Hey y'all, welcome to Best Dishes Today
0:02
Are y'all in for a treat today? No, you're not seeing double
0:06
It's actually Melanie Hudson of Saturday Night Live fame. Or is it Paula Deen
0:12
No, it's Paula! I'm Paula! And today we're cooking up some of our favorite kid-friendly recipes
0:18
Starting off with scrumptious mini burgers wrapped in puff pastry. Delicious peanut butter and banana bread sandwiches
0:26
Look at that adorable sandwich. and crispy ranch-flavored chicken nuggets. You are smoking
0:33
And for dessert, a Jack-O-D-A-Dirt cupcake. And finally, Melanie makes a treat that's over the top, even for me
0:41
Oh, my God! I've got a girl that I have been so excited about coming into my kitchen with me
0:54
Her name is Melanie Hudson. She's got two kids, and I'm going to show her some recipes that I think her children would love
1:02
And I'm going to start with mini burgers wrapped in puff pastry
1:06
So I'm going to go ahead and flour out my sheet of puff pastry
1:11
You just want to sit this out on your counter and let it thaw a minute so you can unfold it
1:18
Now I'm going to expand it about two inches on the long and the short side
1:25
Okay. Now I'm going to need eight little wraps for our burgers
1:32
So I'm going to come in here and cut this right down the middle. Then I'm going to cut that in half, and this half in half
1:42
And then I'm going to cut it down the center, giving us eight little buns
1:50
All right. Now I'm going to come down here and take just eight ounces of hamburger
1:55
You know, I don't know when I've used just eight ounces of burger for anything, except maybe that last burger I cooked for myself that I ate by myself
2:03
So, I mean, this little bit of burger will go a long way. Now, I'm going to just put a little salt, a little pepper
2:11
two teaspoons of ketchup, and two teaspoons of Dijon mustard. And then I'm going to divide this into eight little mini patties
2:20
So I'm just gonna press that out. The coffees are so tiny, it probably won't take a minute and a half
2:32
And then they're gonna have their 15 to 18 minutes in the oven once we get them in the puff pastry
2:40
All right, so I want... Oh my God, she scared me to death
2:46
Oh my gracious! How are you? Look at the chill bumps on me
2:52
Are you good? Do I sound like that? I'm so excited! Oh, my gosh
2:57
Are you excited? Oh, my lands! Who are you? I can't believe it
3:04
I'm you. Do you like me? You are so pretty. Thank you
3:11
Oh, my gosh. You scared me so bad, didn't you? Are we going to do some cooking
3:16
Do I cackle like that? Oh, my God. I'd say that's like, yes
3:25
Chill, but... What are we making? What are we going to do today
3:33
I'm ready to cook. Are you ready to cook? No, this is Melanie Hudson
3:40
from Saturday Night Live, or is it Paula Deen? No, it's Paula. I'm Paula
3:46
Let's come on in here, and all we're going to do is we're gonna let those sit and we're gonna flip them over
3:53
Yeah! Look at that! Get over there, boy! Yo, is that hot
4:01
Y'all, look at how pretty those are. Aren't they pretty? And then all we're gonna do, y'all
4:08
is we're just gonna stick these on here. Is that right, Paula
4:11
That's exactly right, darling. And you just put them on there? Just put them on there
4:16
All hot and greasy. We don't get rid of the grease. We ain't worrying about our children eating that grease, you know
4:22
No, they need a little bit. You know, she has played a lot of characters on Saturday Night Live, y'all
4:31
But this is the best. Look at you screwing up my burgers, girl
4:35
I don't mean to screw up your burgers. And all you're going to do is we're going to add cheese
4:40
Well, that just sounds good. All right. And we're just going to grate that on there
4:47
Okay. Okay, Paula. Just like so. And you just put that on there, just like that
4:54
Gosh, that Paula's a messy cook. Isn't that pretty, y'all? That is so pretty
4:59
There we go. Yeah! Get on there, boy! So you're just going to keep that cheese coming, just like that
5:08
And you want to get it real real cheesy y because kids love cheese They love cheese They love butter and cheese They do Listen y And we going to roll them up Yes we are
5:21
