Let's talk about chicken
0:05
This is something that I've got tons of experience with growing up in the South and being in the restaurant business with my family for the past 25 years
0:12
So I want to talk to you today about how to make a good selection of chicken
0:16
when you're in the grocery store. I've got my favorite brands, and I'm sure that you do too
0:20
But some of the things that you might want to look for on your packaging are a company that uses no antibiotics ever with their chicken
0:27
and also a company that feeds a vegetarian diet to their chicken
0:31
That's something this particular producer does. And also, this is the only brand that is American Humane Society certified
0:39
It's the only one of its kind. So this is my chicken of choice. But let's talk about the preparation of the chicken
0:45
If you can, in order to not cross-contaminate in your kitchen, try to always cut your chicken in the packaging that it comes in
0:52
A company like the one that I have here on my left Also, bathes this chicken in a salt bath, so it's bloodless when it comes in the package
1:00
It's something that doesn't have to be washed. And always remember that your nose knows
1:04
So if you open up a package of chicken and it smells like anything at all
1:08
return it to the grocery store. Don't use it. And remember, too, that with chicken, you're always cooking to a temperature
1:13
That's the only way to know for sure that it's done. So I like 165 degrees is good for me, 170 degrees
1:21
the purveyor that I've got in front of me says 180 degrees
1:25
So I think as long as you're inside that range, you're good to go. So find a purveyor that you like
1:29
Always cook your bird to temperature, and you'll have beautiful birds just like what you see in front of me
1:34
And if you like chicken and you like chicken recipes, stick with the Paula Deen Network
1:39
because we've got tons of them right here for you. Thank you
