0:00
- Okay, I'm still thinking about Father's Day,
0:04
(clears throat) excuse me,
0:05
and trying to come up with things to suggest
0:09
that y'all might like to cook
0:11
if you're cooking for Father's Day.
0:14
And I'm gonna cook some corn fritters,
0:17
and if you like hush puppies
0:18
this is much like a hush puppy.
0:21
And it would be good with barbecue chicken, ribs,
0:24
fried chicken, scrambled eggs.
0:27
It'd be good with anything y'all.
0:29
So I got my cast iron little pot, I got my heat.
0:34
Well, darn, it went off, wow.
0:38
I don't know how that happened. I had it preheat.
0:41
- [Videographer] Push the pot back a little bit, it's not-
0:44
- It's on perfectly from this angle.
0:48
- [Videographer] That little flame's
0:49
coming up the back side, so.
0:51
- Well, and now it's coming up the front side.
0:57
So to start these corn, little corn fritters,
1:03
the recipe, the recipe is in
1:07
"At the Southern Table" cookbook.
1:10
And this is what they're gonna look like.
1:13
So I've got a skillet preheating
1:15
to cook my chopped onions
1:18
and my cut, this is frozen corn niblets.
1:22
So I'm gonna cook these things for about five minutes maybe.
1:27
And I'm gonna put just a little butter in the pan.
1:37
Just to wee little. It doesn't take a whole bunch.
1:42
So I'm gonna go ahead and
1:47
add my onions and my corn.
1:54
Like I said, this is very, very much like a hush puppy.
2:00
Only hush puppies, I don't normally put corn in them,
2:06
but this is diced so tiny and nice.
2:10
Theresa, done diced it up nicely.
2:13
I am going to add just a little bit more,
2:17
just another little teeny bit of butter.
2:20
And like I said, about five minutes it should be ready.
2:23
And over here I've got cornmeal, I've got flour,
2:26
I've got salt, I've got buttermilk and I've got one egg.
2:29
So I'm gonna go ahead and find me a bowl.
2:36
I'm gonna add these while our corn
2:40
and onions are cooking
2:46
and my heat is still good.
2:53
One of the tricks to testing your grease
2:55
is to stick a wooden spoon in it
2:58
and if it sizzles, it's getting close,
3:01
that one didn't sizzle at all.
3:04
And I'm going to add my salt
3:09
and I'm just gonna whisk this together.
3:15
Get it mixed up good.
3:20
I'm gonna move the egg to a bigger bowl
3:24
so I can whisk it up.
3:37
All right, this doesn't take a lot of mixing,
3:39
you just wanna mix it y'all
3:41
till your dry ingredients are all moistened.
3:54
I wanna show everybody a little trick
3:57
that works real good when you're trying to drop batter
4:02
into some hot grease.
4:06
There's the thunder again, isn't it? I hear it.
4:13
I just love dreary weather.
4:18
Is that sounds strange, but I just love it.
4:24
Alright, I think that's been about five minutes.
4:31
I told y'all this was my favorite. (chuckling)
4:34
This was one of our, part of our giveaway this Monday.
4:38
And see, I have just used it and used it
4:41
and caught it on fire one time accidentally,
4:44
but I just love this, this hot plate, hot pot holder.
4:52
Okay, now I'm, I didn't cook these for long
4:55
because I don't want to cook 'em until they're mush
4:58
'cause I want you to be able to taste the corn
5:09
(fritter mix squelching)
5:12
All right, so when you're trying to
5:19
dip a batter like this into a grease pot,
5:25
you wanna stick your spoon in water first
5:29
and then it'll just roll off.
5:31
So, okay, I think our grease is finally hot enough.
5:35
So I'm gonna take that corn fritter out
5:38
because I'm sure it got greasy
5:41
from sitting in that grease.
5:42
So I'm gonna start dropping them.
5:48
And when you're doing corn fritters
5:50
or fruit fritters, anything like that,
5:54
you need to try to flip 'em early
5:58
because they'll get bottom heavy.
6:03
See how that water just makes them slide right on off?
6:13
No having to push it off.
6:14
So I'm gonna stop now and start flipping.
6:21
It will take about three minutes per side,
6:26
but like I said, they'll get top heavy
6:28
if you don't start flipping them.
6:32
And then it's hard, hard, hard to get 'em flipped over.
6:35
(fritters sizzling) (spoon clanking)
6:40
There we go. So we'll just keep flipping them around.
6:46
Like I said, about three minutes per side.
6:49
Okay, this batch is ready.
6:51
And (laughing) while I was standing up here
6:56
frying these, Theresa said,
6:58
"I just think that's such a strange combination
7:01
to have fontina cheese in it."
7:05
I said, "There was no cheese on the counter."
7:07
She said, "I didn't pull the cheese out the refrigerator."
7:10
I said "No," and I didn't check behind her
7:13
so I'm gonna add some fontina cheese to the batter
7:25
We'll have some cheese and some without. (laughing)
7:32
That's all right, Theresa.
7:34
And here's the ones without cheese.
7:54
So with or without cheese they're good.
7:58
- [Viewer] Oh, they're gonna be good with the cheese.
8:05
They'll be different.
8:07
All right, here we go.
8:11
These are so easy to make y'all,
8:13
and I think you'll love them.
8:15
And it'll be fine if I make 'em early in the day like this
8:22
'cause you know what,
8:24
they'll heat up so beautifully in the air fryer.
8:29
You'll get 'em just as crispy and good again.
8:34
So take advantage of being able to do this ahead of time
8:39
and take advantage of that beautiful Paula Deen air fryer,
8:44
which we can't get anymore.
8:47
[Viewer] Okay, you gotta taste the one with the fontina!
8:58
Y'all tell me which you like best.
9:01
The real recipe, or Theresa's recipe. (laughing)
9:07
- [Viewer] Are you sure you got one?
9:08
- They're hot, yes, oh yeah.
9:10
This one just, yeah, this got cheese in it.
9:17
- [Viewer] I'm gonna eat that burning up my mouth.
9:20
- They're so hot and so stinking good.
9:34
- (sniffs) Mm, bon appetit to all you fathers out there.
9:41
I'm trying to help y'all.
9:42
I'm trying to, I'm trying to help your wife have some ideas
9:46
or your partner, whoever,
9:48
whoever is somebody's daddy, (laughing) ooh.
9:56
Hey, y'all, it's Paula Deen.
