In the last few videos I've been talking about the
0:09
that we get down south,
0:11
and I'm sure y'all up north, y'all get 'em too,
0:14
maybe just a little later than what ours come in.
0:18
Well, we went to Davis Produce,
0:21
and we found these beautiful field peas,
0:24
already shelled and everything.
0:28
So I had a recipe at the Southern Table
0:32
for creamed field peas.
0:34
So that's the recipe I'm gonna share with y'all today.
0:37
I'm gonna cook these in my cast iron dutch oven,
0:41
and I'm gonna cover them, I think the recipe calls
0:46
And I'm just gonna cover them with water.
0:52
And it really doesn't matter how much
0:54
because we're gonna drain it after they're done.
0:57
So, I'm gonna cut that on
1:01
and I'm going to cook it for
1:04
maybe 20 or 30 minutes.
1:07
Then we'll drain them and we're gonna do some
1:09
more stuff with them.
1:12
That's gonna taste mighty good y'all.
1:14
So Eddie just said, well, what if you can't find field peas?
1:19
they have a whole different kind of names here.
1:21
Zipper peas that are shaped much like field peas.
1:24
You got lady fingers, they're a smaller pea.
1:27
So, just check around,
1:31
and you can substitute it.
1:33
I would even almost think you could substitute it
1:36
with a fresh black eyed pea. - Mm-hmm.
1:39
You know, that looks like our field peas.
1:41
- [Producer] And you can get field peas dried.
1:43
- See? Yeah. - You could buy dried ones.
1:47
- Nothing like a fresh one,
1:48
though, y'all. - Right.
1:50
- So. - Try your farmer's market,
1:52
would be the best place.
1:53
- Yes. - In the summer.
1:55
- Yes, yes, yes. - they're a summer pea.
1:57
- So we'll peek back in that in about 30 minutes
2:01
and see if they're nice and tender.
2:03
And then we're gonna move to the next step,
2:04
which has all the goods.
2:07
I just sampled our peas, and they're so good.
2:14
I can't believe that you don't like those Eddie.
2:22
Course that has no salt or anything in it.
2:25
They need salting real bad.
2:38
I have, gosh, probably about 12 pieces of bacon
2:45
and I'm gonna just do that so nothing will stick.
2:53
cook our bacon and our onions,
2:58
and after those are done, I'm gonna add the cream
3:01
because these are creamed field peas.
3:04
All right. (bacon sizzling)
3:06
The bacon is just the way I want it.
3:10
I don't like to cook my bacon until it's real crisp.
3:14
I like a soft but thorough cook on my bacon.
3:20
So now I'm gonna add those onions
3:22
that are so beautifully chopped.
3:24
So you know, I told you we're doing creamed field peas,
3:31
which, you know, that may not be considered
3:40
You know, it's just a pot of peas without the cream.
3:45
So you could do it either way.
3:47
But now I'm gonna add three cups.
3:54
Yeah, it's three cups of heavy cream.
4:00
Wow, (laughs) look at that.
4:03
Isn't that sinful-looking? - Mm-hmm.
4:08
- Might not want to have serve creamed field peas
4:12
You might want (laughs).
4:14
- Special occasions. - Yes, special occasions.
4:17
So, I'm gonna let this cook down to about half.
4:22
So it's gonna get thick.
4:28
And then we're gonna put our peas back in it.
4:30
And I added the salt and the pepper,
4:33
which these peas, when I put them on to boil,
4:36
I put no salt in 'em,
4:37
and so they're real, real bland.
4:39
They're definitely gonna need the salt that I put in there.
4:48
I'm saying it'll take maybe 15 minutes for that
4:53
It's about right there.
5:00
Okay, so we have all agreed
5:03
that this is cooked down to about half.
5:07
So I'm going to add those wonderful fresh peas.
5:12
And we got a pot of peas, y'all.
5:15
Theresa was concerned about 'em all fitting in this,
5:18
this is a smaller Dutch oven that I have.
5:26
get those peas covered
5:32
and we're gonna let that cook
5:33
for about maybe 15 more minutes.
5:42
it's gonna be nice. (laughs)
5:46
Y'all, I think the field, the creamed field peas
5:57
All we need is some fresh sliced tomatoes,
6:02
maybe some onion and a cornbread pone.
6:07
Y'all ever had corn pone bread?
6:10
Oh my god, it's so good.
6:11
Corn pone is when you shape it in your hands and fry it.
6:16
Oh my gosh, y'all, I have to make some of that one day.
6:21
Y'all just need to let me know
6:23
what you'd like to see me cook,
6:24
and I would be more than happy to oblige.
6:29
- Shrimp creole. - Okay.
6:41
These are very hot and very delicious.
6:46
Eddie, you've got to just take one little pea.
6:50
Just take a little pea and stick it your mouth, okay?
6:54
(chuckling) I don't think it's gonna happen.
6:58
