0:00
- Hey everybody, it's Bobby here,
0:01
and I've got another great recipe for you today.
0:05
Something that I really love, mushrooms of all sorts.
0:09
Not so much raw, but I love 'em when they're cooked.
0:11
And today we're gonna do a prosciutto stuffed mushroom.
0:15
It's really simple and I think you're gonna like it.
0:17
We're gonna start by melting some butter in a skillet,
0:21
which is happening as we speak.
0:23
And to that, I'm gonna add my prosciutto.
0:26
And listen, a little tip for you.
0:28
Prosciutto can be difficult to chop
0:31
with a knife on a cutting board.
0:33
So what I did was I put this in the food processor.
0:36
So lickety split, prosciutto was all ready.
0:40
So you might remember that the next time
0:43
or when you make this recipe.
0:45
So I'm gonna add the prosciutto to my melted butter.
0:52
Not every day prosciutto, prosciutto, prosciutto,
0:56
pronounce it properly.
1:02
Just stir that in with my butter just a little bit.
1:06
Got a nice hot skillet going.
1:09
Now to that, we're gonna add some chives
1:15
And my mushrooms, take a look here.
1:18
I pulled the stems off, cleaned them up,
1:21
chopped up the stems.
1:25
These are the stems in with the prosciutto,
1:27
the butter, and the chives.
1:30
And we'll cook this for about five minutes.
1:32
So let's take our first break and I'll come right back.
1:35
I've cooked my prosciutto, butter,
1:37
and chive mix over medium heat
1:39
for about five or six minutes.
1:41
And oh boy, does it smells so good.
1:43
I mean, you could just give me a spoon at this point
1:45
and I could embarrass myself
1:47
with just the prosciutto butter.
1:49
It smells and looks wonderful.
1:50
Ed, I don't know if you can get a shot of that,
1:56
Okay, so I've reduced the heat to low,
1:59
and to that I'm gonna add some softened cream cheese.
2:13
I'm gonna do a tablespoon, sorry everybody, of Dijon.
2:21
Which lends to just about anything
2:26
from tuna fish to prosciutto.
2:29
Dijon mustard is your friend.
2:32
Okay, I'm gonna stir all this together again.
2:34
We're on low, and these will be the ingredients
2:38
that we'll stuff our mushroom caps with.
2:41
The cream cheese is softened,
2:42
but it's gonna take a few minutes for it to cooperate
2:50
So let's take one more break and we'll come back
2:51
when we get everything fully incorporated.
2:55
This looks and smells so great.
2:58
And again, this is a prosciutto
3:00
cream cheese stuffed mushroom.
3:02
So we've made our stuffing, our filling here.
3:04
We're gonna fill our mushrooms
3:06
and we're gonna bake them in the oven at 350
3:08
for about 20 minutes.
3:10
So I've turned everything down to low
3:11
to get the cream cheese incorporated.
3:13
Now I'm just gonna go ahead and turn it off.
3:14
Everything's gonna be nice and warm here,
3:17
so don't burn your fingers.
3:19
And if you can see this, this really looks like,
3:23
it looks like the old chipped beef
3:25
my mom and dad used to make for me when I was a kid,
3:27
chipped beef on toast.
3:30
And there was a really crass, inappropriate name for it
3:32
that might be regional,
3:34
but it was SOS were the initials of the meal.
3:40
So that's what this looks like.
3:42
But this is a step above
3:43
because it's beautiful prosciutto with cream cheese.
3:49
So I'll show you a couple of these
3:51
and then I'll spare you the rest.
3:53
We'll take a little break and we'll pop 'em in the oven.
3:57
So while I fill these mushrooms,
3:59
you go grab a glass of water,
4:00
take a break, whatever you need.
4:02
I'll see you back here in just a minute, okay.
4:04
Our stuffed mushrooms look great,
4:06
and this looks much fancier
4:07
and more difficult than it actually is.
4:10
We got butter, prosciutto, cream cheese,
4:13
chives, lemon zest, tarragon.
4:17
We've melted it all together, we stuffed our mushroom.
4:20
Oh, and don't forget the mushroom stems.
4:22
And we stuffed our mushrooms with that concoction.
4:25
It looks and smells wonderful.
4:27
Now into the oven at 350 for about 20 minutes.
4:30
So I'll see you when they come out.
4:33
Now that's what I call an hors d'oeuvre.
4:35
I wonder what you'd pay for this in a restaurant.
4:39
I'll have the stuffed mushrooms please.
4:42
- [Ed] Well there are some restaurants.
4:43
- We are right in the swing of Thanksgiving
4:46
and Christmas and New Year's.
4:49
So for your New Year's party right there, everybody.
4:53
These are a great hors d'oeuvre for your guests.
5:00
They just came outta the oven, so if I burn myself,
5:02
I'm gonna pretend that I did not.
5:07
Boy does that look good.
5:16
- Had to get rid of the fuzz.
5:29
The prosciutto, the cream cheese.
5:34
Umami is a fancy word.
5:36
I hate to use it, but umami flavor, you know what I mean?
5:38
Super, super savory and just delicious.
5:42
How many could I eat?
5:45
So this will be really popular for your New Year's party
5:48
or your Christmas party.
5:49
Wherever you need hors d'oeuvres,
5:51
this one will fit the bill.
5:53
So try our prosciutto stuffed mushrooms
5:57
Until next time, bye y'all.
