Bobby and I are in here, y'all
0:02
We're getting pure silly. Because we're starting off today, y'all, with the most gigantic grilled tilapia po' boy sandwich
0:08
with Bobby's homemade tartar sauce. Then it's a blast from my children's past
0:14
a corn and carrot salad with the sweetest golden raisins. These are beautiful raisins
0:19
I like these. I love golden raisins. I do too. Next, two of my favorite ingredients come together
0:25
in Bobby's unbelievable sausage potato salad. This is going to be tea-totally delicious
0:32
And finally, we're making oatmeal raisin sandwich cookies that's almost as cute as Bobby in an apron
0:39
Bobby! How did this happen? You're beautiful. Good morning, y'all
0:48
We're thrilled to be here in the kitchen. I always love starting my day off with my son, Bobby
0:53
who's got the most beautiful, longest eyelashes. So, I understand that we're doing something
1:00
We're going to do something different. We're going to do fish. You always do fish, son
1:04
I know I do, but it's so good. It's so reliable. I know, I know. So where are we going to start, son, for these delicious grilled tilapia po' boys
1:12
I am going to do the fish, and I would like for you to make a tartar sauce for me
1:16
Okie doke. Because I know that you know that. So you've got tilapia up there. Right
1:19
Tilapia, these are like seven ounce pieces of fish. First, I'm going to get the fish ready
1:23
Okay. And so to start, I'm just going to brush them with a little bit of olive oil on both sides
1:27
I'm going to turn these over in just a sec. Sprinkle a little bit of salt and pepper on. A little more oil
1:34
Say it for me. A little more oil. There you go. Tilapia has absolutely no fat in it
1:40
Almost none. So that'll help keep it from sticking when we put it on our griddle
1:45
I love tilapia because it's so easy. I know. It's so easy to prepare. It's not, you know, there's nothing complicated about it
1:50
So tell me, son, what goes in this tartar sauce? A half cup of mayonnaise to start and about a quarter teaspoon of garlic powder, please
1:57
Okie doke. We're going to squeeze a tablespoon and a half of this nice, fresh, fat lemon
2:04
Okie doke. So I'm just going to eyeball that. There's a big, fat one
2:10
Feel how soft. I love lemons like that, where you know you're going to get a lot of love out of them
2:17
I love this coarse sea salt, too. How much pickles? Two tablespoons each of red onion and sweet pickles
2:24
I have found that a lot of folks here in Savannah love the sweet pickles
2:30
So I see that you're kind of following the Southern Savannah tradition. I like a sweet pickle in a tartar sauce
2:36
This is kind of standard. And Bobby, I'm not sure if you knew this, but this sandwich got the name Pull Boy from like what we call curb stores
2:47
Mm-hmm. And the guys would come in from work on their lunch break, and they didn't have much money
2:55
Well, the owner of this particular store said, I want to make something that these pool boys can afford to get for lunch
3:03
So they would pile this crusty French bread up with these crawfish and shrimp
3:08
and the pool boys could afford to have lunch, too. I like it. So if you'll pass me your fish
3:14
Are we hot? Yeah, it feels warm. Now, I'm going to give this grill just a quick spray
3:23
Oh, I love tilapia, Bobby. Me too. Did you add the salt and pepper yet, son
3:35
Here, let me. Taste it. Yeah, it could stand a little salt and pepper, I think
3:41
All right. Salt and pepper never hurts a thing. All right, so, Bobby, your fish is looking good, son
3:47
When the tartar sauce is made, I'm going to start working on the sweet corn and carrot salad
3:55
Sweet little gherkin. I like them. All right, well, let me help you. I'll do the carrots for you
3:59
Okay. Now, this is a real easy salad. And when you and Jamie were little boys, I used to make carrot and raisin salad all the time
4:08
because I felt like it was something that was really good for them. This one's been jazzed up a little bit
4:13
and children still continue to love it because it's got sweet corn in it
4:19
Did I eat it when I was a kid? Yes. I mean, from a young kid? Yes, yes
4:24
Because I love it now. I'm using, y'all, a frozen corn. So one cup into our bowl
4:30
And by the time I get finished, I'm going to have about two cups of carrots here, Greg. Bobby, I'm going to check your fish
4:36
Yeah, that looks good. I'm just going to give these a quick turn, Bobby
4:41
because I don't want them to overcook. Yeah, they're only a couple minutes aside
4:45
Mm-hmm. I'm going to put about a tablespoon of lemon juice in here
4:50
and I'm just going to eyeball that. A little salt. A little pepper
4:58
Two tablespoons of mayonnaise. I got you just about the right amount of carrots here
5:05
Okie dokes. And I'm going to chop you up some parsley. Okay, great. About a tablespoon of olive oil You know children love corn don they You know I always have Yeah I don think that something you really have to You don have to wrestle them to eat that No
5:19
I think every kid likes it. One night, I think Jamie was out of town working
5:24
and so Brooke and Jack were on their own, so I called and asked them to come over for supper
5:30
Well, Jack was really just starting to eat table foods, and I picked up some fresh corn from the grocery store
5:38
And if he was not the cutest thing. Did he pick it up and..
