0:00
- Hey everybody, it's Bobby here,
0:02
filling in for my mom again.
0:04
And it's just almost impossible to believe
0:07
that it is already Easter, of the year 2024.
0:12
I can't believe it, man, it's gone by so fast.
0:13
So in honor of Easter, the Easter bunny
0:17
dropped off this incredible recipe for me this morning.
0:20
It's a carrot casserole.
0:22
So if you've got bad eyesight, this recipe is for you.
0:25
I've started by cooking off a few pounds of carrots,
0:30
okay, until they were soft,
0:31
so for about six or eight minutes.
0:33
And now in my pan, I've got some butter,
0:39
some yellow onion, and a little bit of garlic.
0:43
And I've been cooking my yellow onions here
0:45
for a few minutes, so they're starting to get soft
0:47
and they're sweatin' for me.
0:50
So to this, I'm gonna add some milk,
1:00
so that's gonna cool off my skillet real quick.
1:05
That's okay, it'll come up fast.
1:08
All right, so I'm gonna cook this milk, onion,
1:12
garlic butter combination for just a couple of minutes,
1:16
and then I'm gonna add some flour and get it nice and thick.
1:25
Mmhmm, this smells so good.
1:27
Onions, butter, garlic,
1:28
it's just the basis of so many good recipes,
1:31
but I'll bet that you never guessed
1:32
that you were gonna see a carrot casserole today.
1:35
Did you, Groovy? (chuckles)
1:38
Carrot casserole, who's hungry?
1:40
- [Groovy] Oh, not me.
1:43
- So I've added in my flour, and stir it in,
1:47
and just cook this for a few minutes
1:48
until it gets nice and thick,
1:50
and then we'll remove it from the heat.
1:53
We're gonna add some cheese
1:54
'cause I know you're wondering, "Well, how are you
1:56
gonna jazz up those carrots and make 'em taste good?"
1:58
Well, the butter and the onions and garlic,
2:00
that's all gonna help.
2:02
And then some cheese, little salt and pepper.
2:06
This is gonna be fantastic.
2:13
So I added the flour to our milk, onion,
2:17
garlic butter mixture,
2:19
and it's getting really nice and thick.
2:22
You know, think rue whenever I'm doing this.
2:26
So it's reached point
2:27
that I'm gonna go ahead and turn off the heat.
2:32
And I'm going to add to that our cheddar cheese.
2:45
Yeah, so y'all were skeptical about my carrot casserole.
2:57
We'll stir this together.
3:04
All right, now over here,
3:06
my carrots, and you'll remember that I told you that we
3:09
did these in the Dutch oven earlier.
3:11
I cooked them for about six or eight minutes
3:14
just to get 'em tender.
3:17
Can see I didn't cook 'em to death.
3:18
So they still got a lot of color.
3:20
All right, so my carrots are tender
3:23
and I'm gonna add them to our mixture on the stove.
3:33
Gosh, I'm believing in this recipe.
3:39
I think it's gonna be really, really good.
3:47
And we'll combine our carrots with the flour,
3:51
butter, cheese, onion, and garlic mixture.
3:55
I'm just gonna fold that together
3:58
so I don't bust those carrots up.
4:05
Always fold them, always.
4:11
Try not to destroy our ingredients.
4:16
I don't wanna make it a big carrot mash.
4:28
And once we get that completely combined,
4:35
and it is, gosh, that smells so good.
4:39
I'm gonna come over here and combine my crackers.
4:43
Okay, I got butter crackers, Parmesan cheese,
4:48
(bowl clatters) and some melted butter.
4:53
(dish clanks) (fork clinks)
4:57
We'll combine these ingredients and this will be
4:59
our topping for the casserole.
5:05
And now into our casserole dish.
5:14
Our casserole dish goes to the carrots.
5:17
Sorry to turn that away from you, Ed,
5:18
I know you're trying to get the shot.
5:22
Carrots, onions, garlic, butter, flour,
5:30
nice and thick and just looks and smells wonderful.
5:39
Just the aroma of butter and onions,
5:45
you could cook almost anything.
5:49
And with that as the base, it'll be a winner.
5:54
Let's spread that into all corners of our casserole dish.
6:00
Try to get it nice and even.
6:12
This is a perfect dish for springtime,
6:16
just screaming spring.
6:20
And now, I've said this to you many times,
6:22
but my mom has always told me,
6:23
the first time you do something, go exactly by the recipe,
6:26
and anytime after that, make it your own
6:27
and do whatever you'd like to do.
6:29
So if you're thinking of an ingredient
6:31
that you would like to add to this,
6:33
maybe if you wanted to, you know, add asparagus,
6:37
or if you wanted to add English peas
6:39
or whatever your heart desires,
6:42
you can do that down the road if you'd like.
6:47
That looks really, really good.
6:50
And so to that, we'll just add our topping,
6:54
which again is butter crackers, Parmesan cheese,
7:00
and a little bit of melted butter.
7:04
And we'll sprinkle that right on top.
7:07
And that's gonna brown up nicely.
7:12
And you'll remember our carrots are already cooked,
7:15
so we're just gonna heat this thing through in the oven.
7:26
Make sure there's some of the topping everywhere.
7:30
So this is a wonderful looking recipe
7:32
that I'll bet that you have not seen before.
7:35
I'll bet you haven't.
7:38
And I predict success.
7:41
Okay, beautiful, so let's get it in the oven.
7:43
We're gonna bake it at 350.
7:45
I'll check it in 10 minutes and see what it looks like.
7:48
So let's take a break and we'll be right back.
7:50
Okay, everybody, what do you think, carrot casserole.
7:53
I know you're skeptical.
7:59
Oh gosh, yes sir, look at that.
8:03
That looks really nice.
8:08
All right, I'm gonna give it a shot
8:10
and tell you how it tastes and I will be honest,
8:12
if it's not good, I'll tell you.
8:22
Smells like, what does it smell like?
8:23
Maybe it's just the butter, it smells very good, by the way.
8:26
It's a good aroma that I'm trying to put my finger on.
8:40
Surprisingly flavorful to be really just carrots.
8:45
As the main ingredient anyway.
8:47
The onions really lend.
8:49
Butter crackers are fantastic.
8:52
It all is, gosh, it's a nice,
8:54
it's just really nice kind of...
8:57
It's definitely umami.
8:58
You know, it's gonna be a savory, gosh,
9:01
the carrots are typically sweet, but it's not sweet.
9:06
Mm, no, it's so good.
9:17
In honor of the Easter Bunny,
9:19
here's a carrot casserole that I will leave out for him
9:21
when he hippity hops over to my house
9:23
to leave the Easter baskets for the kids.
9:25
This is great, I think you'll really like it.
9:27
So make it for your Easter Sunday meal.
