- Y'all ever get a craving for maybe a sweet biscuit?
0:07
Well, I got the ticket for y'all.
0:10
In my magazine "Cooking with Paula Deen"
0:12
the January-February issue
0:15
has a different array of biscuits
0:20
from savory to sweet.
0:22
So, I just wanted to share this recipe with y'all
0:24
because, you know, I'll take a biscuit,
0:26
sweet or savory myself.
0:29
So, I'm gonna take a, I've got, let's see,
0:32
I've got two cups of self-rising flour.
0:35
So, you'll notice I don't have any baking powder
0:37
or baking soda, anything up here.
0:39
So, I've got my two cups of self-rising flour,
0:45
and a fourth of a cup of packed brown sugar.
0:50
So I'm just gonna incorporate those two things.
0:57
And I'm supposed to be adding my lemon zest to it,
1:00
but I'm gonna wait until last minute to stir that in
1:05
because this zest will get caught on your whisk
1:11
or your cutter, whatever you're doing.
1:13
So, I'll stir those in in a minute.
1:16
But I'm gonna take a half a stick of cold butter.
1:19
And that's one stick.
1:20
One stick equals a half a cup,
1:23
and I'm just gonna cut in.
1:24
And that is cold butter.
1:27
You want it to be cold, not soft.
1:31
So, I'm just gonna blend this in
1:34
until it kind of takes on the look of cornmeal.
1:41
All right, let's see.
1:42
I can't remember what I do next.
1:45
I'm gonna stir in the blueberries and the sour cream
1:49
and the buttermilk, so.
1:56
And this is a drop biscuit, y'all.
1:58
We're not going to have to knead it
2:15
And when these come outta the oven, y'all,
2:16
we're gonna do a sweet glaze on it
2:22
with a little confection sugar and lemon juice.
2:29
So we gonna perk up that lemon zest
2:32
with some lemon juice.
2:42
Right, in goes our blueberries.
2:48
Now, since these are drop biscuit, y'all,
2:50
I'm gonna use an ice cream scoop.
2:55
And this is depending on how heavy your hand is,
2:58
this is supposed to make 12 biscuits.
3:06
Now, I'm gonna add our zest,
3:11
because if anything gets caught on my spatula
3:19
I can get it off of that and distribute it.
3:27
I'm going in for the kill, y'all.
3:36
Gonna spray my ice cream scoop
3:39
so my dough won't stick to it.
3:44
There you go, Theresa.
3:46
Usually she's in here grabbing my stuff
3:51
I shoved it that a way.
3:53
'Cause you were over there.
4:00
And you wanna cook these biscuits
4:10
so that your biscuit can brown on all sides.
4:16
Okay, 3, 6, 9, 12, 13, a baker's dozen.
4:23
All right, I'm gonna have to wash the dough off my fingers
4:27
because I've still got to sprinkle our biscuits
4:31
with turbinado sugar.
4:42
I think it calls for like two tablespoons
4:46
which y'all know I'm gonna use more than that.
4:49
These are gonna go into a preheated 400 degree oven, y'all.
4:56
And we're gonna cook 'em for
5:11
I remembered, can't believe it.
5:14
So in the oven they go,
5:16
and while they're baking,
5:17
I'm gonna mix up our confection sugar and our lemon juice.
5:23
While our biscuits are cooking in the oven,
5:28
I'm gonna go ahead and mix up our glaze.
5:32
One cup of confection sugar
5:35
and two tablespoons of fresh lemon juice.
5:39
And I always, always, always use fresh.
5:45
I just do not like that artificial lemon juice.
5:52
I want the real deal.
5:56
One cup, two tablespoons, perfect.
6:00
Now I just gotta watch those biscuits.
6:03
We got biscuits, y'all.
6:05
- [Eddie] Oh, they smell so good.
6:07
I can actually smell the blueberries.
6:13
I can tell you. - Smell that.
6:18
Just gonna move them kind of close together.
6:22
So when I start to drizzle,
6:26
I can make sure everybody gets their fair amount of drizzle.
6:34
I don't wanna show any partiality.
6:37
They're not the first biscuit.
6:44
I'm gonna see if they're too hot for me to drizzle.
6:57
Uh oh, I had way too much on that,
7:05
Would anybody like to share a biscuit with me?
7:09
Okay, let's grab it and growl.
7:15
I'm not even gonna waste my time.
7:16
I'm gonna go after a smaller one.
7:19
- [Theresa] I was trying to do, but I'm gonna.
7:27
- Make you smack somebody.
7:31
- It's all over your lips.
7:35
You got it, you licked it off.
7:37
- [Theresa] Oh my gosh.
7:44
400 degrees, 15 minutes, y'all.
7:49
And I might have to make one more little batch
7:52
of the glaze. - [Theresa] I knew it.
7:54
I knew you were gonna say that.
8:00
Nothing makes me madder than get something
8:04
with a skimp on the glaze.
8:09
- [Theresa] Mm hmm like Cinnabon, I always buy extra.
8:13
- Uh huh, uh huh, uh huh.
8:22
Please make sure you keep this recipe in your repertoire,
8:30
because you'll love it, and so easy.
8:33
No rolling out, no nothing.
8:36
