- Hey, y'all, guess what today is.
0:04
Well, by the time this airs, it won't be.
0:07
But today while I'm filming,
0:10
it's mine and Michael's 20th wedding anniversary.
0:16
And when I'm out in the world, people say,
0:20
"I was at your wedding.
0:22
"I watched your wedding."
0:24
And it's just hard to believe it's been 20 years.
0:28
Isn't that right, Michael?
0:33
- [Paula] It seems like it's been like-
0:35
- [Crew] What did you get?
0:36
- Oh, Michael gave me a beautiful emerald ring.
0:44
I didn't realize that emerald represents 20th anniversaries.
0:51
And I would be wearing it today,
0:53
but I'm afraid it might come off.
0:57
I'm gonna make you a carrot cake, beloved.
0:59
- [Michael] Oh, good.
1:06
- So many of y'all love carrot cake out there.
1:08
And this one is gonna be a little bit easier
1:13
because it is baked in a 13 by 9 by 2 pan,
1:19
which makes that so much easier than stacking up layers.
1:23
You know, making sure you got enough icing.
1:27
So I'm gonna start with our flour
1:31
and our baking soda, our salt, and our pie spice.
1:42
So I'm just gonna whisk this together.
1:47
And then we going to come over here
1:48
and put our wet stuff together.
1:53
To me, the most wonderful carrot cake recipe in the world
1:58
is in my cookbook, and it was my Grandmother Hiers' recipe.
2:03
And that's my go-to when I'm doing a layer cake.
2:09
Alright, so in this bowl we are gonna add our four eggs,
2:17
our sugar, our brown sugar, and our oil.
2:25
And what makes this cake so good is because of all the oil.
2:32
And grandma's carrot cake never mentioned
2:36
pulling out an electric mix or anything like that.
2:42
So her recipe's real easy, too.
2:46
But I'm just gonna beat this up real good like that.
2:52
And then I'm gonna add my oil.
2:57
Alright, now we've got this mixed up.
3:00
We are just gonna add this to our dry ingredients.
3:05
All right, so we going fold in our carrots and our raisins.
3:12
Now I'm using a golden raisin,
3:14
but you can use either one you prefer.
3:19
Okay, so I've got my 13 by 9 by 2 pan.
3:25
And I'm gonna spray it
3:30
because I do want it to come out.
3:41
I'll probably wind up cutting it into pieces
3:44
and putting it on my cake stand.
3:47
So I do want it to come out not messy.
3:57
All right, this is going in the oven
4:01
about 30 minutes at 350.
4:07
- [Theresa] You're welcome.
4:14
All right, our cake is nice and cooled, y'all.
4:17
And it's time for us to frost it.
4:19
And I'm doing a very traditional cream cheese icing.
4:24
Four cups of powdered sugar,
4:25
two eight ounce packages of cream cheese,
4:28
one stick of butter, little bit of salt
4:32
and vanilla flavoring.
4:34
We're gonna slather it on there.
4:40
I'm gonna add the salt.
4:44
And I'm gonna add about a tablespoon of vanilla flavoring,
4:54
which makes it so delicious.
5:24
That's a lot of icing.
5:27
Nobody can complain about,
5:31
"Well, my piece didn't have enough icing."
5:51
Look who's coming in here.
5:53
- [Theresa] Scruffy must have smelled it.
5:54
- [Michael] Thought I smelled something.
5:56
- Listen, he's got a sweet tooth.
5:59
He can pick out a piece of sugar
6:04
from over that bridge out there y'all.
6:07
So the thing about this particular carrot cake recipe,
6:11
it doesn't call for any nuts in the cake or in the frosting.
6:16
It just says the sprinkle on top.
6:18
So I like to give everybody options.
6:30
And look at here, Mikey.
6:36
- [Michael] Mm, that looks delicious.
6:37
- You over there licking an empty bowl
6:40
and I'm up here licking a fat piece of cake.
6:45
- [Michael] Well, I'm not really licking empty bowl.
6:57
- This recipe is almost as good as my grandma Hiers'.
7:06
Wanna come come get you a bite? Come get you a bite.
7:10
I'm saving the edge just for you.
7:11
You like that crunchy part, come on.
7:17
- [Michael] You're saving it?
7:18
I see you saving it for me.
7:23
- [Michael] Don't look like it to me.
7:26
- Well, you're not rushing over there.
7:29
- You do. - Yeah, I know it.
7:33
- Alright, see that's the crusty part right there.
7:48
- I'm trading my bowl in.
7:51
- Love and best dishes, y'all.