5:42
He picked it up and ate every kernel off that corn. Okay, I'll just add our corn mixture to your carrots, Bobby
5:53
These are beautiful raisins. I like these. I love golden raisins. I do too. So about a half cup
5:57
Yeah, about a half a cup. And just a quick tip, y'all, in case you've gone to your pantry and gotten your raisins
6:04
and they're real, real dried and hard, just put them in a cup of, like, boiling water
6:09
They'll soften up real nicely. So don't give up on a dried raisin
6:15
We are still good. And parsley. And just fold that all together, son
6:22
All right. Isn't that pretty? It's certainly colorful. All right, so, y'all, we've almost got our meal put together
6:29
Don't go anywhere because the tilapia's almost ready. Ooh, I'm so ready for a po' boy
6:36
Love it. Coming up next, no matter how you cut it, this salad is one of my favorites
6:44
I'll take a potato rip. Whole. Cream. Cream. Smashed. Then we're putting together our po' boy sandwiches that are fit for a king
6:54
Mm-mm, mm-mm-mm-mm. Them po' boys were lucky, weren't they? Very good. And later, you're not gonna believe what we do to these oatmeal cookies
7:06
Bobby and I are back at the stove. I've got our French bread on the grill, waiting to put our po'boys together
7:14
We've got our fish down there and our tartar sauce. So the next thing we're gonna make, it's Bobby's sausage potato salad, y'all
7:22
One of our favorites. All right, so I'm gonna take a half a pound of kielbasa
7:27
I'm just going to slice this in little maybe quarter of an inch rings
7:32
This is a little different than the potato salad that you made for Jamie and me growing up
7:36
which I really, really grew to love. But, you know, we just wanted to shake it up and make it a little bit different
7:41
Well, I love it, Bobby. You know, your great-grandmother used to make shrimp potato salad
7:47
Mm-hmm. And I love the meat in with the potatoes. So I think this is going to be teetotally delicious
7:55
Well, it is. I've made it before with Jamie, and it's real good. You know, like I said, it's just a little something different
8:00
I'm going to chop up a stalk of celery and two green onions. This is so funny, y'all
8:05
I had to hide the celery and the onions when they were growing up that I put in the potato salad
8:10
because if they thought they were eating celery or onions, they wouldn't eat it
8:14
So here he is voluntarily now putting that celery in his recipe
8:19
That's right. I didn't start eating the green stuff until I was about 30. I'll just start cooking our sausage in a little oil, and then..
8:27
I'm going to dice up one clove of garlic. Okay. I'm going to start cubing up some of these red potatoes
8:33
I've got about a pound of red potatoes here boiled. Okay. And he has boiled those y'all skin on
8:38
You know, and I learned to like that through you, too. I like to see my skin on the..
