- So I've been standing up here thinking, y'all,
0:04
you know, during the summer hot months,
0:07
I try to cut on that big oven in there as little as I can.
0:13
The summertime especially is really
0:16
when I turn to my air fryers
0:19
because it just knocks extra heat outta your kitchen.
0:24
But this dessert only need the oven for like eight minutes,
0:30
and it's one of those cool and refreshing desserts.
0:34
It's pineapple banana cake.
0:38
Yeah, it's called a banana split cake.
0:42
And you may have seen this one before on my website.
0:46
But anyway, we're gonna start
0:48
with four cups of graham crackers
0:52
and I'm gonna pour a stick of melted butter.
1:04
And I like to add, I know y'all have probably made
1:09
a thousand graham cracker crust before,
1:13
but I like to put a little sugar.
1:18
I like to put a little bit of sugar in my crust
1:23
so it can be just a little bit sweet.
1:28
So I'm gonna come over here and get me a little bit
1:33
of sugar, a little bit of sugar.
1:38
Everybody needs a little bit of sugar once in a while.
1:42
So yeah, that will, that will lighten up that,
1:48
sweeten up that crust a little.
1:51
You don't have to do that, but y'all know me.
1:54
I change every recipe I've ever done in my whole life.
1:58
So I wanna get all those graham crackers wet
2:03
and then I'm gonna move over here and I'm gonna press them,
2:09
in the bottom and at the sides.
2:20
And we're gonna bake this for about eight minutes.
2:28
And the reason you wanna bake it y'all is
2:35
and that butter continues to melt in those crumbs.
2:41
If you cut it, it would make a big, big mess.
2:45
So it has to be baked off so that it'll get that.
2:53
So it'll get that kind of crunchy crust
2:56
so you can't skip this part.
3:00
Okay, so there we go in the oven for eight minutes.
3:06
Now, before I put this in the oven
3:09
I wanna make sure that I've got it packed, nice and firm.
3:12
So I'll take something, you know, kind of like this shape
3:17
and then really just press, press, press
3:23
before I put it in the oven.
3:26
That's pressed up pretty good.
3:32
So you can really, with a circle,
3:35
you can really get in there and press it down good.
3:41
I don't want my crust coming apart.
3:48
We are ready to finish our banana split cake.
3:58
I think we probably cooked it maybe 10 or 12 minutes.
4:01
You just want it to bake long enough
4:04
for the graham cracker crumbs to stick together
4:08
so when you cut you off a piece it won't just fall apart.
4:14
And we've got a 16 ounce, probably.
4:16
Let me see, I can't remember.
4:23
A 20 ounce can of a crushed pineapple
4:27
and I've drained it real good.
4:28
I actually picked it up and squeezed all the juice out
4:32
so our pie would remain or cake would remain in one piece.
4:41
All right, (plates clinking)
4:44
so before we go any further,
4:46
I want to talk to you about this.
4:49
This recipe calls for raw eggs.
4:53
And as I have told y'all in other tapings
4:57
that I'm so funny about eating a raw egg.
5:01
It just does something to my stomach.
5:04
So we are using pasteurized eggs
5:07
so I don't have to worry
5:10
about somebody not using this recipe
5:12
because it called for raw eggs
5:15
and 'cause I want everybody to try it and enjoy it.
5:19
So I'm gonna beat these eggs up
5:22
and it called for how many eggs did it call?
5:26
which comes to? - A half a cup.
5:30
So that's what we are using and it's got a beautiful color
5:35
and I just feel really, really good about that.
5:41
So I've got a 16 ounce bag of confectioner sugar
5:48
and I'm just gonna beat these two things together.
5:55
And now I'm gonna put in my two sticks
6:01
of wonderful softened butter.
6:15
Perfect. Perfectly softened.
6:26
And that makes life so much easier, Theresa.
6:30
You know, when that butter is perfectly softened.
6:33
You know what a mean Jean?
6:47
It's like the cake batter part
6:54
but we don't have to cook it.
6:58
So we're gonna just pour this layer
7:03
of wonderful cream right on that crust.
7:12
I'm gonna spread it out where it's nice and even.
7:16
All right, the next thing I'm gonna do is put us a layer
7:20
of pineapple on that wonderful filling that we've got.
7:25
I wanna make sure I spread it nice and even
7:28
so everybody gets a bite of pineapple.
7:45
This is gonna be so good.
7:48
Now y'all, this is fruit fresh and I lost the lid
7:57
but I don't want these bananas to turn dark on us real fast
8:03
so I'm just going to toss 'em in that fruit fresh.
8:06
Now, the recipe calls for that frozen whipped topping.
8:19
So we're using fresh whipped cream.
8:23
We beat up two cups of whipped cream
8:28
along with a half a cup of sugar.
8:31
I use a fourth of a cup of sugar per cup of heavy cream.
8:38
And the meat is just so much better than artificial stuff.
8:55
A little bit soft at the bottom,
9:01
but you have to be careful when you're beating your cream
9:05
because you don't want it to turn back to butter
9:09
because it will taste just like you're trying
9:11
to eat unsalted butter. (container clanking)
9:15
- [Crew] I have no problem. (laughs)
9:18
- Well, I've done it then. It's not really that good.
9:34
9:39
Now, see on the sides where you can't really mash
9:43
that graham cracker down.
9:46
It comes apart but in the center,
9:49
in the bottom, it'll cut almost like a pie crust.
9:56
- [Crew] They also tell you to wait an hour,
9:58
get it in the refrigerator for an hour.
10:00
- I was. - Which might help it set
10:03
- What'd you say, wait an hour.
10:05
- [Crew] We're not really good at,
10:06
we're never good at waiting.
10:11
You never know I've been in it.
10:15
I'll come back in an hour and get some more. (chuckles)
10:31
- Out of this world? - Mm-hmm.
10:35
It's been so long since I tasted it. So good.
10:41
Your children are gonna love you.
10:44
My goodness for 'em.
10:51
All you moms and dads out there trying to survive summer.
10:57
