- Hey everybody, it's Bobby here,
0:01
and I've got a great recipe for you today
0:03
that I think you're really gonna like.
0:05
This is a chilled wild rice and pesto medley,
0:07
some of my favorite flavors together.
0:11
If you've never had a chilled wild rice salad,
0:14
you're really in for a treat.
0:16
I've done the first step in the process,
0:17
which is to make the rice as the package directs
0:20
and then just spread it out
0:21
onto a cookie sheet with aluminum foil.
0:24
And I'm just gonna let that cool.
0:26
this is a chilled wild rice recipe.
0:31
And the next step in the process is
0:33
I've got shallots in a pan.
0:35
I'm gonna add to that some bell pepper
0:39
and also some mushrooms.
0:42
The shallots have been sauteing for
0:45
about three or four minutes.
0:46
I got them started first.
0:48
Start with the onion,
0:52
or excuse me, the shallot and pepper.
0:53
And then add the mushrooms in a little bit later
0:56
because the mushrooms are gonna be ready pretty quick.
1:01
So what I'll do is I'll go ahead
1:03
and get the mushrooms tender and sauteed.
1:09
And when they're ready in just a couple of minutes,
1:12
when they're ready, I'll remove it from the heat,
1:14
and to that I'm gonna add some English peas,
1:18
and then we'll put that onto a-
1:20
- [Theresa] Before we go on break,
1:20
can you tell them what you got going on?
1:22
'Cause I don't want them to think that
1:23
Claudia has beaten you up in the middle of the night.
1:25
- Talking about the elephant on my face?
1:31
I got here late this morning.
1:34
I train jiu-jitsu, some of you know,
1:36
and sometimes things happen,
1:37
and something happened.
1:39
And I got a black eye.
1:42
So let's take a break and we'll come right back.
1:45
This looks and smells so good.
1:47
This is mushrooms, shallots, bell pepper,
1:50
and I'm about to add in some English peas.
1:57
The heat is off at this point.
1:59
Those English peas are cold.
2:01
I'm just gonna stir them in.
2:06
That's a nice grouping of stuff right there.
2:09
Shallots, bell peppers, mushrooms, English peas,
2:13
With a little, of course, olive oil.
2:16
Okay, and now I'm just gonna spread this
2:20
out on a cookie sheet
2:25
and let it cool for about 30 minutes.
2:28
And I mentioned to you that I cooked the rice
2:31
according to the package directions, which I did do,
2:35
but I used vegetable stock instead of water.
2:40
Two cups of vegetable stock instead of water.
2:42
- [Theresa] I can spread that out for you.
2:43
- Thank you, Theresa.
2:44
- [Theresa] You're welcome.
2:44
- So we'll let that cool.
2:45
Our rice is already cooled
2:48
and we'll finish it up in just a few minutes.
2:49
So let's take one more break and see you in just a minute.
2:54
I've got my chilled wild rice and pesto medley
2:59
broken down into pieces here.
3:01
Everything is cooled.
3:02
Our wild rice has cooked and cooled.
3:04
Our English pea, bell pepper, shallot, mushroom mixture
3:11
And over here I've got some toasted pine nuts.
3:13
You didn't see me do this, but we toasted some pine nuts.
3:16
And we've got our pesto sauce.
3:17
So last but not least, we're just gonna combine everything
3:23
into a large mixing bowl
3:28
and then we'll fold it all together
3:31
and it'll be ready to serve.
3:58
Okay, that pesto smells so good.
4:01
Pesto, pine nuts, wild rice, English peas,
4:05
red bell pepper, shallots, mushrooms.
4:08
What a great combination of flavors.
4:15
So this is gonna be ready to serve right now.
4:18
You can stick it in the fridge and let it continue to chill
4:21
because it's meant to be served cold.
4:26
Springtime in Savannah.
4:29
This is a great recipe to be serving to your friends
4:31
when they come over for that visit after church on Sundays.
4:36
Bring the kids over for a play date.
4:44
The sound of this bowl on the countertop is killing me.
4:48
Man, this looks and smells,
4:54
Only thing about pesto,
4:55
as much as I like it,
4:56
and you take a bite of that, day's over.
5:00
You need to go brush immediately.
5:02
Okay, that looks fantastic.
5:05
Let's give it a taste.
5:27
It's got a really bright flavor to it.
5:30
The shallots and the pine nuts.
5:33
The pine nuts are coming through,
5:34
but they're sort of just like an undertone.
5:37
I think that you'll like this.
5:39
It'd make a great side.
5:41
Or you could eat a big heaping bowl of it, if you want to.
5:44
Thanks for tuning in.