8:42
I said it worked out well because it was kind of a lazy man's way of cooking a potato
8:48
You can't stand peeling potatoes. So it really worked for me because that's where your color and your nutrients come from
8:56
A lot of vitamins in the skin. The nutrient is in the skin
9:00
So that's what I tell myself. All right, I want to make sure that this garlic is minced up as finely as I can get it
9:08
Because this is going into the dressing. All right, that's just one clove of garlic
9:13
Y'all, that was a big garlic. Love those potatoes. All right, so here's just a bowl, Bobby, to mix our potato salad up in
9:23
Now let's go ahead and make our dressing in this. Okay. And I'm turning off our sausage
9:28
What about the potato salad? Oh, sorry, son. That's all right, that's all right
9:32
I just want to go ahead and get this in a bowl. I'm living in Polo World. And I'll start working on your sauce
9:38
We're going to use three tablespoons of olive oil. This is an easy sauce
9:43
Very easy. Son. But with a lot of flavor. Ooh, yeah. One tablespoon of Tangy Dijon
9:51
We're going to use one and a half tablespoons of red wine vinegar. Okay. Just going to whisk that together
9:59
And once we get all of our dry ingredients put together, we'll just pour it right on top. Okay. And we'll just add a little salt and pepper to our potatoes before we add our dressing
10:07
All right. So in goes, here, Bobby, you want to take your spatula. There's not a lot of grease, but I'm going to throw this into the colander. Okay
10:16
Just to drain it a little bit. Yeah, just to make sure it's well drained
10:21
Get this all mixed together and I'm gonna try to fold this so I don rip these potatoes up too good So you don kill your potatoes up I don care I take a potato ripped whole Cream Cream smashed Son let me find you a bigger bowl I can hardly stand it
10:35
Let's put this here. This is the pot that we boiled the potatoes in
10:40
So let's just mix it, and then we'll throw it back in the bowl. How's that? That's good
10:45
There we go. That looks great. Okay, perfect. That looks good. Looks delicious
10:52
All right. All right, pile it back in your bowl. Okay. Because that bowl is very pretty
10:58
Here, son, yeah. There you go. Mmm. Look at that sausage. So now we're ready to move over and put those pool boys together
11:11
I like a lot of tartar sauce. Yeah, me too. Me too. Yes
11:15
We made a pile of tartar sauce, too. This is going to be almost too big to eat, y'all
11:22
It's gonna be awesome. Oh, it's falling apart, it's so flaky. Yes, I love it. Perfect
11:28
Want the rest of it? No, that's good. Okay. Look at that
11:34
Listen to that crunch in y'all. I do. You're not gonna cut your sandwich
11:47
I'm gonna cut it all right. All right, to you. To you, Bob. Mm-hmm
11:52
Mm. Mm, mm, mm, mm, mm. Mm
12:03
Them po' boys were lucky, weren't they? Very good. Golly. You know, tastes like that was the world, too
12:17
Oh. That is super. Mm. Wow, we did a good job, huh
12:23
And this is nice and refreshing. Oh, definitely. Definitely. Mmm
12:35
I love it! Coming up, I bet you can't guess my favorite ingredient, y'all, that goes into these cookies
12:42
What might be the first ingredient that I start with? Two sticks of butter! There you go
12:45
And later, we got some unbelievable filling for these cookie sandwiches. Is the devil not in this kitchen today
12:59
Y'all, when I was a typical housewife, you know, a stay-at-home mother
13:04
I was a cookie-making mama, wasn't I? You were indeed. I don't know if I was making them for y'all or for me, though
13:11
You were making them for you. A good chance I was, y'all
13:15
I love cookies. And we're going to finish up today with these amazing, fluffy oatmeal raisin sandwich cookies
13:24
Is the devil not in this kitchen today? I think she may be
13:29
She may be, along with all the dogs. So we're going to take these oatmeal raisin cookies
13:35
What might be the first ingredient that I start with? Two sticks of butter. There you go
13:39
One and a fourth cups of packed light brown sugar. There's the first
13:46
All right, one and a fourth cup. Then we've got one egg. And then we've..
