0:00
- Y'all, I'm excited to share this recipe with y'all.
0:04
I think it was in my magazine, wasn't it?
0:09
- And shrimp and grits, you know,
0:14
it can be a 10 or it can be like a three or a four
0:19
because when I do my shrimp and grits,
0:22
I don't really follow a recipe, you know?
0:26
But this recipe is easy to follow, easy to prepare,
0:32
and it calls for three fourths of a pound
0:35
of andouille sausage.
0:37
Now, this may sound crazy, I love Louisiana cooking so much,
0:44
but I have never cared for andouille sausage.
0:48
So we have an andouille type sausage,
0:54
and we're gonna put that in our skillet.
1:00
Hey, it's like me, sometimes it takes a minute, y'all.
1:06
Alright, so I'm gonna put a couple of tablespoons of butter
1:09
in my cast iron little dutch oven,
1:14
and I'm gonna brown this off, you know,
1:18
just until it's like the brown, five or 10 minutes,
1:21
because at the very end,
1:22
this recipe is going into the oven.
1:27
Now, I'm gonna go ahead and add our creole spices
1:31
to the shrimp and now this,
1:35
this has been about five minutes, so,
1:37
and it's getting nice and brown in places,
1:39
so I'm gonna turn that down a little bit
1:41
and I'm gonna add our shrimp
1:44
into the pot that has our sausage
1:50
and notice it's, ooh, no.
1:53
Uh-oh, I just got punished.
1:56
'Cause I was gonna say it's got tails on, y'all.
2:00
Since Mikey ain't eating, it's gonna be my way.
2:05
While this is browning,
2:06
I'm gonna go ahead and start our grits.
2:09
I've got one quart of chicken stock,
2:22
I've got garlic powder,
2:25
I've got onion powder
2:29
and I'm gonna be using,
2:33
I don't, I don't use instant grits,
2:35
I just don't like those at all.
2:38
I use a five minute grit
2:40
and then I like to cook it for about 30 or 40 minutes,
2:45
the five minute grit,
2:47
because the longer you cook 'em, the better they get,
2:51
but in order for your grits to turn out properly,
2:56
you have to have salt, because if you don't salt your water,
3:01
you will never, never be able to get it salty enough
3:07
and, oh, this little pepper that didn't all come out,
3:19
So we'll let that come to a boil.
3:21
It's a sin to, to overcook seafood
3:33
and since they're gonna be going back in the oven,
3:36
I'm gonna go ahead and take this up.
3:44
- [Theresa] It smells good.
3:45
- Doesn't it smell delicious?
3:48
I can't tell y'all what a big fan I am of Louisiana cooking.
3:53
Okay y'all, our chicken broth has come to a boil,
3:56
so I'm adding one and a half cups of quick cooking grits.
4:04
So that's your two important things, salt
4:07
and using this to stir them for about five minutes,
4:11
making sure every grain of grit is moist
4:19
because they get thick on you so quick
4:26
and in the directions it says cook for,
4:31
you know, five minutes.
4:32
I think that's what the package direction says,
4:34
but like I said, always cook it longer.
4:42
So if you do that, you may have to adjust the liquid,
4:48
but when this is done,
4:49
I'm gonna be adding cheese and heavy cream.
4:55
So we'll be adding a little bit more liquid to it.
4:59
Alright, now that we've got it going y'all,
5:01
I'm gonna add a half a cup of butter to our grits,
5:05
which gonna make so good.
5:16
Okay, I am gonna put the lid on that pot,
5:19
and I'm gonna turn this down
5:20
as low as my little stove will go.
5:26
To finish up this easy, easy, delicious recipe,
5:30
we're gonna pour our grits
5:33
into the pan that we browned our sausage and shrimp in,
5:40
because I have a feeling
5:41
there's a lot of flavor down there in that pan
5:50
and I'm gonna stir 'em up
5:51
and let those grits get some of that.
6:00
See that goody goody stuff.
6:09
Alright now, we're gonna add a half a cup of our cream
6:17
and that's heavy cream, y'all.
6:25
It makes those grits so creamy.
6:30
I just can't imagine folks that come down here and say,
6:33
"Oh no, I, I don't, I don't like grits, I don't want grits."
6:38
I swear, if you'll just give yourself one little opportunity
6:42
to taste some good ones,
6:44
to taste somebody's grits that knows what they're doing.
6:50
Okay, now I'm gonna add a cup of cheese.
7:01
That looks like about a cup
7:11
and I'm gonna put this in the oven
7:16
and the last like five minutes of it cooking,
7:21
we are going to dot it
7:23
with another half a cup of cheese on top.
7:28
Come on up here, you pretty baby.
7:32
You pretty, pretty baby.
7:39
Gosh, it's such a, an easy, easy way to do shrimp and grits.
7:43
It's like a no fail, y'all, no fail way to do it.
7:53
Okay, in the oven it goes.
7:59
I cannot hardly wait.
8:00
All you need now is a loaf of french bread
8:05
and it'll take you to the house, honey.
8:07
It'll take you to the house.
8:09
So this has been in here about 15 minutes.
8:11
Now, I'm going add a half a cup of cheese on top of it
8:15
and let that melt and then we gonna be ready to eat.
8:20
No butt shots, Eddie.
8:23
Looky here, looky here y'all.
8:28
That is a meal fit for a king.
8:32
Now I'm just gonna chop up some green onion
8:37
and we just gonna garnish this
8:42
with a little bit of the green onion because it just,
8:46
that little bite of onion along with those grits
8:51
and sausage and shrimp, just heavenly.
8:57
All right y'all, I think this is cooled down enough
9:01
that it won't rip the skin outta mama's mouth.
9:11
This just looks heavenly, look at that.
9:16
Would you wanna get me a little piece of sausage?
9:24
This is, to me, pretty enough to serve this,
9:29
take it to the table just like that,
9:32
in that beautiful cast iron dutch oven
9:35
and some french bread to go along with this
9:41
and you see how nice it is
9:42
because I can pick my shrimp up by the tail.
10:07
It's so good, y'all.
10:24
