
- And we've got a chicken, excuse my runny nose,
4:45
my sinuses are killing me this morning.
4:49
We've got a chicken out there,
4:50
she's not quite old enough,
4:51
but she's gonna be laying like the blue eggs,
4:58
Let me just get those eggs mixed up real, real good.
5:04
So 44 years ago, this recipe was given to Dee.
5:11
All right, and now, oh, she said mixed by spoon,
5:15
by hand with a spoon or a rubber spatula.
5:19
Okay, add dry ingredients to wet ingredients
5:23
and mix well by by hand.
5:27
All right, so our brown sugar and, Dee, you did white sugar.
5:33
You did not tell me a baking time.
5:37
I mean a baking temperature.
5:38
So I am, I am just assuming that it's like 350.
5:47
So if it's different from that, once you see this video,
5:52
you can send me a email and
5:57
I'll correct the the temperature.
6:03
You know, I wanted to bake this like Dee used to make it
6:06
years ago and a black skillet,
6:10
but I've got a eight inch skillet
6:12
and I've got a 10 inch skillet, don't have a nine inch.
6:16
So I'm gonna do just like she said
6:18
and I'm gonna bake it in my cake pan.
6:22
Okay, now I'm gonna stir in our pecans and our raisins.
6:28
And I think this is it, isn't it, Eddie?
6:32
- [Eddie] You did a cinnamon already?
6:36
- [Paula] You know what? Did I do the cinnamon?
6:37
- [Eddie] I don't think you did.
6:38
- [Paula] I didn't do the cinnamon.
6:41
Alright, so she called for...
6:44
- [Eddie] A teaspoon or more.
6:45
- A teaspoon plus a tad.
6:54
Yeah, I didn't do the cinnamon
6:55
'cause I didn't have a one teaspoon measure up here.
7:03
'Cause you need that cinnamon
7:04
if you're gonna have a cinnamon coffee cake,
7:08
cinnamon raisin coffee cake.
7:22
- [Eddie] Cookie batter.
7:24
- I know, that's exactly what it looks like,
7:34
And DeeDee said, be sure and spray your pan with a
7:42
Yes, it's very much, it's thick.
7:47
It's thick like a, like a cookie batter.
7:54
I'm gonna spread that out in the pan.
7:58
And like I said, Dee didn't tell us what temperature,
8:02
so I'm just guessing at 350,
8:04
that's what most things are baked on.
8:07
And she said bake it,
8:12
bake it for 30 to 35 minutes.
8:17
And she said the center should be softer than the edges.
8:21
Let it cool and sprinkle a generous amount
8:24
of granulated sugar on top.
8:26
I sure will, Dee. I will do just that.
8:30
Okay, Dee, so I'm gonna do, just like you say,
8:32
let it cool for a little while,
8:35
and then sprinkle it generously with white sugar.
8:45
I cook with a high powered commercial oven,
8:48
I baked this for 25 minutes, so.
8:57
Is that generous enough?
8:59
- [Eddie] Oh, it's generous.
9:00
- You think it's generous?
9:02
All right, now I've got some cinnamon sugar.
9:07
So just for color, we'll sprinkle it a little bit with that.
9:14
I think we ought to cut it, don't you, Eddie?
9:16
- [Eddie] I think we need to cut it, yes.
9:18
- I don't know how Dee cuts hers to serve,
9:23
but I'm thinking this way might be good as any, right?
9:28
- And she said it would be softer in the center.
9:43
Dee, this is sinfully good.
9:47
I may have cooked it for another five minutes,
9:51
but it felt so firm, so.
9:53
But I mean, it it is out of this world, y'all.
9:56
Tastes just like a cinnamon roll without all the work.
10:02
Mm-mm. I need a glass of milk now, Eddie.
10:12
Thank you for sharing one of your
10:14
all time favorite recipes with us.
10:17
Everybody's gonna love making this.
