- Y'all. I'm real excited.
0:02
- Woo, woo, woo. - Today.
0:04
(Paula laughs)
0:04
Because I got an old friend in the kitchen with me.
0:07
I first met you, Lisa,
0:09
when I was doing a book signing in Myrtle Beach.
0:13
- Yes.
0:14
- At Paula Dean's Family Kitchen.
0:15
- And I thought you were just being nice
0:17
when you were saying, Eddie, Eddie, get her number.
0:20
We're gonna cook together.
0:20
Sure enough, this is the second time.
0:23
- Yes, yes.
0:24
- Thank you for having me. - And we'll do it more.
0:26
- Yes.
0:27
- But I mean, we just took to each other
0:30
like a duck to water.
0:31
She's, she's out there.
0:34
(Lisa laughs)
0:36
I'm out there.
0:39
So when two out theres get together,
0:41
you got a lot of out there.
0:42
- That's right, that's right.
0:43
- But you brought me a piece of jewelry.
0:45
I can't remember what it was,
0:48
but I wore it for the longest time.
0:51
- It was that bar necklace that said Paula Deen.
0:54
- Yes, I loved it. - Yeah.
0:56
- And it broke and went away.
0:59
- Gotcha. - But I loved that.
1:01
And you know, I knew immediately
1:05
that you were my kind. - My people.
1:09
Well, I have to say,
1:10
my first encounter with Paula was almost 17 years ago.
1:13
I had back surgery.
1:14
I was in the bed for a long period of time
1:16
and I used to watch her on Food Network
1:18
and I would copy her recipes on a note card
1:21
and put 'em in my basket.
1:23
And I knew when I got better
1:24
and could get up out of that bed,
1:26
I was gonna start cooking some Paula Dean recipes.
1:29
And I've never cooked one that I hadn't loved.
1:30
- Well, thank you Lisa.
1:31
Her name is Lisa Clap.
1:34
It's so good to catch up with you.
1:36
And the recipe that she is sharing
1:39
with y'all today is one of those kind of recipes
1:41
that I know y'all love.
1:42
- Yes.
1:43
- It's easy.
1:45
And anybody can do it.
1:46
- Mhm, and it looks like it's more trouble
1:49
than it is, than it really is.
1:50
These are called
1:51
chocolate chip cookie dough cheesecake bars.
1:54
- That's a lot of words.
1:56
- [Lisa] It's a lot of words.
1:57
A lot of words.
1:58
- [Paula] Chocolate chip.
1:59
- [Lisa] Cookie dough.
2:01
- [Paula] Cookie dough cheesecake bars.
2:03
- [Lisa] They're delicious.
2:04
- The name is longer than the recipe.
2:06
- I know it.
2:08
I know it.
2:08
You want me to show you how we do it?
2:09
- I wanna see it, sister.
2:11
- We're going to use,
2:12
put your oven at 350 degrees preheating.
2:15
- Okay, so do you hear it?
2:16
- Yeah, I do hear it.
2:17
- Do you hear it?
2:18
- We've got, we're gonna use a one block eight ounces
2:20
of cream cheese at room temperature.
2:21
- [Paula] Yes. - [Lisa] I'm gonna go ahead
2:24
and just spray my 13 by 9 inch pan as well.
2:26
- [Paula] Okay I'm gonna stand back.
2:27
So you won't get me. - [Lisa] You come on
2:28
and get in here with me.
2:30
One egg.
2:31
- [Paula] Uh-huh.
2:34
- [Lisa] And a half of cup of white granulated sugar.
2:36
- [Paula] Uh-huh.
2:37
- [Lisa] And then we're gonna mix that up.
2:38
- [Paula] Okay.
2:40
Mix, mix, mix, mix.
2:41
- [Lisa] Mix and mix.
2:42
And we'll set it to the side while we put the rest together.
2:47
- [Paula] Uh-huh.
2:50
So is there other ways that you can swap out this recipe?
2:53
- [Lisa] Mm, mm, I've never done it any other.
2:55
Oh, you could do different flavor of cookie dough.
2:58
- [Paula] Yeah. - [Lisa] And peanut butter
2:59
would be good or.
3:02
- [Paula] Toffee bits?
3:03
- Yes.
3:04
- I love those toffee bits.
3:05
- It'd be good with sugar cookie though, you know?
3:07
- Oh yeah.
3:08
- Add a little bit of lemon extract.
3:09
That would be awesome.
3:11
- You know, I think that's my favorite
3:14
of all the instant cookies, you know?
3:21
- Yes. - Is a sugar cookie.
3:22
Because you can change it around so much.
3:26
I'll let it get kind of soft
3:27
and then I'll add, if I wanna make an orange,
3:30
I'll add orange extract.
3:31
- [Lisa] Mhm, mhm.
3:33
- [Paula] Speaking of orange,
3:34
a lady came in to my book signing, my last book signing
3:42
and okay, I see what you're doing.
3:43
- [Lisa] I'm just pushing.
3:44
- [Paula] That's gonna be in the center.
3:45
