Jamie Deen here, back in The Chicken Box.
0:04
You know what's so funny, Theresa?
0:07
She's going bring these recipes and these things down here
0:12
so I can cook for y'all.
0:14
I'm so busy at The Chicken Box during the week,
0:16
I don't have a chance to get out to
0:17
Mom's and film as much as I'd like to, but I'm so happy that Theresa let me know.
0:21
This week she wanted us to talk about a kale apple fall time salad.
0:26
But Thanksgiving right around the corner.
0:28
It's nice to have seasonal salad you can have.
0:31
I don't ever eat turkey and dressing except in November,
0:35
but it's nice to have a specific time type salad.
0:38
This kale with apple is perfect for the fall time.
0:42
I've actually got several fall salad recipes.
0:45
You know how I get whenever I start doing this?
0:47
I've got a roasted acorn squash.
0:52
Maybe we'll do it one day with a warm
0:56
walnut salad dressing.
0:59
So many things up here, y'all.
1:01
But today, let's get to it.
1:03
Theresa's done all of this in this bowl.
1:06
I love to make salads like this.
1:07
So we're going to put everything together, right?
1:10
And we're building our dressing around our salad.
1:13
So I've got our apple cider vinegar is going to go in first.
1:17
I've got some black pepper
1:23
Take two steps this way.
1:27
It's nice to be in The Chicken Box.
1:28
I know where everything is.
1:40
So we started with our vinegar.
1:41
We've got our four ingredients in here.
1:43
I'm going to whisk this together.
1:45
This is essentially our little salad dressing that we have here.
1:50
So I have to beat my oil in here.
1:53
You think I can find a bigger whisk?
1:54
If I went and looked, I’d probably find a bigger one.
2:00
kind of whisk this in, in a slow, steady stream.
2:05
All right, that's enough of that.
2:07
So I've got this whipped up
2:08
in the bottom of our bowl, and now we're going to add our kale
2:12
and don't be worried about how much dressing is down.
2:15
There is as much kale as this looks like as the perfect amount of dressing
2:19
is going to dress it all the way.
2:21
Take your time and toss it through.
2:29
here suggest that you let it sit for 15 minutes.
2:32
Think about everything we have in here.
2:34
We're going to let vinegar and the honey and the oil and all of our seasonings
2:39
sit and rest on these leaves, and it's going to soak it all up.
2:43
You want to really make sure that we toss this well.
2:47
So you've seen me down in the chicken box and you know how my mom is.
2:51
You know how busy Theresa is.
2:52
Do y’all think that we're going to let this sit here for 15 minutes.
2:56
This is the time lapse trick.
2:59
That is really pretty.
3:02
Okay, So now that it's been sitting there
3:03
for 15 minutes, we're going to dress it with our apples.
3:08
Theresa did a smart thing.
3:10
She cut these really thin and let them soak in lemon juice.
3:14
Now, that'll keep her from turning brown on here.
3:17
I bet she cut these a couple of hours ago, and they're still nice and white.
3:20
I did, like around 11:00.
3:22
They sell products that you can buy and use for that.
3:25
But if you've got a lemon at the house, a lemon does exactly the same thing.
3:31
We've got our pecans.
3:34
Now you say a fall salad.
3:36
Well, take a look at this and it looks like fall,
3:40
beautiful salad, craisins,
3:45
maybe about a cup here.
3:49
And we've got our parmesan cheese that we're going to put across the top.
3:52
And I'll add some more as I toss them.
3:55
I'm show you a trick with our carrots.
3:58
So you've got carrots at the house.
4:03
and you get one long run
4:09
and you drop it into an ice bath
4:10
and then after it sits there for a while,
4:15
So it takes a little bit of time to keep an ice bath around
4:20
and you can get these curly little spins on your carrots, which is so pretty
4:24
and gives us some character and a little bit of texture.
4:29
Making a video for everybody.
4:31
Would you like some salad.
4:33
Yeah. It's a beautiful.
4:34
It's a fall kale salad. This is delicious.
4:39
Apples, pecans, carrots, kale and with a beautiful
4:44
little dressing that we made right inside.
4:48
So I guess it's here. It's time to eat.
4:51
So thank you, folks, for tuning in today.
4:53
I hope that you come down. I made chili last night.
4:55
We're doing giant baked potatoes stuff with chili down here.
5:00
Fall weather is one of my favorite times to eat.
5:03
Pretty much any time. It's my favorite time to eat.
5:05
