- Hey everybody, it's Bobby here and I've got a wonderful
0:03
recipe for you today that I think you're really gonna like.
0:06
You know, we talk about how fortunate we are to live
0:09
in Savannah and on the coast of Georgia all the time.
0:12
And one of the reasons that we're so fortunate
0:14
is because we get wonderful, fresh, local shrimp
0:19
right here from our waters right off the coast of Georgia.
0:22
And I'm gonna show you a recipe today
0:25
called black pepper shrimp.
0:26
It's really tasty and delicious.
0:28
Unless you have a shrimp allergy like my wife,
0:31
so she cannot have this, but that just means more for me.
0:35
So black pepper shrimp is just about the simplest
0:38
recipe that you'll ever find.
0:41
There are a couple of different ways that you could do it,
0:44
and I'll tell you about both of them.
0:46
First of all, I'm gonna start off with a stick of butter.
0:49
Melt it in my sauce pan here.
0:52
Very few ingredients here, okay.
0:54
Shrimp, butter, garlic, and pepper.
1:00
And that is the whole thing.
1:02
So while my butter is melting, which won't
1:04
take very long, I'm gonna chop some garlic.
1:08
Recipe calls for three tablespoons of chopped garlic.
1:12
So we'll see what we get out of these four cloves.
1:19
My mom used to do a...
1:22
How this started was a special at the Lady and Sons
1:26
down on Congress Street when we
1:27
were at 311 West Congress Street.
1:29
And my mom would do it in the skillet.
1:31
Today we're gonna bake 'em.
1:35
The skillet is wonderful because it gives you
1:37
great control over the dish.
1:41
And with shrimp, you know,
1:42
you can't come back from overcooking.
1:43
Once you've overcooked them, you've done it.
1:46
So you gotta be careful with the oven.
1:50
And every oven is different.
1:52
Yours is, you know, it's gonna be different
1:55
from the one that I'm using today.
1:56
Mine at my house is different from the one I'm using today.
1:59
They're all different.
2:00
So you have to keep an eye on 'em because these
2:02
shrimp really sacrificed for this dish, right?
2:06
So we don't wanna throw 'em away, we don't wanna waste 'em.
2:09
So once you put 'em in the oven,
2:10
just keep a nice, tight eye on 'em.
2:13
But my mom used to do it in the skillet,
2:14
like I said, for greater control.
2:17
'Cause you're really eyeballing shrimp
2:19
when you're cooking 'em.
2:19
And it's like, there it is.
2:22
That's the color I'm looking for.
2:23
And they're done, and you pull 'em off.
2:24
And when you pull 'em off, you gotta remember,
2:26
with everything that you're cooking, still continues
2:31
to cook a little bit after you remove it from the heat,
2:33
whether it's a steak or a chicken or shrimp.
2:35
So when you see exactly that right color
2:39
pull 'em outta the oven or get 'em out
2:41
of the skillet, whichever you prefer.
2:42
And maybe one day we'll come back and redo this recipe
2:45
and do it in the skillet because it is, whew, so good.
2:50
Now this is gonna be really pretty
2:52
because I'm using a cast iron baking dish.
2:54
My mom has got some just beautiful pieces
2:58
in her house, and this is one of my favorite.
3:00
So what we're gonna do is take our shrimp,
3:05
which have been washed and cleaned, and they're ready to go.
3:08
We're gonna put 'em in our shallow baking dish.
3:16
Spread 'em out a little bit.
3:18
Oh boy, this is gonna be so, so pretty.
3:22
But there's nothing hotter than cast iron out of the oven.
3:27
So be real, real careful when you take it out
3:29
not to burn yourself.
3:32
Okay, so our butter is just about completely melted.
3:40
I'm sure there's one here.
3:44
Nice assortment of whisks.
3:47
And I'm gonna go ahead and add our garlic.
3:57
Garlic and butter together is one of those
4:01
aromas that is just so wonderful.
4:07
That, along with like the holy trinity, you know,
4:11
onions and peppers and that real New Orleans smell,
4:17
that also is a wonderful aroma in the kitchen.
4:20
But garlic and butter together, oh my goodness.
4:22
So let's take a quick break.
4:23
I'm just gonna do this for about three minutes
4:25
to cook the garlic a little bit.
4:26
So we'll come right back.
4:28
Our garlic butter is perfect, about three
4:30
to four minutes on the stove top.
4:32
And it looks and smells so good.
4:34
So I'm gonna go ahead and pour this right
4:37
over the shrimp and try to get it evenly.
4:41
Make sure everybody gets some.
4:43
Ooh, I love good shrimp.
4:46
There are benefits to living on the coast.
4:52
All right, so there's our butter and garlic mixture
4:54
and I'm going to toss 'em a little bit.
5:00
Try not to beat 'em up.
5:03
Make sure that everybody gets a little bit
5:04
of that garlic butter all over 'em.
5:15
I can tell that this is gonna be wonderful.
5:17
Now with black pepper shrimp, everyone,
5:21
gotta be heavy headed with the pepper.
5:25
We're gonna pepper 'em.
5:30
And we're gonna bake 'em.
5:31
And then we're gonna toss 'em and pepper 'em again.
5:38
I wanna make sure that they're all
5:41
covered with that black pepper.
5:45
All right, that looks wonderful.
5:48
And our beautiful cast iron skillet full of shrimp
5:50
is gonna go into the oven for about five minutes.
5:53
Now, and your oven might be different
5:55
so I'm gonna keep a tight eye on this.
5:56
I'm probably not gonna leave it.
5:57
I'm probably just gonna stand there and stare in the window
5:59
and be looking for the right color because if you
6:01
overcook shrimp, they become pencil erasers.
6:04
That's not what we want.
6:06
So let's go to the oven.
6:07
So this has been about three or four minutes
6:11
and thank goodness I did not overcook them,
6:14
but they're starting to get that nice pretty pink color.
6:19
They smell wonderful.
6:20
That butter and garlic together, oh my goodness.
6:24
Make sure that butter and garlic and pepper
6:28
gets all over all of my shrimp.
6:33
And a little more pepper.
6:37
And back into the oven.
6:42
Be heavy handed with the pepper everybody.
6:46
Make sure that they're all covered.
6:54
Okay, back into the oven for,
6:56
I don't know, two minutes, four minutes.
6:59
I'll keep an eye on 'em.
7:00
And we'll be right back.
7:03
Goodness gracious, that is a bountiful harvest
7:06
of wonderful black pepper shrimp.
7:09
And that's about five and five minutes.
7:14
So we melted our butter, added our garlic to the butter.
7:19
sauteed that for about three or four minutes, poured it
7:21
over our raw shrimp in our shallow bacon dish here.
7:24
Popped it in the oven.
7:26
We went a little less than five minutes,
7:27
we got a super hot oven here.
7:29
And then we took it out, tossed it,
7:31
and we added a little bit more black pepper.
7:33
And then we went back in the oven for about five
7:35
more minutes, and we kept a really close eye
7:36
on it to make sure that our shrimp didn't get,
7:40
you know, overcooked and rubbery.
7:42
And they look so good.
7:45
And I don't mind if I do.
7:46
So let's taste them so I can make sure for you all
7:52
that this recipe was accurate.
7:58
Nothing like some shrimp.
8:00
I feel bad for everybody who's got a shrimp allergy.
8:13
Okay, well this one kind of tore up
8:14
on me because I was excited.
8:18
Get one outta that jacket.
8:48
Scrumptious and wonderful.
8:49
One of my favorite things, black pepper shrimp.
8:52
Simple recipe, I think you're really gonna like it.
