How to Cook a Perfectly Fried Egg

So, I love eggs, and one of the most tricky things to do is cook a perfectly fried egg

like diner style. So today I'm going to show you how to do exactly that

And you start by heating your pan, a nonstick skillet, over low heat for about five minutes

so your pan becomes receptive to the egg, so to speak. And then we're going to add two tablespoons of vegetable oil

Turn our heat up to about medium high and get it shimmering

So while we're waiting on our vegetable oil to shimmer, I'm going to go ahead and crack the eggs. And this is a good tip, too

Crack your eggs into side bowls. The trick is not breaking the yolk while you're doing this

And always crack your eggs on a flat surface. You see a lot of people cracking them on the side of the pan

and that's a sure way to break the yolk. Crack it on a flat, hard surface. All right, voila, we got two

We're just about at a nice shimmer there, so I'm going to add a small pat of butter to the oil

because you need some fat to fry a good egg. We're going to coat the pan with that

In go the eggs. And a little something unexpected. we gonna use a cover And the reason for the cover is that the whites and the yolks cook at different temperatures so it can be really difficult to get a nice crispy brown egg white

and have your yolk be the way that you want it. So cook for about a minute

We're going to remove it from the heat and let it sit in the skillet for another 30, 45 seconds

60 seconds, depending on how you like your yolks. I don't love mine really runny

I like them to set a little bit, So I'm going to let these set for an extra 60 seconds once I pull it from the heat

Mmm, they look and smell good already. All right, so they've cooked for about a minute

We're going to remove them from the heat. Let them sit for an extra 60 seconds

And when these things slide out of that pan, you're not going to believe how great they taste