13:51
It sounds like a zoo in here. And he's going to cream that real well
13:58
And then I'm going to add your milk. I'm going to need for you to help me add some ingredients to this
14:04
Okay, I will. You just beat the heck out of that. We want to cream our butter
14:11
Oh, you're getting messed up, son. Got brown sugar all over me. That's all right. One of Bobby's biggest pet peeves, y'all, is getting stuff on his clothes
14:19
Is my mama speaking for me? I have actually seen Bobby want to get up and leave a meal because he got something on him
14:31
A little tighter, Mama. Tighter? I love television. I love doing television with my mom
14:38
There's nothing embarrassing about it at all. You're adorable. I wish it looked that good on me
14:44
It's awesome. Bobby, you look beautiful, son. All right, mama. Thank you. I appreciate it
14:48
Between your apron and your eyelashes, I am so jealous. All right, are you going to help me here
14:57
Yes. Are we making something besides me blush? We're making you blush
15:03
All right. Okay. Quarter cup of milk. Yes. And then one egg, please. And one egg
15:08
So Bobby, fry and dry ingredients for our cookie. I'm using a half a teaspoon of bacon soda
15:16
Not powder, but soda. Half a teaspoon of cinnamon. A half a teaspoon of salt
15:24
And a quarter of a teaspoon of nutmeg. Alright, now over here, I'm gonna put in two cups of all-purpose flour
15:36
I'm done with the apron. I appreciate it Okay But look at you how clean you are That right So I just going to fluff those ingredients together
15:52
All right, so we're just going to stir in, Bobby, our dry ingredients into our wet
15:58
All right. Okay. So, half a cup of raisins, and then you're going to need two and a half cups of rolled oats
16:12
All right. And we're going to use the quick cooking that cooks in like five minutes
16:16
You don't want to use the long cooking, and you certainly don't want to use instant
16:20
Now, I'm a big nut. Yeah. Don't you say a word. I know it's true, though
16:27
I am a big nut lover. Now, ordinarily, I would put nuts in at this time
16:34
but this particular recipe does not call for nuts. So, but I've got an idea
16:40
All right, what is it? And we're going to get our nuts mixed in with this
16:44
but we're going to do it when we get to the sandwich part. Okay, son, you've done a great job on that
16:49
Yeah, I think that's together. So bring this down here, and we're going to put these on our cookie sheet
16:56
We want to use like two tablespoons. of cookie dough. These are perfect, Bobby
17:07
But just to make our job a little bit cleaner, we are going to put a silicone mat down in there
17:14
and that makes them not stick, and it just makes cleanup easy, easy, easy
17:21
And Bobby has done this just perfectly. Do you see the way he's taken his scooper
17:26
and he's kind of pressed them down to give them a head start on flattening out
17:32
You're going to finish these up, Mom, and I'm going to put that first tray in the oven. Okay, that sounds great, son
17:37
Excuse me. All righty. So in they go 350 for about 11 minutes, right
17:42
Yeah, 11 minutes. And these look perfectly out of this world, y'all
17:49
There's your other pan. All right. And in 11 minutes, we're going to have some fabulous cookies
17:56
Then this show is gonna turn into an R-rated show because we're gonna do something obscene
18:05
We're gonna make sandwiches out of these oatmeal cookies, y'all. With fluff
18:09
Up next, they might have to bring us in for making these dangerously delicious cookie sandwiches
18:16
Here you go. You can put me in my cancuffs and tote me off. What are you talking about
18:20
I should be arrested. Bobby and I are in here, y'all. We're getting pure silly
18:29
These oatmeal sandwich cookies that we're about to make. They look beautiful
18:33
So what do you send us over the top? Perfect size. Look at our cookies, y'all
18:37
How beautiful are those? They look great. Yeah, if you'd chop those nuts for me, Bobby
18:43
So we've got a chocolate sauce and we've got a fluffy marshmallow
18:49
Now, on this side, I'm going to take that chocolate, and I'm just going to put all in that cookie on that side
18:58
Let's do a little bit more. You know, I meet more people that tell me they watch your show
19:05
while they're on the treadmill, and I just wonder why. Why do you think that is? You know, and I always get a big..
19:10
I watch your mama's show while I'm working out. Uh-huh. I always get a big kick out of that because I say, you know
19:16
So that's where you should watch Best Dishes is from the treadmill
19:21
Remember, son, how I told you I just love nuts? Yes, ma'am
19:26
I've got a mixture of chopped nuts here. So. Well, here, you want some to sprinkle
19:31
Oh, wow. Oh, that's a good idea. Isn't that a great idea
19:36
That is a good idea. I like that. Look at that. Look at that. Good grief
19:41
Give me a bite. Take it. Take it. Look at that I should be arrested
19:52
Oh yeah you're right Alright my nuts over here Bobby has almonds
19:57
And walnuts And pecans But I know how you feel Just about pecans
20:04
Yeah and I like mine real fine Okay so I'm gonna just
20:09
Put the center to your cookie together And then you can dip yours
20:13
In your pecans That is awesome All right, there you go. Look at this
20:21
This is sickening. Sickening. I'm on my way to the gym right now
20:26
Look, look, look. Mmm. Mmm. All right. Is that not delicious
20:36
Do yourself a favor and go make some of these right now. And listen, y'all. Right now
20:39
You can use any kind of cookie dough you want to. I don't think there's anything left to say, Bobby. Nope
20:45
other than we send y'all loving best dishes. From my mess to yours
20:53
From my kitchen to yours. See y'all next time. Bye, y'all
