- Y'all, Christmas morning is fast approaching, isn't it?
0:05
It's approaching way too fast (chuckles)
0:07
because I'm not even in that space yet
0:11
or ready to be in that space yet.
0:13
But I am ready to get into the space
0:17
where I wanna write down what I'm preparing,
0:20
you know, for my family or friends, if they should come.
0:24
So I'm gonna share with y'all a breakfast casserole recipe
0:28
and it's so delicious.
0:31
Plus you make it the night before, cover it with a wrap,
0:34
put it in the refrigerator,
0:36
and then pull it out that morning.
0:40
And if you've got time, let it sit on the counter, you know,
0:44
kind of not be so cold.
0:47
And then put it in the oven, and you're looking
0:49
at probably 45 minutes to an hour on it.
0:52
And it is delicious.
0:54
I was just somewhere and they served this.
0:57
Now where was I?
1:01
Where were we, Eddie?
1:03
But they served this, and it's just really good.
1:07
It's a good recipe.
1:09
The first thing I'm gonna do, are you thinking Eddie?
1:12
- [Eddie] I'm thinking, I'm trying to think.
1:13
I can't remember being anywhere having breakfast.
1:15
- Yeah, yeah.
1:17
Well, we didn't have breakfast (chuckles) is the thing.
1:21
But somebody had made this.
1:24
The first thing I'm gonna do is take a pound
1:27
of ground breakfast sausage
1:31
and just brown it off some.
1:35
You know, you don't have to kill it
1:37
'cause it's gonna be cooking for another 45 minutes
1:42
to an hour in the oven.
1:43
So, like I said, we don't have to feel
1:45
like we're gonna kill it.
1:47
But while that's browning, I just want to send out
1:49
a couple of thank yous.
1:51
Here's some folks out there, some of our viewers
1:54
that knew I didn't have a dough blender.
2:00
And I had thrown it away 'cause it kept cutting my hand
2:03
and rolling, cut my hands.
2:06
So I have misplaced who sent this.
2:09
- [Eddie] I don't think it had anything in the package
2:12
with a name on it. - Really?
2:13
- [Eddie] Yeah, it's a mystery gift.
2:15
And they sent two of them.
2:17
- Well, I thank you for that mystery gift.
2:19
And you know who you are. I don't, but you do. (chuckles)
2:23
And look what I got, which I just love.
2:28
I love having fresh garlic on the vine
2:32
to hang in my kitchen and use it from.
2:35
And I got a card from Laurie Duffy.
2:39
And she said she had been meaning to send this to me
2:43
for a long, long time.
2:45
And their town where she's from,
2:47
she didn't mention her town.
2:49
But they had the Glory Garlic Festival.
2:54
And she said that we actually made the garlic,
2:57
the glory garlic bread on of the videos.
3:01
In fact, it was Jamie that made it.
3:04
So I'm so happy that I'm sharing it
3:07
with everybody out there.
3:09
These are recipes that you may love for Christmas.
3:12
And Laurie, thank you so much for the garlic.
3:15
I've just got to find just the right place to hang it.
3:20
Y'all are all so sweet.
3:23
Okie doke. Now, I did not overcook this.
3:29
Because, remember, I told you it's gonna be cooking
3:32
for about another hour, and I'm not chopping it to death.
3:37
I wanted you to have some substance in the sausage.
3:43
You know, I want you to be able to look at it
3:45
and tell what it is and taste what it is.
3:47
Usually I put my bread on the bottom.
3:52
So let's see if that's what I did this time.
3:55
Yeah, so you wanna put the bread in first.
3:59
And this has been buttered.
4:01
The bread's been buttered and cut into cubes.
4:05
So the first thing we're gonna do is
4:11
put that, (chuckles) it's gonna stick to me
4:13
'cause of the butter.
4:15
Now in this particular recipe,
4:17
you'll find some of my recipes,
4:19
I put sliced new potatoes that are cooked, onions.
4:24
I mean, I just change it around every different way
4:28
just so the people that I'm feeding.
4:31
So now this one calls for a table spoon of sage.
4:35
Now sage is a very strong herb.
4:41
So if you don't care for sage,
4:46
you don't have to use it.
4:49
Now we're going to sprinkle the cheeses next
4:53
over our bread.
4:57
And this is a white cheddar.
5:01
For some reason I adore white cheddar.
5:06
I just love white cheddar cheese.
5:09
To me, somehow it just tastes different.
5:11
And I know that's all in my head, y'all.
5:14
All right, let's see.
5:24
Okay, so all the cheeses go on it this time.
5:29
Uh-oh.
5:43
Okay, I've got seven eggs.
5:49
You'd think seven eggs wouldn't be enough,
5:51
but it's a gracious plenty.
