0:06
to take a walk with me down memory lane
0:10
on my 10th anniversary for my magazine,
0:14
"Cooking with Paula Deen Magazine."
0:17
We took each year of the 10 years
0:20
and picked out the top recipes from that year.
0:24
- [Theresa] And this was from March-April, 2007.
0:30
She took the magazine home with her
0:31
and forgot to bring it back, but she has gotten on her thing
0:41
So that was like our second year, right?
0:48
So, I was flipping through the magazine,
0:52
I was just enjoying looking back
0:56
over that particular issue.
0:59
And one of these recipes really stuck out at me.
1:04
I thought, "Golly bum,
1:06
how long has it been since I made that?"
1:08
So we are gonna make it.
1:11
It's chicken cakes with a Creole sauce.
1:15
Now our sauce doesn't take but a second,
1:19
but I am heating a little bit of butter
1:23
and I'm gonna throw my red bell pepper in
1:29
'cause we gonna do this like I do my crab cakes.
1:32
We gonna soften these veggies
1:38
and that's celery, onions and red bell pepper.
1:44
And when that's done, we're gonna mix them all together.
1:50
Alright, I just had this on low heating.
1:56
I'm gonna turn it up a little bit.
2:01
I think I need the other half of that butter
2:03
is what I'm thinking.
2:06
So there you go. I'll just have to add some more butter.
2:11
All right, so we've got our mayonnaise.
2:17
I am gonna have to keep looking back at the recipe.
2:24
What has that been 17, 18 years?
2:28
All right, our sour cream.
2:32
I hope this is as good as I remember it.
2:39
One clove of smashed garlic.
2:46
And I do like using that garlic press
2:49
'cause it gets your juice from your garlic,
2:53
which is where all the flavor is,
3:00
So that was lemon juice.
3:02
This is Creole seasoning.
3:06
And this is just regular yellow mustard.
3:16
And I like regular mustard.
3:32
Now this will last up to three days in your, oops.
3:39
It'll last up three days in your refrigerator.
3:44
All right, so we got our vegetables,
3:48
we simmered them, you know,
3:50
maybe five minutes until just kind of tender.
3:57
And then we're gonna start and that's our sauce.
4:01
And we're gonna start mixing everything in.
4:05
It calls for two beaten eggs,
4:09
but I'm gonna, lightly beaten.
4:12
But I don't wanna put my eggs in there yet
4:19
But I can go ahead and put our mayonnaise in there.
4:24
That'll help cool it off.
4:26
And our Dijon mustard.
4:34
And a tablespoon of worcestershire.
4:46
And what is this? I think it's Creole seasoning.
4:48
Don't remember. - It is.
4:50
- Okay good. Some Creole seasoning.
5:02
all those other ingredients cooled it down.
5:08
So it's safe to add the eggs now.
5:22
And we've got like three cups of chicken, I think it is.
5:29
Like I said, I'm trying to remember from 2007, y'all
5:38
Gosh, it's almost, we are closer to '27.
5:41
Alright, so I'm gonna stir in our chicken
5:46
and you can see it's pretty finely diced
5:56
because we're gonna make cakes out of these.
5:59
Alright, so couple of tablespoons of butter
6:05
and I think I'm gonna cut it with a little olive oil
6:11
because butter by itself can burn.
6:16
So, adding the olive oil in
6:20
will help it from burning.
6:24
All right, now we're gonna add our panko.
6:45
If you feel like it's necessary,
6:47
you can always flour, shape these
6:50
and flour or dust them in some more panko, either way.
6:56
But this should make 10 patties.
7:01
So if you're feeding five people, that'll make it perfect.
7:14
I think in 2017 I left something out.
7:24
And that's my garlic and onion powder.
7:28
So I'm gonna add just a little bit.
7:36
And this is the onion.
7:38
Hopefully that'll enhance the fresh onion.
7:52
So it shouldn't take our oil and butter long to heat up.
8:01
Now let's see if these are gonna form a nice patty for me.
8:05
I want you to work with me, baby.
8:28
Depending on how you, how big you make these,
8:36
that'll depend on how many you get.
8:38
But to me, if you're serving two per person,
8:42
that's a gracious penny.
8:45
Two of those would fill the average person up
8:51
'Cause you're gonna have some other things with it,
8:56
You know, and this would be good on slider buns.
9:02
That would be right tasty.
9:07
So we are not gonna cook these but about a maybe two
9:11
or three minutes per side.
9:14
'Cause everything is really done in there
9:19
Guess who just walked in?
9:21
He and Michelle, his daughter have been out in the boat
9:25
and Captain just walked in the door.
9:33
I don't know what it is about him,
9:37
but, oh, don't you pop on me.
9:43
I'm so glad you came home when you did, Michael.
9:46
- [Michael] Me too. Perfect timing.
9:48
- Oops, that's your plate.
9:54
- [Michael] Hey buddy. Hey little buddy.
9:56
- I'm gonna put you some Creole sauce on it.
10:03
Bon appetit, Captain.
10:05
- Thank you ma'am. - You're welcome.
10:08
So how was the water today?
10:10
- Oh, it was gorgeous.
10:12
- [Paula] It looks like a beautiful day.
10:15
Where all did y'all go?
10:18
- The flat calm. We went around Bobby's house.
10:21
- [Paula] Oh you did?
10:23
Was he home? - We don't know.
10:26
- I know, I was kidding.
10:30
Okie dokie. - That's delicious.
10:31
- Good. I'm glad you like it.
10:34
Michael, this was in my 2015 10th Anniversary magazine
10:42
and we broke it down into years.
10:44
You know what the favorite recipes were
10:47
for the year each year.
10:50
Well that was one of them.
10:52
You know, there was more than one.
10:54
- Uh-huh. - So we were walking
10:58
down memory lane today.
11:00
So, y'all have a great day
11:06
and I'm gonna try to get this crew
11:07
to eat a little something along with you and me.
11:11
Love and best dishes, y'all.
