- Hey, y'all, Jamie Deen here at Mama's House,
0:02
and today we're doing an interesting recipe
0:04
and it is the perfect time of year.
0:06
It's fall, y'all, and I love pot food in the fall.
0:10
We're doing a cheeseburger soup today,
0:13
like I've started with 10 pieces of bacon
0:16
that I've crumbled up,
0:18
and I've cooked this off.
0:21
Now, I'm gonna save all the renderings
0:24
from my bacon in this pot.
0:26
(cooking pot scraping)
0:27
So I'm gonna make sure you get all this out.
0:29
I have never, in my life, heard of a cheeseburger soup,
0:32
but it has all the ingredients that I love.
0:37
So we've got our 10 pieces of bacon here cooked off.
0:39
I'm gonna drain those,
0:41
and right into these drippings,
0:43
we're gonna add our ground beef.
0:46
(container clattering)
0:49
And I don't know if the recipe calls for it,
0:51
but I'm never going to put ground beef in a pot
0:53
without some salt and pepper on it.
0:57
And I'm gonna add our garlic and onions.
1:02
(cooking pot thudding)
1:04
Now, this is the time of year when the days get shorter,
1:06
and I know your time gets shorter, too,
1:08
but it's gonna be worth it, y'all.
1:10
I'm gonna break up this ground beef in here
1:12
and let it brown up with our onions and our garlic.
1:18
I love to make soups,
1:21
but you have to be patient when you're making soups
1:23
'cause you really want to give your flavors time to marry.
1:26
Even a couple of days in the refrigerator
1:28
will do wonders for a pot of soup or some chili.
1:31
Now there's lots of things in this world
1:33
that are interesting to watch,
1:35
and me cooking ground beef is not one of them.
1:38
So how about we take a break right here?
1:39
I'm gonna brown this beef off, and once we get back,
1:42
we'll get into our pot of soup.
1:46
All right, y'all, now the fun part.
1:48
See, we've got all of our beef browned off,
1:51
and now for all of our liquid, we're using...
1:54
Chicken stock is gonna be the base of our soup.
1:59
I asked Theresa about this, I said,
2:01
"It doesn't call for any salt and pepper,"
2:02
and she said, "Well, there's a lot of...
2:04
You got sodium that's fixing to join the party
2:06
with our chicken stock."
2:08
We've got two tablespoons of Worcestershire sauce.
2:13
I got one can, of course, all reliable.
2:20
Come out of there, cheddar cheese.
2:22
So we got our burger, we got our cheese,
2:32
(cooking pot thudding)
2:36
So we're using petite,
2:38
smashed, peeled tomatoes.
2:41
Can't have a burger without some pickles.
2:44
(cooking pot thudding)
2:49
Now, we have to bring all this up to a boil.
2:52
Let's see what it looks like.
2:56
Looks like we got some cheeseburger soup going.
2:59
I'm gonna cook this soup down.
3:00
Now, all of this is gonna marry together.
3:02
I'm gonna let it heat up before I give it a taste.
3:06
I've been in the kitchen with y'all long enough.
3:07
You know, if I'm doing something like this,
3:09
if I'm building a soup up, I like to season every layer.
3:14
And specifically, I'm talking about my chili.
3:16
It has five or six different dumps in it.
3:20
And I always taste the base
3:21
before I add the next ingredient,
3:23
'cause sometimes your tomatoes
3:25
are gonna need to be sauced up.
3:26
You wanna make sure you hit the heat right on your beef
3:29
at the start of your chili.
3:31
And now, for this soup,
3:33
I'm gonna let this cook up a little bit,
3:37
then I'm gonna give it a taste.
3:39
It's gonna be worth the wait, y'all.
3:40
I'm gonna bring this up to a boil.
3:42
It'll take a few minutes,
3:43
and when you come back, we'll be eating soup.
3:49
I wouldn't have believed it till I saw it.
3:50
Bacon cheeseburger soup, my gosh.
3:54
All right, we're down to it now.
3:56
You know, the first thing we did
3:58
was we cooked our 10 pieces of bacon,
4:01
and the renderings from that bacon
4:03
started this whole pot off.
4:05
So I'm gonna add our bacon back in here.
4:10
Y'all know, every week,
4:13
I just burn myself so bad trying to eat this food,
4:17
and I'm looking here at this bubbling, boiling pot.
4:20
God, I'm going to do it again.
4:23
The weather outside is perfect for this, y'all, look.
4:27
Now, don't forget what I've told you about your soups.
4:31
Give this another chance, just give it.
4:35
Give it some time to settle
4:38
and marry up together a little bit.
4:39
Let it sit on your stove.
4:41
You can cool it all the way down.
4:43
Put it in your refrigerator.
4:45
You can make it a day ahead or you can eat it day up.
4:47
I'm gonna put some fridge onions on here.
4:50
So y'all, believe it.
4:53
Bacon cheeseburger soup.
4:55
We got the bacon, we got the cheeseburger,
4:56
we got the cheese, we got the pickles, we got tomatoes,
5:00
and now we have the onions.
5:02
Prepare to be amazed,
5:05
or to burn your lips off, we'll see.
5:15
Yeah, the fire hot. Hmm.
5:19
It tastes just like a cheeseburger.
5:22
I just had a piece of pickle, that's amazing.
5:26
Don't turn your nose up at something
5:27
until you give it a try.
5:29
I would never have thought to eat a bacon cheeseburger soup.
5:33
This is going home with me.
5:34
It's fall time, y'all, getting your soup bowls.
5:37
I'm Jamie Deen, that's good food.
5:39
We'll see you around the kitchen.
