The first thing that you want to do is possibly use parchment paper

It'll keep your pans clean for your next batch. And I have just found, regardless of whether the recipe says ungreased

I always lightly grease my parchment paper just ever so lightly, just to ensure that that cookie's going to come off

And now, let's talk about the utensil that you're going to use to scoop up your cookies with

I love using ice cream scoops. and they come in different sizes

from small right on up to like cat head size. So when you baking your cookies it so important that each cookie be the same size because if they not the larger ones will be raw and the smaller ones will be burned

So if you like big cookies, make one sheet using your larger ice cream scoop

If you like smaller cookies, crispier cookies, use the smaller one. But just make sure that everyone on that particular cookie sheet
