0:00
- Fall is in the air, y'all.
0:03
I went out last night, my cousins came over.
0:08
Chris and Dana came in from Statesboro.
0:11
So we went out and got a bite to eat
0:14
and fall was in the air.
0:16
Did you out go out last night, Eddie at all?
0:21
- It felt so good outside.
0:24
- [Eddie] It actually kind of feels nice
0:27
- [Eddie] Yeah, I mean, yesterday we had,
0:29
it was a breezy day for some reason all day.
0:32
I was just shocked at last night
0:34
'cause you know I don't ever go out at night.
0:36
So whatever it does at night, I don't know about.
0:40
Okay, I said fall is in the air and fall means apples.
0:47
So this morning I'm making
0:50
to take with me to a friend's house apple raisin muffins.
0:58
The children will like 'em and the adults,
1:02
if that's all they want for breakfast,
1:04
they can have that too.
1:06
So I have chosen to grate my apples in the food processor
1:11
because I just think that might be easier.
1:15
This is the first time I've ever grated apples
1:17
using the food processor.
1:19
So let's see what we got.
1:25
How about you, Eddie?
1:27
That looked good to you?
1:29
Heck of a lot easier than hand grating 'em.
1:32
And I'm gonna need two cups.
1:39
So we're moving on over here to the stove.
1:42
I've got a cup of water that I'm gonna put
1:50
And I'm gonna turn it on,
1:51
and I'm gonna add cloves.
2:22
Yeah, I'm glad I grated that other little piece of apple.
2:26
And the last ingredient I've got going in,
2:28
well, the next to the last, I've got two sticks of butter.
2:35
It's just one cup, y'all.
2:36
Just one little old cup of butter.
2:42
And I need two teaspoons of nutmeg.
2:52
- [Theresa] There's a lot already in there
2:53
because I started it for you.
2:55
- [Theresa] I just wanted you
2:56
to be able to do a little bit.
2:59
- [Theresa] I don't know if that's two, but it should be.
3:01
That looks very close to two teaspoons.
3:04
And y'all, if a recipe calls for fresh grated nutmeg,
3:09
please by all means use it because it makes a powerful
3:20
In the fresh versus the ground.
3:25
All right, so we're gonna let this come to a boil.
3:31
Then we're gonna have to let it cool off.
3:36
Pot almost wasn't big enough, was it?
3:40
These are gonna be so moist because of the butter.
3:46
I'm thinking that this is gonna taste
3:47
like the best I can remember.
3:52
It's gonna taste like my Grandma Harris's carrot cake.
3:56
Only got apples instead of carrots.
4:02
And we got butter instead of oil.
4:04
Okay, our pot has finally come to a boil,
4:09
and now I have chosen to pour in my big pan.
4:15
'Cause I'm hoping that by being in that big cold pan,
4:20
it will cool quicker.
4:22
So that's what I'm hoping
4:24
because we can't finish this until that has cooled down.
4:31
I've got my three and a half cups of all-purpose flour.
4:33
I've got my baking soda and I've got my chopped walnuts.
4:41
So I'm just gonna stir those together.
4:44
And then when our wet part of our muffins has cooled down,
4:49
we're gonna add that to our flour,
4:54
put 'em in miniature muffin tins,
4:57
and bake 'em for about 10 or 15 minutes, around 350 degrees.
5:02
And they're gonna be so wonderful.
5:04
All right, y'all, our mixture for our muffins
5:09
finally cooled down and it really didn't take that long
5:13
because I wanted to put it in a big pan
5:16
so it'd be shallow and cool off quick.
5:19
So all we got to do now is add this to our flour.
5:36
- [Eddie] Smells like Christmas.
5:37
- [Paula] It does smell like Thanksgiving and Christmas.
5:42
I don't know if I wanna think about that, Eddie.
5:45
I don't know if I wanna think about it.
5:50
There was two raisins left in there.
5:58
So we just gonna stir this until all your flour.
6:03
- [Theresa] You want that?
6:04
- [Paula] Oh yes, I'd love that.
6:07
Until all the flour has been incorporated with the wet.
6:14
To me, these little muffin tins, they're hard to spray.
6:18
- [Theresa] They are.
6:20
- And you just need to fill these
6:22
to the top of the muffin pan.
6:34
Okay, y'all, there they go.
6:38
Apple raisin fall muffins.
6:44
I wish y'all were here in this kitchen
6:47
to enjoy the smells that we've got going on in here.
6:54
Look y'all, we filled the muffin tins to the top,
7:00
so they might be bigger
7:03
than just your ordinary miniature muffin.
7:06
You know what I mean?
7:09
- Yes, it's gonna be a two biter instead of a one popper.
7:13
Soon as I pop 'em outta the pan, y'all,
7:15
they almost cool immediately.
7:18
I mean, they're still warm,
7:19
but I love a warm bread, anything.
7:30
Whatcha think, Theresa?
7:32
- [Theresa] These are fabulous.
7:37
- [Theresa] I love fall.
7:39
- [Theresa] Fall to make the the heat tolerable.
7:43
she's almost eating her whole muffin, Eddie.
7:51
I love it when people enjoy the fruits of my labor
7:56
and y'all's labor too.
7:59
- [Theresa] And you never ever have to worry about that.
8:09
It reminds me so much of Grandma's carrot cake.
8:16
Great recipe for fall, y'all.
8:22
And children, if any of y'all are watching this
8:26
ask Mama, please, please, please,
8:28
or Daddy, to make it for you.
8:32
Love and best dishes, y'all.
