- Hey everybody, it's Bobby here
0:02
filling in for my mom, Paula, again today.
0:04
And I am doing one of her recipes.
0:06
This is a classic Paula Deen recipe
0:08
that is gonna help you feed your family quickly and easily
0:12
and really, not very expensively.
0:14
It is a Chicken Alfredo Pasta Bake
0:17
and this is a great idea.
0:19
I'm starting out by cooking my rigatoni pasta
0:21
and it's been going for a few minutes
0:23
and it's only got maybe one or two minutes left.
0:26
And in the last couple of minutes,
0:27
I'm gonna add in some broccoli.
0:30
Broccoli florets, excuse me,
0:35
For about two minutes with my pasta
0:38
that's pretty much ready.
0:41
And then we're gonna drain this really, really well.
0:43
So I've got my broccoli tucked in there.
0:48
About two minutes here on the stove,
0:50
So we'll go ahead and take a break right now
0:53
So my rigatoni and broccoli combination
0:55
has come together nicely and we've drained it.
1:00
So I'm just gonna toss it back into the pot we cooked it in,
1:04
and then, we're going to whisk together
1:07
all of these ingredients over here.
1:09
And this is gonna come together
1:11
as just a nice dump and stir, is what we would call it.
1:14
It's gonna save you tons of time and energy
1:17
and your family is really gonna like it.
1:20
And this is a great way to sneak some vegetables
1:22
into those dishes for the killers,
1:24
if you struggle like I do.
1:26
Okay, so we're gonna combine together Alfredo sauce,
1:29
ricotta cheese, sour cream, bell pepper, heavy cream,
1:33
and some eggs and shredded chicken.
1:36
I'm gonna start with the eggs and go ahead and whisk them.
1:42
Then add everything else to it.
2:18
This is gonna be a very rich and delicious dish.
2:25
And if you got a family
2:26
and you have to put dinner on the table every night,
2:29
if you can save steps and time,
2:39
And kids, we were just talking about this a few minutes ago,
2:41
I've got triplet six year olds,
2:44
and man, have they become picky.
2:46
I was just telling Ed and Theresa
2:47
that it used to be that I would just put dinner on the table
2:51
and be like, "Hey, here it is."
2:53
But I'm discovering now, as they get older,
2:56
it's like, "Dad, I want you to make me," blah,
3:01
"I want you to make me," yeah,
3:02
And then "I want you to make me," yeah, something different.
3:06
So kind of miss the days
3:08
when I could just put whatever on the table
3:13
they become more opinionated and they have choices
3:15
and all kinds of stuff.
3:19
And school is almost out. Oh!
3:24
So that's gonna be about 12 weeks of (chuckling) madness.
3:34
That ricotta cheese is thick.
3:42
this is Chicken Alfredo Pasta Bake
3:44
and this comes from "At the Southern Table,"
3:47
by my mother, Paula Deen.
3:49
One of her many great books.
3:51
- [Film Crew] Yeah, we haven't cooked
3:52
out of that one in a while.
3:53
- Oh yeah. Yeah, I know I haven't.
3:57
Coming together nicely.
3:59
So that's my Alfredo, ricotta, eggs, heavy cream.
4:06
Add sour cream to the party.
4:47
And last but not least, our shredded chicken.
5:05
Hm-mm. Chicken and pasta together, I love.
5:14
I love Alfredo sauce too.
5:22
Stir that chicken in really well
5:24
and make sure that the sauce coats it.
5:29
And then we'll add this
5:30
to our pasta and broccoli combination in the pot over there.
5:44
And give it a nice stir and then into a casserole dish.
5:58
I hope my vessel is big enough to hold it all
6:03
and that I can stir it,
6:04
and I think it's gonna just make it.
6:08
All right, now I don't want to tear up
6:10
my pasta or my broccoli,
6:13
so I'm gonna fold this together.
6:16
I talk about that a lot.
6:19
Don't wanna tear it to shreds.
6:23
Make sure that it's all still pretty
6:27
when we dig into it a little bit later.
6:32
Hm-mm. That looks very, very good.
6:36
Really all smells good.
6:44
And then I think that's pretty well combined.
6:47
Some nice colors too.
6:48
The broccoli with the red pepper
6:52
and that creamy white sauce.
6:53
That's really nice looking.
6:58
Okay, I think I might have a mess
7:00
if I try to just dump it all into the casserole dish,
7:06
so I'm gonna spoon some out first.
7:09
Well, the last thing we're gonna do
7:10
is add some mozzarella cheese to the top.
7:13
But before we do, let's go ahead and pop it in the oven now
7:15
and get a nice brown to our dish,
7:19
and then we'll come back and add the mozzarella
7:21
in just a few minutes, so.
7:24
Okay, our pasta dish has been in the oven
7:27
for about 30 minutes.
7:28
It's got a nice brown color to it, you can see.
7:30
And we're just gonna top it with mozzarella cheese,
7:36
which happens to be one of my favorite cheeses.
7:39
But you know what, I like just about any cheese.
7:48
Mozzarella is a nice choice for this dish.
8:02
I don't think I'm gonna need the whole package,
8:04
just enough to cover the top.
8:14
If my mom heard me say
8:15
I didn't think I'd need the whole package
8:16
I think she would take it from me and use the whole package.
8:19
(crew members chuckling)
8:23
But I think that looks good.
8:26
Okay, so let's pop it back in the oven.
8:30
A few more minutes and it will be ready.
8:33
So our Chicken Alfredo Pasta Bake is out of the oven.
8:36
We just finished it off with a little mozzarella cheese
8:38
for a few minutes on top,
8:39
and it looks magnificent.
8:43
So let's see how it cuts and tastes.
8:50
And remember, this is a very, very flexible spatula.
8:57
I'll just get out this corner.
9:06
Oh boy, does that look creamy and thick!
9:11
Make sure I got a little bit of chicken.
9:18
Broccoli, chicken, pasta, bell pepper,
9:21
I got a little bit of everything.
9:23
Let's see. Oh, and it's hot too.
9:40
Chicken Alfredo Pasta bake with mozzarella.
9:45
It's a one pot, or excuse me,
9:47
it's a kind of just a dump and stir.
9:51
We cooked the pasta first,
9:52
added a little bit of broccoli to it
9:54
in the last 5 or 10 minutes or so,
9:58
and mixed up our chicken
9:59
and all of our wet ingredients together,
10:01
and then combined 'em right into the casserole dish,
10:03
and about 30 minutes in the oven and you have dinner.
10:07
So very, very good. Enjoy!