6:01
(liquid whisking)
6:13
Somebody had told us, you know,
6:16
I told y'all that the chickens just weren't,
6:20
they weren't laying eggs like they were.
6:22
And so we don't know if it's 'cause
6:24
the weather turned cool or what.
6:27
But anyway, somebody told us to put a red light in the coop.
6:34
And so it looks like the red light district
6:36
when you pull up into our yard. (chuckles)
6:41
And, but today we had three eggs
6:45
versus yesterday only one.
6:48
- [Eddie] We haven't tried the,
6:50
adding the cayenne pepper yet.
6:52
- Yeah, yeah. And they told us to add.
6:53
Well, I think actually the cayenne pepper,
6:56
I think maybe the pepper seeds.
6:58
- We'll try. - So they could see it,
7:01
because the cayenne pepper, I mean that's ground so tiny,
7:05
they may not know what it is
7:10
and where is that, that I'm getting hot, you know?
7:14
So I think they could see the seeds.
7:17
All right, now this calls for I think a half a teaspoon.
7:22
Yeah, a half a teaspoon of cayenne.
7:24
Now if you're feeding a bunch of children,
7:28
I wouldn't put that much, so I'm leaving half out.
7:32
I'm putting in dry mustard.
7:40
And if you wanna get your eggs real fluffy,
7:42
you know, you can use a little hand mixer.
7:46
And I need one tablespoon of fresh sage.
7:50
I think that's what it said.
7:56
Yes, of chopped fresh sage.
8:04
Salt and pepper to taste.
8:12
All right, so I'm using not quite a full tablespoon.
8:20
(machine whirring) So this breakfast casserole
8:26
is really geared toward adults.
8:29
So you can modify this to make it,
8:36
to suit your family's wants the needs.
8:42
Like I said, I love it.
8:44
I'll ball a pot of new potatoes.
8:48
And after they're done, I'll slice 'em
8:51
and put a layer of those in there.
8:53
And then bell pepper and onion, I'll cook those.
8:56
So there's just so many ways that you can do this.
9:02
You can put in bacon along with the sausage,
9:06
but I think this is gonna be good just like this.
9:10
So we're almost there.
9:16
And I am gonna go ahead and put
9:20
a little of my hot sauce because I know
9:24
that a lot of that heat will cook out,
9:28
and I don't have to worry
9:33
about burning anybody up. (chuckles)
9:37
Unlike the cayenne.
9:47
All right, I can't remember.
9:48
Am I using half and half or regular milk?
9:50
- Regular. - That's what I thought.
9:52
But if you like half and half, if you like a richer dish,
9:58
then you can bump that up to
10:07
half and half.
10:14
And like I said, some of these pieces
10:16
are still a little pink, and I want 'em that way
10:19
because we need a little bit of fat
10:24
from the sausage to give it flavor.
10:32
And if you are making this for adults, (clears throat)
10:35
excuse me, I've been talking so much
10:39
about to lose my voice today.
10:46
If you're making this for adults,
10:48
you can buy sausage, the hot breakfast sausage.
10:55
So you may wanna do that if you really wanna
10:58
challenge somebody's taste buds.
11:05
Okay. So we're just gonna pour this.
11:10
Okay, so plastic wrap into the refrigerator.
11:17
And in the morning when I get ready to serve my guest,
11:21
or about an hour before,
11:23
I will pull this out and put it in the oven.
11:28
So we're gonna go ahead
11:30
and stick this in our oven.
11:35
And in 45 minutes I'm having breakfast.
11:40
Okay, I'm fixing to taste
11:42
this wonderful breakfast casserole.
11:45
And I've topped it with a little fresh sage and parsley.
11:49
And that lets people know what's in it.
11:54
So it just looks delicious.
11:59
Look at all the cheese.
12:03
Oh.
12:07
Do love all that cheese.
12:12
Mm-mm.
12:15
And you can see little cubes of bread in this
12:19
where you wouldn't, if that had set overnight,
12:23
you wouldn't see those, the cubes.
12:25
They would have been totally, and you can't see 'em bad.
12:30
The dark is a sausage
12:33
where you top the sausage on top of the...
12:36
And then after it came outta the oven,
12:38
I just sprinkled a little grated Parmesan cheese on it.
12:47
Mm.
12:52
This is so good.
12:55
I'm glad I didn't put
12:58
the whole teaspoon of cayenne pepper in it though,
13:02
because it's a little on the spicy side.
13:11
But...
13:15
And I've got a sissy palate, (chuckles)
13:18
but it's not too hot for me.
13:22
So I hope that this helps y'all out a little bit.
13:28
If you got a lot of company coming in,
13:31
it'll make a great easy dish for you to fix the night before
13:36
and then put in the oven the morning off.
13:39
So Merry Christmas.
13:40
Love and best dishes to all of y'all. (chuckles)
