- Hey everybody, it's Bobby here,
0:01
and I've got another beautiful recipe for you.
0:03
It's a broccoli and couscous salad with smoked paprika.
0:07
I think you're really going to like it.
0:09
How does the recipe begin you may ask.
0:11
Well, it begins by cooking the couscous.
0:13
So let's get started.
0:14
We've got our couscous going into oil and water
0:18
with a little olive oil.
0:20
Well that couscous is stuck.
0:25
So we'll stir this into our boiling water.
0:29
Couscous is really, really simple to cook.
0:31
Gonna turn it down to low, pop a lid on it.
0:35
Let it cook for three to five minutes,
0:39
and we'll come right back.
0:41
The couscous is cooked.
0:42
Look, there are many different types of couscous'
0:45
Buy the one that you like
0:46
and just cook it according to the directions.
0:48
That's what I've done.
0:50
I cooked ours for about three to four minutes.
0:54
Fluff it a little bit with the fork.
0:56
Usually when I fluff my couscous
0:58
or my rice, add a little butter,
1:01
which I've done again today.
1:03
So the couscous is done, warm, wonderful, delicious.
1:08
Okay, for the rest of our salad,
1:10
let's talk about one more component.
1:12
The recipe calls for currants okay?
1:14
They can be difficult to find,
1:15
and they are definitely expensive.
1:17
So I'm gonna give you a little tip here, okay?
1:19
Use raisins, much less expensive, full of flavor,
1:24
and they will make it for a perfect substitute, okay?
1:28
So our components are all finished,
1:30
and by finished, I mean we've cooked our couscous
1:32
and we've steamed or boiled our broccoli.
1:34
Today we boiled our broccoli.
1:36
I've got some florets here, fresh arugula.
1:40
So I'm gonna start in my large salad bowl with the arugula.
1:45
There are gonna be a lot of really nice flavors
1:49
popping in this salad.
1:51
Salads don't have to be boring.
1:52
They can be, but they don't have to be.
1:55
Little lemon zest, some lemon juice.
2:05
Everything's going in so the order is really up to you.
2:09
To that, I'm gonna add the broccoli and I'm gonna go ahead
2:13
and give it a little toss right here.
2:17
Don't want to tear everything up.
2:18
Man, these helping hands are so wonderful
2:20
when you're making a salad.
2:22
This is a great tool.
2:23
If you don't have some,
2:24
there are all sorts of different models
2:28
of little wooden handles out there,
2:31
and they're really great.
2:32
Okay, so my arugula and my broccoli, my lemon zest,
2:36
To that, I'm gonna add the smoked paprika.
2:40
Beautiful, wonderful.
2:52
Fresh garlic that I minced.
2:53
Okay, they make garlics out there that are in a jar.
2:58
This is where I'm gonna be discerning
2:59
and say, eh, use fresh.
3:07
Again, one more toss.
3:11
Try not to tear it up.
3:13
Just get everything sort of incorporated, and to that.
3:17
That's beautiful already.
3:18
I would eat that just the way it is.
3:20
To that, we will add our couscous,
3:26
and I'm going to use a wooden spoon.
3:35
Couscous is really warm and delicious,
3:39
so the time to eat this would be immediately.
3:52
What a beautiful, beautiful salad.
3:56
Unexpected, different, definitely not boring.
4:09
Really, really pretty.
4:12
I can smell the juice of the lemon in there.
4:21
A little more pop of green right there on the side.
4:29
A little bit of coarse salt, a little fresh pepper.
4:37
That's a really nice looking salad.
4:39
Now if you wanted to for some color, you could add
4:42
some sliced strawberries on the side,
4:44
or gosh, I mean salads are, you can do what you like.
4:47
That's going outside of what the recipe calls for,
4:51
but if you wanted a little color on there,
4:52
you could definitely add.
5:03
The warm couscous mixed with the arugula,
5:05
the flavor of the lemon juice coming through the pine nuts
5:08
and the raisins and the broccoli.
5:11
This is a great combination of flavors.
5:13
It's not your everyday salad, and I think that your friends
5:15
and guests and family will really like it.
