I made that wonderful asparagus sandwich
0:06
on pumpernickel bread that we used to serve
0:08
at The Lady and Sons,
0:09
and hopefully it's going back on our menu.
0:11
I'll be able to tell y'all that for sure a little later on.
0:17
But you know, it's getting that time of year.
0:19
I know it's hard to believe
0:20
because like, in the Midwest, they're having,
0:24
and up north, I think, just humongous high temperatures.
0:28
But you know, relief is just around the corner
0:32
because we're fixing to go into fall,
0:34
and this sandwich is so good
0:39
dipped in this creamy cheese soup.
0:45
It's easy, and it's delicious.
0:47
So I'm gonna start with a couple of tablespoons of butter,
0:52
and I have some diced onions.
0:55
Now you could use jarred pimentos if you want to,
0:57
but I'm using a red sweet pepper.
1:03
It's not a bell pepper.
1:05
It's a sweet little red pepper.
1:09
It kind of looks like a, almost a jalapeno,

But you don't wanna use jalapeno

Do we have one to show?
1:23
Are they all chopped up, Theresa?
1:25
- [Theresa] No, they aren't.

♪ Here comes Santa Claus ♪
1:42
Look, it looks so much like a jalapeno, doesn't it?
1:46
But it's not. Don't confuse it.
1:55
Right, so I've got our butter melted.
1:58
I'm gonna put in our diced onion
2:04
and our pimento peppers, sweet pimento peppers.
2:09
And we're gonna saute those
2:11
for about three, four, five minutes
2:13
until they're nice and tender.
2:16
All righty, y'all, our peppers
2:19
and onions are nice and transparent
2:24
and soft. (utensil banging)
2:25
So now I'm gonna add,
2:27
I think it's three tablespoons of,
2:31
yeah, three tablespoons of all-purpose flour.
2:34
And that's of course gonna be our thickening.
2:37
And we wanna make sure that that flour
2:40
is incorporated real, real good
2:44
with the butter, the peppers, and the onions.
2:48
So we'll just let that cook for a minute or so.
2:53
And then our liquid is gonna be cream
3:01
And that sandwich dunked down
3:03
in that cheese soup is gonna be so good.
3:09
And it'll make a quick, quick dinner.
3:27
Let me turn this back up.
3:36
This will start getting thick.
3:53
That pimento is really pretty in there.
3:57
Then I'm gonna add a little salt,
4:05
And the recipe calls for a dash of cayenne pepper.
4:10
So you can use, if you don't wanna use cayenne,
4:13
you can use like red pepper flakes.
4:16
I think the red pepper flakes would be pretty in it,
4:19
or, oops. (utensil clanging)
4:21
Or you can use a dash of the cayenne,
4:25
whatever your preference.
4:27
So I think I'm just gonna do like that much
4:40
And this will begin to get thick.
4:45
So I'm gonna add my green onions
4:49
that have been diced,
4:51
and I've saved some to garnish the top of our soup with.
4:59
And you can see it's already starting to get thick.
5:03
So we'll let that cook for a couple of minutes,
5:05
and then I'm gonna add the cream and the cheese,
5:08
and we're gonna be ready to taste.

5:31
I want it to take its term getting thick,
5:36

just a little bit more salt, not much,

6:04
I'm gonna add just a little bit of paprika.
6:06
It doesn't call for that,

6:18
of sharp cheddar cheese.
