- Hey, everybody, it's Bobby here today
0:02
and today we are gonna make a beautiful chef salad.
0:05
This is one of my favorite things.
0:07
I love salads of all kinds,
0:08
but add a little protein to it,
0:10
some olives, tomatoes, cucumbers, and boiled eggs
0:14
and, boy, do you have a really nice salad.
0:16
The only way to make it better
0:18
is to make your own dressing, which we're gonna do.
0:21
And also, hey, Lulu, and homemade croutons.
0:26
Hey, baby. How are you?
0:27
Mama's little Havanese is at my feet.
0:30
And I feel bad 'cause she wants me to pet her,
0:32
but I'm not gonna do it.
0:33
Oh, yeah, you're standing up.
0:37
All right, and some homemade croutons as well.
0:40
So for the homemade croutons,
0:42
it's olive oil and salt and pepper.
0:45
You could drizzle your bread
0:48
with the olive oil if you'd like to,
0:50
but I like to be a little bit more thorough
0:52
and get it fully coated.
0:53
So what I'm going to do
0:56
is a little olive oil in my bowl here
1:01
and add the, you know what?
1:04
No, I think I'll sprinkle it with the salt and pepper
1:07
after I've coated them.
1:10
So I'm just gonna go ahead
1:11
and drop my chunks of bread down in there
1:15
and we'll just toss 'em in that olive oil
1:17
and make sure that all of our bread
1:19
gets a little bit of oil on it.
1:25
Uh-oh, that was fast.
1:28
Yeah, this is a little bit more thorough.
1:32
A drizzle, I might not get enough olive oil on them,
1:35
but this way they'll be,
1:38
everything will be touched by that olive oil.
1:41
Homemade croutons are just a,
1:43
they're a game changer for a salad.
1:45
It takes a salad from ho hum
1:47
to, like, wow, this is really, really great.
1:51
It can be a big difference maker.
2:00
Now onto our baking sheet.
2:03
We're gonna put these in the oven at 350
2:05
for just a few minutes
2:06
and we'll keep an eye on 'em
2:06
and make sure that we don't overcook 'em.
2:09
Hey, Lulu, I see you.
2:13
Nothing like a dog, you know?
2:17
It just brings so much joy.
2:21
I feel bad when I can't pet one
2:23
when they're asking for attention.
2:35
And let's pop 'em in the oven for a few minutes
2:37
and then we'll come right back.
2:40
Okay, so now for our dressing.
2:44
Olive oil, little Dijon,
2:48
little garlic and salt and pepper and red wine vinegar.
2:52
So we're gonna use six tablespoons of olive oil,
3:09
three tablespoons of red wine vinegar,
3:40
Little garlic, fresh garlic minced.
3:46
A little salt and pepper.
3:48
So this with the homemade croutons
3:52
is really gonna heighten your salad.
4:06
Beautiful. I love the color.
4:10
Really easy to make your own dressings at home.
4:14
it just really makes salads a lot better
4:16
than getting it out of a jar or...
4:22
And you can put this in the refrigerator.
4:27
I always think of my Aunt Peggy
4:28
whenever I make homemade vinegarettes or salad dressings
4:31
'cause she used to make 'em so well.
4:34
And I remember going over to her house
4:36
and seeing 'em in the bottles up on the counter.
4:43
I always think of Aunt Peggy.
4:45
Our croutons look great.
4:47
They were in the oven for about 10 minutes.
4:50
Coated 'em with olive oil, little salt and pepper.
4:52
And gosh, they smell just wonderful.
4:55
I've already started to cut some romaine lettuce.
4:59
We've got some beautiful, really fresh romaine lettuce here.
5:03
It's clean and just looks really vibrant and nice,
5:07
which is important for a good salad.
5:10
You don't want your salad, excuse me,
5:13
you don't want your lettuce to look dead and tired.
5:17
And, you know, there's a preference for everything.
5:20
Some people believe in just ripping the lettuce
5:27
to just rip the lettuce up like that.
5:30
And then other people, me included,
5:33
sometimes like the ease and convenience
5:35
of just a good knife (chuckles).
5:39
So got a little bit of both going here.
5:42
I've ripped up some with my hands
5:43
and I've cut some with my knife
5:45
and it just looks beautiful.
5:47
And I'll tell you what I'm gonna do. I'm gonna go ahead
5:50
and drop a couple of croutons in there
5:54
and just toss 'em around
5:56
and make sure there's some buried in there
5:58
because I like there's a little treasure inside my salad.
6:03
we're gonna put everything on top so you can see it all.
6:08
But we wanna make sure that we've got some croutons nestled
6:18
I'm also gonna go ahead
6:19
and just put a little bit of my dressing on it.
6:20
Not all of it, just some.
6:36
Just to do what we did with the croutons
6:38
and make sure there's a little bit of dressing
6:42
That's a beautiful, beautiful bowl.
6:46
And it's loud (laughs).
6:49
It's loud when I scrape it with the tongs
6:51
and it's loud when it hits the countertop,
7:00
Now we've got our ham.
7:10
Give our ham its spot.
7:15
Give our turkey its spot also.
7:19
These are classic ingredients for a chef salad.
7:23
Lots of people would like onions on here could be great.
7:30
Avocado always has a place on a chef salad to me.
7:36
Let's go ahead and use all of our ingredients here.
7:39
I promise this will get eaten.
7:52
My favorite, gosh, olives.
7:54
I could eat olives until the cows come home.
7:57
I'm using all the olives.
7:59
I like 'em green, I like 'em black.
8:01
I like just any kinda olive.
8:06
And, of course, some hard boiled eggs.
8:10
There are different ways to do these,
8:12
but I'm gonna go ahead and slice 'em into rings.
8:37
Uh-oh, that happens sometimes.
8:45
Beautiful, hearty, wonderful salad.
8:51
That looks really, really nice.
8:54
Got just some few cucumbers left
8:56
and I'll go ahead and add 'em right over here on this side.
8:59
Nothing wrong with a double dose of cucumbers.
9:05
Man, I don't think that's really missing anything.
9:08
Maybe a few of these beautiful croutons right on top.
9:12
Gosh, that is a hearty, lovely looking salad.
9:22
Really, really pretty.
9:42
Really nice. So easy, you know?
9:44
I mean, I like to eat real food.
9:49
I like to serve my family real food.
9:51
I like to know what's in my food.
9:53
I like simple ingredients and I like a good salad.
9:56
And this one looks really, really nice.
10:11
There you have it, a chopped chef salad my way.
