- Hey everybody, let's make the prettiest salad
0:02
that you've seen in a long, long time,
0:05
and this is gonna be a super healthy recipe.
0:07
Surprise, surprise, this comes from my mom, which is,
0:11
what a pleasant surprise to me.
0:12
It's like a cool shower on a hot day.
0:15
We've got something that's just really nice and light
0:18
and beautiful and colorful.
0:20
So this is gonna be a crunchy salad
0:22
with satsuma vinegarette.
0:24
So we're looking at kale, cabbage, more cabbage,
0:28
pecans, pecans, satsuma,
0:32
which is in the mandarin orange family.
0:36
And really, that's it.
0:38
And then we're gonna make a really nice light vinaigrette
0:42
So, let's go ahead and add our beautiful
0:47
and crunchy ingredients over here,
0:49
the kale, the cabbage,
0:55
and the purple cabbage.
0:57
And look how beautiful this is.
1:00
I mean, I would be super happy if I went into a restaurant
1:08
and it came out looking like this.
1:11
What a great looking tasty salad.
1:15
Brussels sprouts are a really nice way to liven up a salad.
1:20
You know, kale to me, as much as I like it,
1:22
I really like it in smoothies and things like that.
1:26
But, kale can be bitter,
1:29
and needs a little...
1:32
Needs a little citrus, needs a little
1:33
lemon juice, in my opinion.
1:35
But, I'm gonna go ahead and put all my dry stuff together
1:39
So the pecans, pecans, right on top.
1:44
These beautiful satsumas,
1:45
I'm gonna go ahead and put them on top too.
1:48
You should be able to get these...
1:49
Satsuma, that's an interesting word.
1:54
And you should be able to get them
1:55
in your local grocery store.
1:56
I feel Theresa breathing over there.
1:58
She wants to say something,
1:59
so Theresa, what do you want to say?
2:00
- [Theresa] Well, no, I mean it depends on where you live.
2:02
Like some things are not as available.
2:05
We don't really use the satsuma in it anymore.
2:08
We use the mandarin oranges,
2:10
and then we're actually using blood oranges for the juice
2:16
because those are all part of the satsuma.
2:19
So if you can't find satsumas,
2:21
moral of a story is, you can use optional.
2:26
It's an orange. - Well said.
2:28
I couldn't have said it better myself.
2:30
Alright, let's make our, thanks Theresa, our vinaigrette.
2:35
So, we've got red wine vinegar,
2:48
little salt and pepper,
2:57
a little olive oil, about three tablespoons of olive oil.
3:10
And whisk, whisk, whisk.
3:17
just a really beautiful,
3:22
and I'm sure, satisfying salad.
3:27
If you wanted to put a piece of fish on top of it,
3:29
that'd probably be nice.
3:48
Man, that looks nice.
3:54
And these are all ingredients, like I said before,
3:56
that you could find in your local grocery store.
3:58
Salad is beautiful and it looks really fancy,
4:04
And we'll just toss it to coat a little bit
4:06
and get everything sort of married up.
4:16
And that is a gorgeous salad.
4:20
You know what would be nice on that, too,
4:21
would be some shrimp, Theresa.
4:24
Scallops. - [Theresa] Chicken.
4:25
Chicken, scallops, nice piece of fish.
4:40
Gosh, that's gorgeous and so good for you.
4:43
You will be extremely happy if you make the crunchy salad
4:48
with satsuma vinaigrette.