- [Lisa] That's correct.
3:46
- [Paula] Kinda like the gooey butter cake.
3:47
- [Lisa] Exactly.
3:48
- But anyway, she came in
3:49
and she said, Paula, I just want to tell you
3:51
that I have done a twist on the gooey butter cake.
3:58
And it, she goes right by the recipe,
4:00
but they make an orange cake mix now.
4:03
- Oh, yum.
4:03
- And she uses orange extract
4:05
and the filling is the same,
4:08
just extract and zest.
4:12
- [Lisa] Mhm.
4:13
- [Paula] And I'm telling you what,
4:16
I ran home and made it, out of this world so.
4:19
- [Lisa] Well, I'm gonna pour this.
4:21
You did 'cause this mixture.
4:26
(Lisa laughs)
4:28
- It was incredible.
4:31
- We're gonna pour this mixture over the top.
4:33
- [Paula] Oh, I like it.
4:34
- [Lisa] And then smooth it out with your spatula.
4:37
Your spatular as Paula says, spatular.
4:41
And then what you wanna do is,
4:43
is take that other cookie dough.
4:46
- [Paula] Uh-huh.
4:47
- [Lisa] And we're just gonna crumble and dollop.
4:49
- [Paula] I'm picking up what you put down, sister.
4:51
- [Lisa] Mhm, girl glean in my field, girl.
4:53
So we're just gonna do little dollops everywhere
4:57
- [Paula] Because it's gonna (indistinct) out.
5:00
- It is.
5:01
And you're gonna bake it for 30 minutes on 350.
5:03
- [Paula] Okay, so that's kind of a good wow.
5:06
- Just easy, it's just easy.
5:08
Everybody loves 'em. - This is wonderful.
5:11
I'm so appreciative that you're sharing this with us.
5:14
- [Lisa] And I love one that you can buy something
5:17
at the grocery store to get your starter.
5:19
You know what I mean?
5:20
You don't have to buy,
5:20
you don't have to go from scratch.
5:22
- [Paula] Yeah, that's right.
5:23
Just cheating ever so much.
5:25
Can really save your day.
5:28
- Yeah, and I usually buy my cookie dough
5:30
in that little tub.
5:32
And you can get two complete recipes
5:35
out of that and then some. - Yeah, yeah.
5:36
- And have a little bit left over.
5:38
- Yeah, like you could make an eight by eight pan
5:40
with just one. - You could.
5:42
And it'd be thicker.
5:43
- It'd be thicker.
5:45
- More like a brownie.
5:46
- Yeah.
5:47
So that was an eight ounce package of cream cheese,
5:50
a half a cup of white sugar, one egg,
5:55
no vanilla extract or anything.
5:57
- You can add that if you want, but you don't have to.
6:00
- Okay.
6:01
- So this just like this, is going into our 350 degree oven.
6:07
- I love it. - And then we'll
6:09
taste test it.
6:10
- Yes.
6:12
That's my favorite part.
6:13
- That's the favorite part.
6:14
That's right.
6:15
But that is how I do
6:17
chocolate chip cookie dough cheesecake bars.
6:20
- I think it's brilliant, Lisa.
6:22
- [Lisa] We're gonna stick this bad boy in the oven.
6:24
- [Paula] And I wouldn't expect anything less from you.
6:26
- [Lisa] Mhm delicious.
6:28
- [Paula] Wouldn't expect anything less.
6:31
- Delicious.
6:33
- [Paula] Yes.
6:34
- Okay, we are going to cut these and taste test them.
6:38
- Can't wait.
6:39
Now your instructions were to cook 'em
6:41
for 30 minutes. - Correct, on 350.
6:43
- 'Cause I use a convection oven.
6:48
- And it took what, 25?
6:49
- How long, Theresa?
6:51
- [Theresa] 25.
6:52
- 25.
6:53
- [Theresa] That's in your oven.
6:56
- Don't they smell good?
6:57
- Yes.
6:59
So they need to be kind of gooey?
7:01
- Yeah, I like them gooey.
7:03
And then when they get completely cooled,
7:05
they're still chewy.
7:07
- Yeah, yeah.
7:10
Ohh them big pieces you cutting, sister.
7:12
- Mhm, mhm, the bigger the better.
7:16
All right, let's get this little baby out.
7:18
- Yeah, that first piece is always hard to get out.
7:23
- That's for you my dear.
7:24
- Thank you.
7:26
- And I'll take this one.
7:32
Yum.
7:33
What do you think, Paula?
7:34
- Well that was just a little crumb I got.
7:36
- Oh.
7:37
- I got this.
7:40
It's delicious now. - Isn't that good?
7:44
- And the chocolate chips have melted like perfect.
7:48
- Mhm.
7:51
I love chocolate chip cookie.
7:52
I can eat it by the spoonfuls raw.
7:55
- Mm, this is so good.
7:59
- Chocolate chip cookie dough cheesecake bars.
8:02

8:04
with a ready roll.
8:07
- No, no.
8:12
- Delicious.

- Love and best dishes.
8:14

8:22
