Bobby Deen here and happy holidays.
0:04
Hard to believe it, but they're here already.
0:08
So we're going to make some appropriate dishes.
0:09
And not only that, we're making dishes
0:11
that come from my cookbooks.
0:13
Me and my brother together recipes, from the road.
0:16
And today we're going to make an eggnog and.
0:19
Okay, I can already hear it.
0:20
Some of you hate eggnog.
0:22
And some of you went, Whoa, I love eggnog
0:24
and put as much bourbon in it as you can.
0:27
Okay, so we're going to make eggnog,
0:28
but with no bourbon, Right. So how do you start?
0:31
We start with egg yolks
0:37
Two very simple ingredients.
0:40
But this goes ahead. Goes. This goes ahead.
0:43
This tells you already
0:45
that this is not going to be a not my mama's meals recipe.
0:48
This is not going to be light.
0:50
This is going to be full throttle, heavy eggnog.
0:55
to mix together, whisk together sugar and egg yolks.
0:59
And if you're wondering that six egg yolks
1:03
cup of sugar or excuse me, a half cup of sugar, sorry.
1:07
Have a cup of sugar and I've got some milk.
1:10
Warming on the stovetop over here.
1:12
I'm not going to scald that or boil it.
1:14
I just want to get it warm.
1:22
Let's see. yeah. Perfect.
1:24
So I'm going to go ahead and turn that off
1:27
because it's nice and warm.
1:28
You can see that it's steaming.
1:32
And I'm going to ladle a little bit of my
1:35
milk in to temper my eggs.
1:42
So we don't end up with scrambled
1:44
eggs, whisk, whisk, whisk.
1:49
Just go ahead and warm up my eggs.
1:51
Let those two things marry.
2:00
everything back into the milk on the stove top.
2:04
And this is the beginning of our eggnog.
2:08
When I was growing up, our eggnog came out of a carton
2:14
from the grocery store.
2:16
And I'm telling you what? I remember
2:19
chugging it right out of the container, oof.
2:24
And you should see some pictures of me from that time.
2:27
A little bit husky, you might say.
2:31
All right, So I've tempered my eggs
2:33
and I've add them back into the sauce,
2:35
and it's going to have to cook for a few minutes,
2:36
maybe six or 8 minutes, until it's starting to thick,
2:39
thickened a little bit and maybe sort of
2:41
stick to the whisk or the spoon.
2:43
So we'll take a little break and then we'll come right back.
2:46
So our milk and egg yolks
2:50
has begun to thicken. I'm going to go ahead
2:54
and take it out of the saucepan and into a
3:05
and straight into an ice bath to cool.
3:11
Wonderful. So we'll let that begin to cool.
3:14
It'll take a few minutes and we'll come right back.
3:17
The next step for the eggnog is six egg whites
3:21
into our stand mixer.
3:27
And we're just going to
3:29
beat this into soft peaks.
3:32
So we'll get this started and then
3:34
we'll take a little break and we'll come right.
3:36
So we've got three different things going on here.
3:39
This is my egg yolks and milk that we cooked on the stovetop.
3:43
I've got some whipped cream that I'm going to fold into it.
3:47
good old homemade whipped cream.
3:52
I could sit down with a spoon in a quiet room
3:55
and probably eat every bit of that if I tried.
3:59
And so we talk about this a lot.
4:03
I'm going to fold this in.
4:05
So it's important to know how to fold
4:10
when you're preparing dishes so you can beat things
4:13
into oblivion. That is beautiful.
4:17
Whipped cream, nice you know, beautiful.
4:22
And also, Bobby let him know that the whipped cream was
4:29
heavy whipping cream and a fourth of a cup of sugar.
4:32
And I just went ahead and mixed it for us.
4:39
I just wanted to know whether whipped cream was already ready.
4:42
So I'm folding in the whipped cream.
4:43
Do you want me to say what you just said?
4:45
I think everyone's heard them now.
4:50
Thank you, Teresa, for the clarification.
4:56
So our whipped cream into our
5:01
milk and egg yolk mixture.
5:03
And then to that, I've got my egg whites with sugar.
5:09
I'm going to fold that in. And also look at that.
5:12
boy, that looks like meringue.
5:15
Beautiful. Beautiful.
5:17
You will fold all of this
5:24
Come and get it everybody!
5:27
All right, Mom. So we had to.
5:28
We had to rescue our eggnog with a little extra milk.
5:31
Yeah, it just got so thick, son.
5:35
And you want to have some liquid it so.
5:39
I’d put a little more.
5:42
And, you know, Mama always put this in so she made it.
5:45
Put it in the freezer. You get it ice cold.
5:49
the bourbon that she put in, and it wouldn't freeze.
5:52
Right. So we didn't add any bourbon.
5:54
This is the nonalcoholic version.
5:56
This is this is, your children can't drink.
5:59
That's right. Little vanilla.
6:01
Thanks, Mom, for your help. You're welcome.
6:04
A little fresh nutmeg. This looks so nice.
6:08
It is really, really thick and delicious looking.
6:13
And like my mom said,
6:16
we will put it in the freezer, I think, for a few minutes.
6:21
But I will. I will give it a little taste
6:25
or I put it in the freezer.
6:39
That beats the stuff you get off the shelves
6:42
at the grocery store any day of the week.
6:45
So a few minutes in the freezer to make sure that it's
6:47
nice and cold and then we'll serve.
6:49
You know, man, look at that.
6:52
You know, I was a barista. Did you?
6:58
When you know what else would be good on that?
7:00
Maybe a little chocolate shave and.
7:03
But we'll stick with what we got.
7:05
And does that look good?
7:07
So good. So simple. Delicious.
7:10
Old fashioned eggnog for you. Merry Christmas, everybody.
