- Hey, I'm Jamie Deen, back here in Mama's Kitchen.
0:02
You know, Thanksgiving is coming.
0:04
So, what are we gonna do for Thanksgiving this year?
0:07
We're gonna have turkey, we're gonna have ham,
0:09
we're gonna do all those things.
0:10
How about a new idea for a side dish that's super easy,
0:13
you know it's delicious.
0:15
And it's different than maybe one you've ever done before.
0:18
We're gonna do scalloped potatoes,
0:20
we're gonna layer 'em in this cast iron skillet.
0:22
Now this recipe, is from mom's magazine.
0:25
And right now, for the first time ever,
0:27
I don't know how long mom's had her magazine,
0:29
we're running 70% off a one-year subscription.
0:32
I tell y'all, I go to the magazine for recipes
0:35
almost as much as I go to our cookbooks
0:37
because it's seasonal,
0:39
and it's always full of delicious recipes.
0:41
So, that's where we're going today, mom's magazine.
0:45
So look, I've got a cast iron skillet,
0:47
and this is a 10-inch pan here.
0:49
I've got three tablespoons of butter
0:51
that I've melted in here and I've turned the heat off.
0:54
And Theresa has run our potatoes,
0:56
these are Yukon Gold potatoes
0:58
that she's run through the mandolin,
0:59
get 'em nice and thin.
1:01
So what I'm gonna do is overlap these,
1:05
in our melted butter that we have.
1:06
Now, this is a process that's gonna take
1:08
a little bit of time,
1:09
but who doesn't love scalloped potatoes?
1:12
And I just did a recipe at the house.
1:14
I don't really have a recipe for it, I just made it up,
1:17
'cause my boys wanted to try it.
1:19
And I sweated over that potato casserole
1:22
and I made enough for 20 people.
1:25
And I wound up having to give something to the dogs
1:27
'cause we couldn't eat it all.
1:28
This is a really neat way to do it,
1:32
'cause if you only have four or five people in your family,
1:35
don't use as many potatoes.
1:36
If you're having bigger groups,
1:37
you could do multiple of these.
1:39
You see how we're kind of overlapping them?
1:42
This layer is gonna be so pretty when we scoop it out.
1:46
So, on top of this, we're gonna add...
1:49
We're gonna salt each layer and I'm gonna pepper each layer.
1:54
Now if y'all followed me in my recipes long enough,
1:57
you know that I love to season as I go.
2:01
If I'm building a soup or a chili,
2:03
(knife clanks) every section
2:05
gets their own love because it's important.
2:07
Same thing here, salt, pepper, rosemary.
2:11
I'm gonna start all over again and layer on top of this.
2:17
And each layer is gonna get
2:18
its own salt, pepper, and rosemary.
2:20
So, don't get too heavy with your salt
2:22
'cause this is gonna be every layer.
2:25
But y'all know potatoes absorb all that salt, anyway.
2:29
That's why when you're making potato salad
2:31
and you boil your potatoes,
2:32
it's important to salt your water.
2:35
'Cause once your potatoes are done,
2:36
it's hard to get that salt into 'em.
2:38
So we wanna make sure we layer every potato perfect.
2:43
It gets their own rosemary and salt and pepper.
2:48
Y'all wanna stick around for another 20 minutes
2:50
while I finish this or should we fast forward
2:51
and I see you all in just a second.
2:53
Salt, pepper, rosemary.
2:56
Now stick around, and when we get back,
2:58
I'll be be done with this, it'd be pretty,
2:59
we'll go straight to the oven.
3:02
Okay, y'all, here we are.
3:06
How it never fails that I always forget something
3:08
and Theresa reminded me.
3:12
Yes, she so often does. (Theresa giggles)
3:16
I had another couple of tablespoons of butter
3:19
melted off here to the side.
3:21
So, I've been pouring additional butter
3:25
on every layer as well.
3:26
Y'all look how good that is.
3:31
So, I've got our last rosemary.
3:33
And I was just sitting here thinking,
3:34
you know it would be so pretty if we could turn this out
3:39
of this pan without it collapsing.
3:41
To see the spirals and all the brown potatoes,
3:44
how pretty that would be?
3:47
it's gonna be good to eat.
3:48
So I'm going into a 350 degree oven
3:50
for about 30 or 35 minutes.
3:52
We want these to brown up and get really soft.
3:55
Ooh, y'all, look at here.
3:56
Add this to your list of things
3:58
to be thankful for this year.
4:00
Potatoes, y'all stick around.
4:02
- [Theresa] It moves, I'm telling you.
4:03
- Okay, go ahead. - It's a house full y'all.
4:06
Our potatoes are perfect.
4:08
I'm super happy with these.
4:10
See how they brown, and Theresa's done 'em perfectly,
4:15
- [Theresa] Mandolin. - Mandolin saves the day.
4:20
Let's give it a test drive.
4:22
Just beautiful, scalloped potatoes
4:25
that have cooked down in this butter.
4:27
And with this season and this fresh rosemary,
4:30
I think you're gonna have a home run,
4:32
if you can put this on your table
4:33
for Thanksgiving this year, y'all.
4:34
- [Theresa] Look how hot it is.
4:36
- I know, I'm gonna take one off the top
4:38
and maybe it's cooled off a little bit.
4:46
This is delicious, y'all.
4:49
If you're looking for a side for your Thanksgiving,
4:52
to do something a little different this year,
4:54
take a plain old potato, let's dress it up
4:56
and do it mama's way.
4:59
I'll see y'all around the kitchen.
5:01
Hmm, like potato chips.
