and one of my favorite things about the summer

is beautiful fresh salads.

You know, the garden's a wonderful bounty of all sorts

of things in this time of year, and summer's almost over,

so before it ends, let's make a nice salad.

And today I'm gonna make a salad that's got corn,

purple onion, fresh tomatoes, cilantro if you like

or parsley if you don't,

and a nice light dressing to bring it all together.

So, why don't we start with the dressing,

which is going to be couple of tablespoons

which is where every good dressing starts, I think,

and a little bit of salt and pepper.

We all have somebody in the family

who makes great dressings,

and in our family, well, my mom, of course,

but my Aunt Peggy, man, growing up,

my Aunt Peggy would make the most wonderful

vinegar-based, oil-and-vinegar-based dressings in her house

and I remember we would go over to her house to eat

and there would always be

a really pretty just jar on the counter

that would have wonderful homemade dressings in them.

I've always enjoyed kind of making 'em myself too

thanks to my Aunt Peggy.

So this is super simple.

Lime juice, lime zest, salt, pepper, and a little olive oil.

So we've got a bowl here.

Again, the recipe called for cilantro,

but we're not big cilantro eaters.

Nobody around here really likes it that much, including me.

So fresh parsley will make a nice substitute.

but a little lemon juice is a nice preservative
