0:00
- Hey, friends, it's nighttime.
0:04
Is it supper time or bedtime, Eddie?
0:07
Anyway, it's getting late,
0:08
but I can't quit thinking
0:11
about trying to help my friends out there
0:14
with recipes for Thanksgiving.
0:16
So I just got my broccoli casserole on my mind.
0:20
You know, this is what we serve
0:21
at Paula Deen's Family Kitchen
0:24
and the Lady and Sons.
0:28
You know, prep, prep, prep is the best thing
0:32
to make your cooking so easy.
0:36
So there's one thing though in this recipe,
0:39
if you go down and go to the recipe, this won't be in there.
0:44
I have one cup of onions,
0:49
that's been sauteed in a little butter.
0:55
And to me this is, I do this every time
0:58
with my squash casseroles, my broccoli casseroles,
1:02
anything like that, because to me that onion
1:06
that's been cooked in that butter is,
1:11
it's just much needed to me.
1:14
So just know to add that,
1:16
even though you don't see it in the recipe.
1:19
All right, so I've got one can of mushroom soup.
1:24
Now if you are a canned soup snob,
1:30
you can always make your own cream of mushroom soup.
1:34
I love my homemade mushroom soup,
1:36
but you know, for a casserole,
1:39
this just makes it so easy.
1:43
So I'm just gonna mix these things together.
1:47
So I have cracker crumbs, cheese,
1:52
cream of mushroom soup, mayonnaise, and broccoli.
1:56
Now let's talk about the mayonnaise.
1:59
If you're not a real mayonnaise person,
2:02
substitute that with sour cream.
2:05
Or you could do half mayonnaise, half sour cream.
2:09
So that is strictly up to you.
2:11
And this recipe calls for two 10 ounce boxes
2:14
of frozen broccoli that you cook and drain real well.
2:19
Well, I really like using fresh broccoli.
2:24
So that's what I did.
2:25
I flowered the amount of broccoli
2:30
that I thought would equal two 10 ounce packages,
2:36
and I drained it real good,
2:39
and I squeezed the juice out of it
2:42
with my, what do you call that, Eddie?
2:45
Is it a pestle or is it just a?
2:50
- A masher, that sounds good to me.
2:53
That's my kind of language.
2:55
All right, now I'm gonna add my egg to my wet mixture.
3:10
I'm gonna add my mayonnaise,
3:15
and like I said, you can't go wrong.
3:19
Sour cream would just make it a little bit lighter
3:23
than the mayonnaise, so choose either one.
3:28
It's not gonna hurt your recipe.
3:30
It'll still be delicious.
3:34
Okay, now our cheese,
3:39
and that was, I'm gonna take some of that out.
3:43
It calls for a cup of cheese
3:46
in with your wet sauce,
3:51
but I'm probably gonna save some and put it on top.
3:56
All right, I didn't get out a dish for us to make this in.
4:03
All right, I'm gonna give this a little spray
4:07
just in case it wants to stick.
4:12
And this looks like a lot of wet ingredients.
4:15
So we may have enough
4:17
that we can actually get two casseroles out of this.
4:22
So I'm gonna get another bowl,
4:26
and I'm gonna put my broccoli in.
4:32
I pounded it in there good with our masher.
4:43
Okay, I mean, I got the moisture out of it, which is good.
4:55
So I'm going to slowly mix this together.
5:19
Yeah, I think I can get two casseroles out of this, Eddie,
5:29
Because I don't want it to be all.
5:34
I think this is perfect.
5:37
So I'll cook out, I'll pull out my other head
5:41
of broccoli, and I'll make it twice, which is wonderful.
5:48
So these are judgment calls that you have to make yourself.
6:09
You know, formulating a cookbook I found was the hardest,
6:15
hardest part of writing cookbooks
6:19
because I'm not exactly a recipe follower.
6:25
So you know, I do it by looks, touch,
6:33
and sometimes you just have to make a judgment call.
6:41
All right, so I'm gonna put this cheese on top.
6:46
We do want it nice and cheesy.
6:51
And now I'm gonna take my breadcrumbs that I did
6:55
with my masher, and I have some melted butter.
7:01
A lot of recipes will tell you top your casseroles
7:04
with the crushed crackers
7:06
and drizzle it evenly over with melted butter.
7:14
So this is how I make sure
7:19
that all my crackers are buttered.
7:22
So I crush them, melt me a little butter,
7:28
and toss those crumbs all in there.
7:33
And that was probably two tablespoons of butter
7:38
for that many crackers.
7:43
It's so much easier doing it that way.
7:47
And this will be ready in about 25 minutes.
7:55
And don't you think our broccoli casserole
7:57
is really one of the favorites at the restaurant, Eddie?
8:01
- [Eddie] Oh yeah, definitely. - Yeah.
8:03
Okie-doke, so there we go.
8:08
So I've got the oven preheated, 350 degrees for 25 minutes.
8:17
Look at that broccoli casserole.
8:26
Now I may have wished that I had gone ahead
8:30
and added all of the wet ingredients to the broccoli,
8:33
but I don't know, we'll just have to see,
8:37
depending on how wet you like yours.
8:39
And that looks very, very good.
8:43
Can you see in there, Eddie?
8:46
But if you want more cream in yours,
8:50
then I would say absolutely add
8:53
all of your wet ingredients to it.
9:07
I do think that the broccoli casserole
9:12
at Paula Deen's Family Kitchen
9:16
and the Lady and Son's, I think it is definitely more,
9:19
has more of your wet ingredients in it,
9:23
don't you think, Eddie?
9:24
- [Eddie] Yeah, and I, you know,
9:26
and I think they may use a bigger floret I'm guessing.
9:39
It is so good, and for my broccoli,
9:42
I strictly cut just the floret part off.
9:48
I didn't use any stalk or anything.
9:58
That's very good, y'all.
10:04
Put all the creamy stuff in it.
10:14
I think you're definitely gonna want that one
10:16
on the Thanksgiving table.
10:18
But in the next video I have
10:22
I am sharing a recipe with y'all of an old standard recipe
10:27
that has been around a hundred times.
10:31
And I think all of you out there will remember
10:34
your mama making this
10:36
and putting it on your Thanksgiving table.
10:38
So we'll see you in the next video.
10:48
Hey, y'all, it's Paula Deen.
