- Hey, everybody, it's Bobby Dean here,
0:02
and I've got another, hopefully, great recipe for you.
0:04
I think that you'll enjoy it.
0:06
It's certainly right up my alley.
0:08
This is a cheesy tomato bake,
0:10
so everything is going to happen in a two-quart baking dish,
0:14
and our ingredients are going to be super fresh,
0:17
and I think things that go well together should be a...
0:24
It's gonna be a savory dish and it's gonna be pretty hardy,
0:27
even though there's no meat involved.
0:29
We've got tomatoes, lots of them.
0:31
So, if lycopene is your thing,
0:33
you're really going to like this.
0:34
So, two sorts of tomatoes, pump tomatoes, grape tomatoes,
0:38
got some red onion, olive oil,
0:41
and garlic that we're going to combine together first,
0:43
and then we'll come back over
0:44
and combine the rest of our ingredients
0:47
and add them to the top.
0:48
And we're going to bake this dish two times, okay?
0:51
So, we'll start with...
0:53
Go ahead and add my olive oil to this two-quart baking dish.
0:58
Calls for a tablespoon.
1:01
I think that's a nice tablespoon.
1:03
I'm gonna add to that our one clove of garlic,
1:20
and two kinds of tomatoes.
1:22
We'll just combine this in our baking dish.
1:27
Got the oven set to 400 degrees,
1:29
and you're going to bake this in the oven
1:33
until these grape tomatoes
1:37
begin to burst for us.
1:38
So, that's probably gonna take about 20 minutes.
1:42
And this is really, you know...
1:44
This is a 2 1/2-quart baking dish,
1:46
and this is really taking up a lot of the space.
1:50
But, it's probably going to take about 20 minutes
1:52
for the grape tomatoes to burst,
1:54
but that is a guesstimate.
1:58
So, we'll put it in the oven
1:59
and we'll just keep a close eye on it.
2:01
Whenever they start to pop open, we'll be able to see that.
2:06
I'll probably, about halfway through that time,
2:10
I'll probably go in there and stir it
2:12
and just make sure that everything is well-incorporated
2:16
So, that's the first step in the process.
2:19
It looks really good.
2:20
Let's go ahead and put it in the oven,
2:21
and we'll take a quick break and come right back.
2:24
I put the baking dish in the oven.
2:26
So, again, that's going to take about 20 minutes or so
2:28
until the tomatoes begin to burst.
2:31
The second set of ingredients
2:33
that we're going to combine is breadcrumbs.
2:36
Oh, thanks very much. Yes, I did.
2:41
Two different kinds of cheese.
2:42
Goat cheese, Parmesan cheese.
2:44
We've got tarragon, and parsley, and black pepper.
2:48
So we'll combine all these ingredients,
2:50
and when our tomatoes,
2:57
Tomato, tomato, onion,
2:59
salt, pepper, olive oil mixture comes out of the oven,
3:03
we'll top it with this
3:04
and then we'll put it back in the oven for about 20 minutes
3:06
until it's just golden brown.
3:08
Again, there's no meat.
3:19
Goat cheese is one of those things.
3:21
Some people like it, some people don't.
3:26
I'll not say whether or not I like it,
3:28
but it's part of our recipe today.
3:32
Tarragon, which I really love.
3:34
Tarragon's great with chicken.
3:36
It's really good in chicken salad
3:54
Combine these ingredients,
3:56
and these will make for a nice topping
3:59
for our cheesy tomato bake.
4:00
That tarragon is going to be, I think,
4:03
the sort of subtle star of this recipe.
4:10
I think it's going to work really nicely with the tomatoes
4:14
and should just be bursting with flavor.
4:18
So this is combined, and it's really just as simple as that.
4:21
When our tomatoes come out of the oven,
4:24
we'll put our topping on
4:25
and then pop it back in the oven for a few minutes,
4:27
and we'll check it out then.
4:30
So, we'll take one more break and come back.
4:32
We're about halfway through
4:33
the baking process of our tomatoes.
4:36
They're beginning to burst a little bit.
4:38
I'm just going to stir it
4:39
and make sure it's well-incorporated.
4:40
I'm going to pop them back in.
4:42
Let them go a little bit longer.
4:43
They're not all burst, only some have.
4:45
So, a few more minutes and we'll come back to this.
4:50
Our tomatoes are bursting and they look really, really good.
4:54
And so, now, it's time to add our topping.
5:20
And back into the oven for about 10 minutes or so.
5:24
just until everything's nice and golden brown.
5:27
Mm-hmm, I got a lot of faith in this recipe,
5:30
I think this is going to be nice.
5:32
So, let's pop it back in the oven,
5:38
Our cheesy tomato bake has come out of the oven
5:40
and, man, this thing looks really good.
5:42
It's nice and golden brown on the top and super hot.
5:46
So, I've already scooped out a little bite for me to try.
5:51
Got a tomato and all the toppings. Oops.
6:08
The goat cheese is distinct, it's definitely there.
6:11
If you don't like goat cheese,
6:12
you could try, I don't know, maybe a blue, something else,
6:15
some sort of other crumbled cheese.
6:17
Maybe even a feta, I don't know.
6:19
But the goat cheese, to me, really makes it, too.
6:21
This is a great recipe.
6:23
I think you'll really like it.
