And I've just always told you about my cakes

And I started out, and you've always gave me advice

and stuff like that, but Hurricane Helene came by

And it got destroyed, I lost everything.

And I got, you actually were there that November,

'cause I lost it in September, and I got to talk to you

and you were just so sweet giving me advice.

So I decided I was gonna go

to culinary school starting in that January.

'Cause I graduated high school in December and I started,

and I realized with all that money

getting rebuilt and doing stuff,

I decided I just bought a food truck actually.

So I'm going to revamp, restart,

do everything with that and take that food truck around

and do little events and stuff like that

to still keep afloat and do stuff, so-

- Three eight-inch pans.

- And this is the kind of spray you want to use

when you're making cake layers.

- Yes, very good, and then you just wanna spray

and get all the pans greased and spray it

and put a line of wax paper so it don't stick on the bottom

'cause you never want that to happen.

So we're starting out with,

we've got our all-purpose flour

and then I've got baking soda and baking powder and salt,

and also instant espresso powder.

- Ooh, ooh! - That's what really

gets that coffee flavor.

And if you want to go ahead and mix-

And if you wanna go ahead and put all that,

what we're gonna do is we've got coffee and milk,

and you wanna mix that together

and go ahead and let that sit aside.

That's exactly how it feels.

- So, all right, now, so you have mixed your milk and your-

- All ready to set aside. - Okay.

to cream the butter.

So you're just gonna get a hand mixture or you could use-

So, now that we've got the butter already creamed,

- And we are using mine and Eddie's homemade vanilla.

All right, now we're gonna add our powdered sugar.

And we're gonna add a little bit at a time.

and it's got a good buttercream

- All right, so we're gonna add a little more.

And while that's mixing,

We just wanna add a little bit

Now that we've got all this,

the buttercream's completely ready.

So now we are going to put these together.

to get the cakes stuck like glue on that.

- And then we've already got our three cake layers.

and plop it right there on it.

- And gonna set that to the side for me.

And you wanna have a even layer.

Now you're gonna get the next layer and plop it on there.

Try to get it as level as you can.

We've got this cake as a crumb coat

and once you've got that, you wanna stick it

in the fridge and let it get nice and thickened up

'cause you're gonna do a outside layer on it

and then that's when you're ready to do all the decorating.

But you want to get this nice and firm

so everything don't move around.

- Well, for about 10 to 15 minutes

so everything gets nice and firmed up.

Yes, so now we're gonna- - Okay.

- Start decorating, we had the cake.

- And then we put the second layer

of frosting on the outside,

- So I already made the chocolate ganache, it's already-

- So all you do, it's just a half a cup

of heavy whipping cream, and you put it in the microwave

till it's real hot and a little bit bubbly.

You just want it real warm to melt the chocolate chips.

'Cause it's super easy, it's equal parts

of heavy whipping cream and semisweet chocolate chips.

- This is half a cup of them

and then put the half a cup of chocolate chips in it.

And then once that's in there,

let it sit for 30 seconds, stir it up.

- You wanna have a good knife,

but heat it up under the hot sink-
