0:00
- Y'all, I'm kinda walking down memory lane this morning.
0:06
I'm melting a stick of butter
0:09
into my (hands clapping)
0:11
little Dutch oven pot,
0:21
the onions, the celery, the carrots, and the garlic.
0:28
And when I wrote my second cookbook,
0:33
"The Lady and Sons, Too!" T-O-O,
0:38
oh my gosh, I had almost completely taken
0:42
hiatus from the restaurant.
0:45
And I remember I was living on Abercorn Street
0:47
in that precious little pre-Civil War house that I had.
0:52
And I sat at that table
0:54
and I wrote that whole cookbook book
0:58
in a notepad with pencils.
1:04
And I remember sitting up there till two and three
1:06
in the morning looking out my window
1:08
and writing, just to writing.
1:11
But so for my second book cookbook
1:15
I thought I'm gonna ask around some of these Savannah people
1:19
if they'd share one of their favorite recipes with me.
1:22
And I am so sorry that
1:24
because I can't remember the lady's name
1:28
because it has been quite a few years.
1:32
But I said, do you have any wonderful recipes
1:35
you'd like to share and have the world try 'em?
1:41
And she said, yes, Chef Jack's corn chowder is so good.
1:46
And I would love for you to have it to put in your cookbook
1:50
so it got in there. (drawer sliding)
1:54
So I hope that y'all will try
1:57
Chef Jack's corn chowder.
2:01
All right, so I'm gonna put in my onion
2:06
and listen, Chef Jack, this is,
2:09
I thought this was very cute. (spatula banging)
2:16
drop a slice of butter in the bottom of your bowl
2:21
and then put your coin chowder in it.
2:24
He said it would just make it a little bit richer,
2:27
little bit better.(laughing)
2:31
All right, look at that. Look at that carrot.
2:34
I'm telling you what Theresa and her little kitchen gadgets,
2:39
(laughing) she can do anything with her gadgets.
2:43
And that's a perfect cut, Theresa.
2:47
Just a perfect cut for a carrot.
2:51
I don't like those carrots,
2:58
I use them in my carrot cakes.
3:01
Alright. And that was garlic.
3:03
I use them in my carrot cakes, (lids clanking)
3:07
but I just, I don't like them I just feel like they're fake.
3:12
So this is beautiful to use the fresh.
3:15
Thank you, thank you. Thank you for not giving in.
3:20
(spatula banging) - You're welcome.
3:21
- [Paula] Not succumbing to (laughing).
3:27
All right, now in this pot
3:31
we're using a beautiful white corn.
3:36
And down here (kernels clanking)
3:39
we all are crazy about Silver Queen,
3:46
And it makes the best cream corn you have ever
3:49
It'll make the dog do tricks.
3:53
I'm not kidding. (utensil banging)
3:55
So I'm gonna just heat this up
3:56
(bowl rattling) let it kind of simmer
3:58
for maybe 10 minutes. (bowl clanking)
4:06
So it really, (liquid pouring)
4:10
really makes it easy.
4:11
So that's our chicken stock.
4:18
And we'll just let that go
4:20
and we're gonna let these get soft
4:23
and then we'll be ready for the next step.
4:27
All right, we have sauteed that for a couple of minutes.
4:30
Now I'm gonna add our flour
4:33
and you wanna make sure you stir this good
4:36
because it's gonna make a roux for us
4:44
So like I said, we just heating that up.
4:46
I guess we've been heating it up maybe 10 minutes.
4:57
And we're going slowly add that to this pot.
5:19
I mean you can kind of do it like this
5:20
so I can have control over it.
5:28
It's gonna be so thick, y'all.
5:39
All right now I'm gonna.
5:41
(liquid pouring) (liquid bubbling)
5:49
And you wanna keep stirring, stirring, stirring
5:52
'cause you don't want any that roux
6:05
Now like I said, Chef Jack uses
6:08
frozen white corn niblets,
6:14
but if your corn that you're getting is still good,
6:16
I bet up north I bet they're still getting some good corn,
6:19
don't you Eddie? Don't you think?
6:21
- Yeah. Well. - 'Cause they're behind us.
6:24
- I think they would be pretty close to the end of their.
6:26
- You think so? - Season up there.
6:28
- Yeah, but fresh corn would be even better.
6:34
Alright, now we still got
6:40
two cups of half and half that we're going to put in there
6:43
and I'm gonna heat this separately.
6:51
I'm gonna turn this one down.
6:57
and it looks real, real good.
6:59
Alright, now we're not finished with it,
7:01
but I'm gonna still taste it
7:05
because we hadn't added any salt or pepper.
7:13
It's good just like that.(laughing)
7:28
And I do like using the cracked pepper in this.
7:35
(liquid boiling) (liquid sloshing)
7:53
Okay, we're gonna let that heat up just a second,
7:57
and then we'll be able to complete our soup, y'all.
8:01
All righty, we've got our half and half nice and warm
8:08
so it won't shock our chowder.
8:20
(humming) Looks good.
8:27
I could sure love a nice chilly day
8:31
when I make a pot of this, y'all.
8:35
With some corn bread we can just have corn
8:41
Corn bread, corn chowder.
8:45
Corn on the cob.(laughing)
8:51
Okay, this is, (spatula banging)
8:54
a really, really nice
9:09
I'm going to add just a little salt,
9:14
but not a whole bunch.
9:17
'Cause everybody can salt or pepper theirs at the table.
9:23
And (utensil banging)
9:26
especially when you go to serve this,
9:29
put your bottle of hot sauce on the table.
9:38
I got a little, you know what, I'm gonna go ahead
9:43
I like doing this on individual bowls,
9:47
but I've got some fresh nutmeg.
9:52
I think I'm gonna try to do it over here and that's safer.
10:03
Okay, a little nutmeg, (bowl clanking)
10:06
but I really like putting
10:12
of nutmeg on top of your bowl.
10:15
Uh oh, I'm about to forget something.
10:19
I told you that Chef Jack said to cut off a piece
10:23
and put it in the bottom of your bowl,
10:26
but he did not say that.
10:29
He said drop the whole stick of butter
10:33
into the pot to make that chowder
10:37
nice and rich, rich, rich.
10:41
The butter's melted enough for me to have a little bit.
10:49
(ladle clanking and tapping)
10:52
Chef Jack, what would be good in this too
10:56
is small diced potatoes
11:00
like in your clam chowder how you have the,
11:05
but this looks so good
11:08
and I so appreciate y'all sharing your
11:13
sought after Chef Jack's corn chowder.
11:19
(laughing) There we go. I got it out.
11:31
I think this chowder is perfect,
11:35
perfect just the way it is.
11:40
put out that hot sauce jar.(laughing)
11:49
Loving best dishes y'all, especially to Chef Jack
11:54
for sharing his recipe with me.
11:58
And remember, don't let anybody take your joy
12:03
of living away from you.
