- Hey, everybody, it's Bobby here
0:01
and today I've got another great recipe for you
0:04
that I think you're really gonna like.
0:06
We're getting into the, I can't believe
0:08
I say this every time I'm here,
0:10
but I can't believe that it's already this late in the year.
0:12
We're not that far away from Thanksgiving, we're not.
0:15
Kids are going back to school.
0:16
Everything's starting to happen.
0:18
So speaking of Thanksgiving,
0:20
this might be a recipe that you want to add
0:22
to your Thanksgiving table this year.
0:25
You might wanna go ahead and start practicing it now
0:27
and maybe making some slight changes here or there
0:31
if you want to along the way.
0:32
But I'm gonna give you the formula
0:33
for a really great corn casserole.
0:36
Now my mom makes a great corn casserole
0:38
and we've always served one at The Lady and Sons
0:40
and at all of our restaurants and it's just so great.
0:42
It's a big fan favorite, but it's delicious,
0:47
which means that it's a little bit heavy.
0:49
So what have I always done?
0:51
I've found the culprits in the recipe
0:52
and tried to lighten them up,
0:53
and this recipe's no different.
0:56
This recipe comes from "Mama's Table To Mine."
0:58
This was my number one bestselling cookbook,
1:02
and this was a really good addition to the book.
1:06
So let's start with the corn casserole.
1:08
We're going to use light sour cream.
1:12
So that's one way that we're gonna lighten the recipe up.
1:15
And we're using one cup.
1:21
Also, we're gonna use,
1:23
and this is different from the original recipe,
1:25
we're gonna add some apple sauce.
1:27
Gonna give it a little sweet,
1:30
and it's also going to give it a nice texture.
1:34
I'm gonna add one egg.
1:36
The original recipe does not call for an egg at all.
1:41
That's gonna help us kind of burrowing together.
1:46
And I'm gonna go ahead and whisk these ingredients
1:56
and get them married.
2:02
That's great, and now to that,
2:07
I'm gonna add a corn muffin mix,
2:25
And then the last two ingredients will be kernels corn
2:29
and the creamed corn, both out of the can.
2:34
you'll see that I've got a greased baking dish over here
2:38
This recipe does not get much simpler than this.
2:41
When I say practice, what I mean is
2:43
make it exactly like this,
2:44
like my mom always taught me,
2:45
go exactly about the recipe the first time you make it.
2:48
And then after that, make it your own.
2:49
So if you wanna put this on the table
2:51
for Thanksgiving this year
2:53
and you wanna add a little of salt
2:55
or you know, there's just something that you'd like
2:57
to change along the way,
3:00
you have my permission, good news for that.
3:04
But try it this way first, because this recipe is great.
3:06
Exactly like it's so in goes my kernel corn.
3:12
Also my creamed corn.
3:16
You hear me say this a lot too.
3:17
We're just gonna fold those two in
3:19
'cause I don't wanna mash those kernel corns into bits,
3:26
just wanna fold it all together.
3:29
And this is gonna go into my greased dish
3:32
and then into the oven for about an hour.
3:35
Everybody's oven's different.
3:36
Yours might cook, you know,
3:39
a little slower or a little faster.
3:40
We've got a really good oven here at my mom's house.
3:46
It's a convection oven.
3:48
It's a commercial-style oven, so it cooks really quick.
3:52
I don't think that we're gonna,
3:54
I think we're gonna come in under an hour,
3:58
but you'll know because you'll check your corn casserole
4:02
by sticking a toothpick down in it.
4:04
And when it comes out clean,
4:07
you know you've got a cooked (indistinct).
4:10
Look at that, really nice, really pretty.
4:15
No over-the-top crazy ingredients.
4:17
Nothing you can't find in your grocery store.
4:19
There's a couple of canned items in there, and that's okay.
4:21
Hey, look man, this is, you know,
4:24
most people wanna put food on the table
4:27
as inexpensively as they can,
4:31
but as good as they can make it.
4:32
And this is a good way to do it. It's good honest recipe,
4:38
as is the whole book in "Mama's Table to Mine."
4:40
I really am proud of that book.
4:44
Okay, so all in the dish and even it out, looks nice.
4:50
Will go into the oven just like that,
4:52
again, the time is about an hour,
4:54
but this oven cooks fast
4:55
so it'll be less than you rather.
4:58
Man, look at this beautiful corn casserole
5:00
fresh out of the oven.
5:02
Just a beautiful color, golden brown on top.
5:07
I told you about the toothpick test.
5:08
It works with cakes, it works with our corn casserole.
5:13
Toothpick into the center, comes out clean
5:16
so we know that it's ready to go.
5:17
Let's give it a taste.
5:22
Beautiful, look at that.
5:27
Stay together, the pan is clean down in the bottom.
5:34
Mm-hmm, that looks great.
5:35
Can you get a shot of that?
5:38
Nice, steaming, you can see it's fresh outta the oven.
5:49
Hmm, hmm, hmm, and that's the light version.
6:00
The consistency is perfect.
6:02
It's almost like a custard, the consistency of it.
6:06
And the top is just got some bounce to it.
6:09
The muffin mix just goes a million miles with this,
6:13
and that is a great recipe.
6:15
Super simple and light, very tasty and delicious.
6:18
Your family and your guests are gonna love it.
6:20
So try this one at home please.
6:22
Whew, so good, corn casserole.