We're going to see them up. And then press it. Uh-huh. And y'all. Down in here. What a talented girl
5:27
She's a mama. She's a writer. She's an actress. She's, my gosh, what all are you
5:34
I do it all. I do it all. But my favorite thing is to be Paul and me. Y'all
5:40
We're gonna throw these in the oven for 12 to 15 minutes at 400 degrees
5:48
There you go. And then they'll be ready. Well, first, you got to brush them with eggs so they'll get pretty and shiny
5:54
You're getting so excited now, you're forgetting one of your good stats
6:01
All right, let's put these in the oven. Oh, okay, dear. There we go
6:08
I'm spooked. Coming up, y'all, we're making a kid favorite peanut butter and banana bread sandwiches
6:16
Can I help you, help you, help you? And then it's on to ranch-flavored chicken nuggets
6:22
You are smoking. And later, chocolatey dirt cupcakes that are so good, y'all
6:29
Get your anger out, y'all. There you go. Y'all, I'm still trying to settle down
6:37
And I can't believe I'm here in my kitchen on the set of best dishes with one of my favorite girls from Saturday Night Live, Melanie Hudson
6:47
We're making recipes that I think Melanie would love to prepare for her children
6:52
So the first thing we're going to make is a peanut butter and banana finger sandwich
6:57
And you know, except for the five pounds of sugar we're going to put in it, it's really pretty healthy
7:03
That's okay. I'm kidding, it's not five pounds of sugar. All right, so Melanie has mashed us up two ripe bananas, y'all
7:13
So, Dawn Baby, if you would measure me out the dry ingredients
7:17
Okay. That's a cup and a half of all-purpose flour. Okay. And a teaspoon of baking powder, three-fourths of a teaspoon of baking soda
7:25
Okay. And while you're doing that, I'm going to take one stick of butter that's been softened to room temperature
7:31
I'm going to measure out one and a fourth cups of sugar. Do your children love peanut butter
7:36
They love peanut butter. Oh, kids. I mean, you know, I think that must be a birth requirement
7:43
They must like macaroni and cheese and peanut butter. And peanut butter. That would be true
7:47
You can't survive in my house without liking those two things. No. That's for sure
7:51
So you left Saturday Night Live to start your family? I did
7:57
Well, I wanted to get married. That was very important at that time
8:01
I'd had a great run on Saturday Night Live. You dadgum sure did
8:05
You could make me laugh the hardest. Okay, now that is... Show them that look
8:10
The di-delta. It just makes me... It's been a little while, Paula
8:16
It just makes me scream to see that look on her face. She was a..
8:19
Can you do it? I tried. I've been practicing all day. All right, do it for me one time
8:27
Oh, you've got it. You've got... You've reached di-delta, delta, delta, delta sorority
8:32
Can I help you? Can I help you? Can I help you? Can I help you? Can I help you? All right, now I'm gonna add these two eggs. You've got the dry ingredients ready. If you'd measure me out a teaspoon of vanilla. Okay
8:46
And we've got some raisins over here, which is another grapefruit to give your children
8:52
Yes. But wait, I'm putting this in here? Yeah, honey. Just put it in there
8:57
Okay. All right, so I'm gonna measure out a third of a cup of buttermilk
9:03
Okay. Let me do that. Well, I think I got it, honey. I'm used to working like an octopus, you know
9:11
I just pull an extra arm from my chest. This looks grand
9:17
Now, if you just start adding our dry to this. Okay. So, I want you to tell me about Saturday Night Live. Okay
9:24
Let's gossip. Let's do that. We can talk. You know all the characters, don't you
9:29
You know, I do. I have been a huge fan. Well, in my house, I think when I was about nine years old, I had to sneak and watch it
9:37
Because I wasn't really allowed to. Yeah. Just yet. And I would sneak in there and I would watch that show
9:45
I thought that was the best thing I'd ever seen in my life. Did you ever have any idea that you would be one of the stars
9:50
Oh, I never could have imagined in a million years. I mean, yeah
9:55
Do y'all have as much fun on that set as it looks like y'all do
10:01
I think that... Oh, is it stressful? I'm going to say both
