Continuing on with tips and substitutes for the holidays, let's talk about baking those wonderful cakes

I've got my cake layers here evenly divided. In order to ensure that each layer is the same size, I measure my batter out so that when I cut them, all of my layers are the identical same size

Now, after you pour your batter up in your pan, you can look over here and you can see these bubbles that have come to the top in our batter

If you have a cake full of bubbles, when you cut it, you'll see empty holes in your cake

And you don't necessarily want that. So my mother and grandmother always taught me to drop my cake pans a few times on the counter

and it will bring those air bubbles to the top. So just a few good bangs on the counter will take care of those air bubbles

Now, how do you know when your cake is done? To me, the best way is using a toothpick

If that toothpick comes out clean, then it's done. And you can also see the way they pull away from the pan

If your cake is not done, the cake sides will still be in your pan

You can also touch the center of it. And if it kind of comes back for you, then your cake is done
