0:00
- Hey everybody, it's Bobby here.
0:02
You know, New Year's is right around the corner
0:04
and we all love a good New Year's Eve hors d'oeuvre
0:08
for our parties and our guests
0:09
that are coming over to our house.
0:10
I've got a great one for you today that is courtesy
0:14
of a good friend of our family, Ben Mitchell.
0:17
So thanks to you, Ben, for this idea.
0:21
and there are probably many variations of 'em.
0:24
My mom used to do 'em when I was a kid,
0:27
but this is the one that Ben suggested.
0:29
So we are going to start with,
0:32
I've got two pounds of sausage here
0:35
that I've already browned off and drained
0:37
and let cool, okay, you're gonna be using your hands,
0:39
so you wanna make sure
0:40
that your sausage has had an opportunity to cool
0:43
so you don't burn yourself.
0:44
And this sausage is just a mild,
0:47
so depending on if you like it spicy,
0:49
you could go with spicy sausage, whatever.
0:53
There are many, many different types of sausages.
0:56
Two pounds, I cooked it off in the skillet,
0:58
drained it really well so it's dry and cool.
1:01
So to the sausage, we are going to add pimento cheese.
1:08
- [Theresa] That's a unique ingredient.
1:10
I've never heard of it. - It is a unique ingredient.
1:11
I have not heard of it either.
1:13
And this is, again, thanks to our friend Ben Mitchell.
1:17
So I can't wait to see how these come out.
1:19
Now, with two pounds of sausage
1:23
we should get several dozen balls.
1:28
I'm gonna use a tablespoon or a soup spoon
1:32
to sort of form them.
1:34
And depending on how big or small you make them,
1:37
you'll get more or you'll get less.
1:39
Now, if you like a little bit of hot,
1:42
little bit of of jalapeño here.
1:44
Ben says he goes with like half a jar of jalapeño.
1:48
I'm just adding maybe a tablespoon of jalapeño.
1:51
- [Theresa] He does a double batch too though,
1:53
so that's probably about a quarter of a cup per batch.
1:56
But I'm not that brave either.
1:58
I don't want mine to be that hot.
2:00
I would rather mine be a little more on the mild side.
2:05
Okay, so a little salt.
2:08
We are going to add, now this is my mother's biscuit mix,
2:14
and oh boy is it good.
2:16
So the biscuit mix is gonna go right in too.
2:22
These are gonna be fantastic, I just know it.
2:26
And I'm gonna add in two cups, wow,
2:30
of shredded cheddar cheese.
2:31
Ben, you're a maniac.
2:34
This is not a light recipe, by the way, at all.
2:38
Have a good time on New Year's Eve.
2:46
Okay, and I'm going to use my hands
2:49
to marry all of this together.
2:52
My hands are clean, by the way.
2:54
I just washed them right before I began
2:57
to dig in right here.
3:00
Oh boy, this smells, the aroma coming out of this
3:07
pimento cheese and sausage mixture is just fantastic.
3:13
These are gonna go fast,
3:14
so when your party starts, have 'em ready.
3:18
Don't have to go back and make more.
3:20
Okay, so let's take a little break
3:22
while I mix this together
3:24
and I'll see you in just a couple minutes, okay?
3:26
Okay, I'm rolling out these sausage balls.
3:28
I'm trying to get a consistent size,
3:29
and if you look at 'em, I think they're all
3:34
pretty similar in size and shape.
3:41
I've been able to get four rows of five.
3:45
and I've still got a lot of mixture left in my bowl here.
3:49
So this is gonna make a nice amount of sausage balls.
3:53
Now, a couple things.
3:55
Ben said that you could form these sausage balls
3:59
and put these in the freezer and freeze 'em hard,
4:02
maybe put 'em into a zip bag or something like that,
4:05
freeze 'em hard and then you could cook them
4:07
and then they would come out
4:08
really firm, round sausage balls.
4:12
If they're a little warm when you put 'em in the oven,
4:14
then they might come out a little more cookie consistency,
4:16
they might flatten out a little bit, but we'll see.
4:19
We're gonna pop these into the oven 400 degrees
4:22
for about 15 minutes.
4:23
So Theresa, would you do the honors please
4:25
while I go wash my hands?
4:26
- [Theresa] Absolutely. - I'll see you
4:26
in just a few minutes.
4:27
Everybody, the sausage balls came out really nice.
4:32
They flattened a little bit, 'cause they were still
4:33
kinda warm whenever I balled 'em up.
4:36
they're sort of cookie-like, and I have no problem
4:38
with them being in this shape and size.
4:44
I would be happy to be served this
4:46
at any New Year's Eve party,
4:48
so thanks very much to Ben.
4:50
Thanks Ben for the recipe.
4:51
Let's see how they taste.
5:03
That is one delishtij, hmm, delishtij,
5:09
That is one delicious sausage ball, sausage cookie,
5:12
whatever you wanna call it.
5:16
Happy New Year, everybody.