10:05
I'm going to say both. You know, it's like, and you're on
10:09
Be funny. We'll add your banana mixture. Okay. There we go
10:20
That's great. Thank you. I've got this mixed up, so if you would
10:26
stir us in about a half a cup of raisins Okay And I get out our loaf pan because we going to make this in a loaf
10:36
Okay. All right. Spray that in. So I'm just going to spray our pan so this will come out nicely for us
10:44
I don't want the children to have crumbled up sandwiches. Yep. All right, so if you would, just pour that into our loaf pan
10:56
Okay. And then we're going to throw this in the oven, Melanie. Okay. Okay, so Melanie
11:01
Yes. If you would put that in the oven, please, dear, for 50 to 60 minutes at 350, y'all. Okay
11:08
While you're doing that, I'm going to be making your children some chicken nuggets
11:15
Oh, good. I've got three boneless breasts. If you would cut these into about three strips, and we're just going to make nuggets
11:24
If you'd just help me do that. Okay. No fingers, nuggets. Nuggets
11:28
Oh, okay. And up here in front of us, I've got some flour
11:32
It doesn't matter. A cup or two, whatever you think you'll need. I'm going to break an egg here
11:36
Okay. If you would measure us, got a cup of panko. Okay
11:40
Right here. All right. Because we're going to do these in steps. As they're set up here
11:48
Okay. So a cup of panko right there. Okay. And we're putting a packet of ranch seasoning
11:56
You know, just the dry packet that you buy from the grocery store
11:59
That's what I like. That you mix with buttermilk or mayonnaise or sour cream
12:03
So during our dry packet, I'm going to add about a half a teaspoon of salt
12:08
And you throw us in a cup of panko, Melanie. Okay. And then I'm going to start running our nuggets through the flour
12:18
Run it through the egg. And then just throw it into the panko
12:26
I'm going to just put these in the fryer basket. Okay. And I'm going to just ease them down into our grease
12:37
We're going to take a little break. By the time we get cleaned up and come back, the nuggets will be ready
12:45
And you don't want to miss a second with this funny lady. Coming up, we're finishing the peanut butter sandwiches
12:52
Look at that adorable sandwich. And then we're going to get started on our sinfully sweet chocolate dirt cupcakes
12:59
And later, Melanie takes dessert to the extreme, y'all. You're not going to believe how good that is
13:11
Whoo! They're ready, honey. I think they are. You are smoking. You can just hang them right there now
13:19
Okay. Y'all, look who is in the kitchen with me. one of my favorite people from Saturday Night Live
13:27
Melanie Hutzel. I can't believe she's here. I want to pinch myself
13:32
Earlier, y'all, Melanie and I made some banana nut bread because we're going to make banana nut bread sandwiches
13:41
We've got a little peanut butter and honey, so you can kind of do as much as you want
13:45
Okay. Just put it on it and let it goo out the sides a little bit, Melanie
13:49
because we want so little peanut butter to peep out. Yeah. Because we're going to just roll the edges in peanuts
13:58
See how we've done. Look at that adorable sandwich. I love that
14:03
It looks great. Isn't that great? Oh, perfect. Okay. Okay, there's two more
14:09
so I'm just going to kind of dunk them over here. Okay. And let's taste this stuff
14:14
Mmm. This is so good. that is so good I love it
14:22
see now that is creative I couldn't have thought of that oh yes you did
14:27
I think my favorite thing though is those chicken nuggets how are those burgers darling
14:32
that's delicious that is so good I think we've hit on some winners for you honey absolutely
14:38
but we've got one other thing to make these children okay it's not over yet
14:45
We've got to make them a dirt cake. Okay. So let me just tell everybody quickly what we're going to do. Okay
14:52
I'm going to measure out two and a quarter cups of all-purpose flour
14:56
Okay. And over there, Melanie, you have an eight-ounce pack of just a sour cream
15:01
Right. Two cups of sugar. A little vanilla. Okay. Three-fourths of a cup of unsweetened cocoa
15:10
A half a teaspoon of bacon powder. one and a half teaspoons of baking soda
