- This is a tart that I made 100 years ago
0:05
when my boys were little.
0:09
I'm really taking care of our sweet tooth
0:13
in these next couple of videos.
0:16
So I got my food processor out,
0:18
and I'm gonna put in my flour.
0:21
And I'm gonna put in a stick and a half of softened butter.
0:28
And a half a cup of powdered sugar
0:31
to give it that little sweet taste.
0:36
And we're just gonna mix this until it forms a ball.
0:43
And then I'm gonna fold in my finely chopped nuts.
0:48
Come on, baby. Come on.
0:51
Let's have a ball. I think we got a ball, y'all.
1:07
All right, now I'm gonna take my nuts,
1:11
and mix those in to our dough.
1:19
I tell you what I love using chopped nuts in my pie crust.
1:25
It just makes all the difference in the world.
1:29
So I put a little bit of spray in that tart pan,
1:33
but there is so much butter in this crust that I think,
1:39
I think it's gonna be fine.
1:44
And this is such a beautiful dough.
1:46
It works so very nicely, so easy to work with.
1:58
And I'm going to try to run it up the sides of the tart pan,
2:05
so we'll have a pretty crust to hold those blueberries.
2:10
- [Speaker] How long does it say for us to cook it?
2:13
- [Speaker] I think 10 to 15, something like that?
2:15
- Let's see, let's see, let's see.
2:27
What does it say? Wait, 350?
2:30
350, yeah. Which is kind of the norm.
2:34
I've been in the kitchen today
2:35
making some good stuff, y'all.
2:38
Some real good stuff.
2:40
And I'm ready to finish up that blueberry tart. Oh gosh.
2:45
And it brings back so many memories. So good.
2:49
So I'm gonna start by taking a cup of heavy cream.
2:54
I'm gonna get every drop out there too. You know me.
2:59
And I'm going to add a fourth of a cup granulated sugar.
3:04
My formula for heavy whipped cream
3:06
is I use a fourth of a cup of sugar
3:08
for each cup of heavy cream.
3:11
And if you don't like your heavy cream, that's sweet.
3:14
Just put what you want in it.
3:16
But to me that makes a nice, good,
3:22
sweetened whipped cream.
3:25
All right, one thing about it now
3:26
when you're doing your whipped cream,
3:28
you do not want to over beat it
3:33
because it will turn back to butter.
3:36
So you just have to be cautious of that.
3:40
Now I'm gonna take my cream cheese
3:44
and I'm going to add powdered sugar.
3:47
Add that one cup of powdered sugar for this.
3:52
And then I'm gonna fold this into that.
3:56
And then it's going on top of our blueberry tart,
3:59
that wonderful pie crust.
4:03
All right, fold, fold, fold and mix, mix, mix.
4:24
So we going to spread this over our wonderful pecan crust.
4:41
And you know what? I love using a tart pan.
4:44
'Cause all we have to do when we get ready to serve it
4:47
is push, push, push it out of the thing.
4:56
All right, now for our finishing touch,
5:03
is our blueberry pie filling.
5:09
I have used this blueberry pie filling in a cobbler,
5:17
by just adding some warm sugar water to it
5:27
so it'll be thin enough to,
5:29
so I'll have enough juice to go into that cobbler
5:35
Now I'm gonna show y'all what I do
5:39
if I don't want my stuff to get stuck, I just do this.
5:48
And that way it won't be pulling off my blueberries.
5:54
Just a quick little trick.
5:59
- And then it's back to the refrigerator.
6:00
- Back to the refrigerator. You got it?
6:03
- So we're probably going to need to let that chill,
6:06
probably two or three hours.
6:10
'Cause you want it good and cold. Can we wait that long?
6:20
Remember I told y'all I sprayed my Saran wrap.
6:25
So see, it just kind of protects that
6:29
and we just going to lift that out like that.
6:34
And it's gonna be so good.
6:36
See, this is what I love about a tart pan.
6:42
You don't have to fight tin foil or glass
6:45
or anything like that.
6:47
So I'm gonna go ahead, and it's still not quite,
6:55
it's still not quite cold enough,
6:57
so this is gonna have to be my taste right here.
7:05
So good. Brings back so many memories.
7:11
So this is gonna go back in the refrigerator
7:16
until it firms up some more.
7:24
I can't hardly wait. It's delicious, y'all.
7:28
And you know you can trust me on that.