15:16
three eggs, a half a teaspoon of salt, one cup of vegetable oil
15:22
and one cup of decaffeinated coffee. All right, then we're just going to beat the heck out of it
15:28
Let's beat it. We got our dirt cake batter. All right, what is it like now
15:32
You're getting back in the work field, aren't you? Getting back in there. Doing a lot more riding and stuff like that, screenwriting
15:39
Riding? I am. I am. That where it at Wow That what you gotta do Wow Really Yeah All right Melanie Our batter is nice and smooth and we ready to get them into our paper muffin tin
15:52
So all we're gonna do is just scoop up our batter, and this will make about 36 cupcakes, y'all
15:59
So enough for the children and a few friends. And we're gonna do that about, you know, two-thirds of the way, maybe
16:07
Okay. You really put your career on hold to have those children, didn't you
16:12
I think the hardest thing for me, as far as career and stuff like that
16:17
is not living close with my own family. Yes. I think it was like about a year and a half ago, I just got really homesick
16:27
I got up at 3 o'clock in the morning, and I turned on the television
16:32
And who was there? You were. You don't mean it. I had slipped in your bedroom, girl
16:38
You had. You had. You kind of helped get rid of that homesickness
16:44
All your recipes, that's just how I grew up. Is that how Mama cooked
16:48
That's how Mama cooked. That's the sweetest thing. That's really true. That is the sweetest thing you could say to me
16:55
You want to bake those cupcakes? Sure. Sounds good. I tell you what, if you'll slip them in, Melanie
17:01
We're going to bake these for 16 to 18 minutes in a 350-degree preheated oven
17:08
Coming up, Melanie reveals her over-the-top creation. Oh, my God! And finally, we're topping off our chocolate dirt cupcakes
17:23
My talented and funny friend, Melanie Hudson, has just one little thing left to show y'all
17:31
Hey, y'all. How are y'all doing? Y'all, I am so excited about this next segment that I'm about to do
17:42
I developed this recipe with my boys, Jamie and Bobby, when they were little
17:50
It's called a chocolate-covered stick of butter popsicle, y'all. It's a popsicle
17:59
It's gonna knock your socks off, y'all. So come on over and let's get started
18:04
All right, now, you're gonna take your stick, and you're gonna stick it in the stick of butter
18:15
And there we go. And I like to start with the chocolate
18:19
and your marshmallow cream. Some milk that has been sweetened and condensed
18:31
some powdered sugar that has not been sifted. You don't want to forget your cherry, y'all
18:40
Oh, my God! Come here, baby. You're not going to believe how good that is
19:01
Y'all, after that, there's only one thing to do. Finish our chocolate dirt cupcakes
19:08
We're going to beat these up. Yes, honey. Just like this. Get your anger out, y'all
19:13
There you go. Yeah, get those sandwich cookies, girl. There we go
19:19
We did it up good, honey. Now, we've got a chocolate icing because we made dirt cupcakes for her children
19:27
Yes, we did. Oh, so we've got a chocolate frosting. Careful with that
19:32
Hi, Paula. Let's just slap that stuff on there. Slap it on
19:38
Slap it on. They can do that themselves. Yes. Can't they? Yeah
19:42
Because they like to be a part of it, don't they? They do. What we got over here
19:47
We got worms. This looks good to me. Maybe we got to put dirt first. Oh, we got to do the dirt
19:51
We got to scoop the dirt. You can't forget the dirt for the dirt cakes, can you
19:58
No, look at that dirt. Yeah. And that stick that worm on it. There we go
20:03
Look at that. Non, non, non, non. Oh, my gosh. Look at that
20:13
Look at that. Look at that dirt cupcake. Isn't that beautiful? Isn't that beautiful
20:17
Isn't that gorgeous? Mmm. Yum. I so enjoyed being with you today
20:29
I'm not a very neat eater, y'all. It's been an absolute honor being with you today
20:36
I love you like a sister. I love you too, girl. You're so funny
20:42
Y'all, y'all, we wish you love. We wish you love. And best dishes
20:48
And best dishes from our kitchen to yours. From our kitchen to yours
20:54
Is that gummit
