I've got a recipe that's special to me,
0:07
because it was a special friend,
0:10
that it was her favorite recipe for cornbread.
0:13
And it just so happens, it's in this issue,
0:16
my Christmas issue of, "Cooking with Paula."
0:25
who produces my magazine.
0:28
She owns a lot, she does a lot of magazines
0:31
through Hoffman Media.
0:34
And you know, she just passed away a while back,
0:37
and I loved her, she was such a dear friend.
0:41
And this is a picture of the two
0:43
of us together in the kitchen.
0:50
She is gonna be missed by so many people.
0:54
She was one of the smartest women I've ever met.
0:58
And I think her first magazine was, "Sew Sew,"
1:04
She was incredible seamstress.
1:06
It was nothing that she couldn't make.
1:08
I think she made all her children's christening gowns
1:13
and wedding gowns and it was nothing she couldn't do.
1:17
So like I said, she's gonna be sorely missed.
1:19
So this is in honor of you, my dear friend.
1:26
(Paula's throat clearing)
1:28
let me see what that, what the full name.
1:30
Browned Butter in Thyme Cornbread.
1:33
Now, I just made a cornbread.
1:36
It was kinda similar to this, about a month ago.
1:41
So I don't want y'all to confuse that one with this recipe.
1:45
Now, the first thing I'm gonna do
1:47
is I'm gonna melt 3/4ths of cup of butter.
1:50
And I don't want this to burn,
1:52
because I'm putting 10 sprigs of fresh thyme in there.
2:01
we're gonna let it cook until the butter starts to brown
2:07
But you'll just need to be careful,
2:10
you know, because butter can burn pretty quickly.
2:14
So I think I've got this all the way down
2:21
I do not wanna burn it.
2:24
But I do want it to turn brown (skillet scraping)
2:27
and I wanted that thyme to infuse itself in the butter.
2:33
This is our browned butter, y'all.
2:36
And it was browning good.
2:38
And I removed the sprigs of thyme from it.
2:42
And now, I just need to wipe this pan,
2:46
you know, pretty clean, (pan scraping)
2:47
because I'm gonna add the oil to our skillet,
2:53
and then I'm gonna put it in the oven,
2:55
because we want this,
2:57
when I pour the cornbread mix in that pan,
3:05
So it'll probably take eight to 10 minutes
3:08
with the oven set on 400.
3:10
- [Theresa] And I'm gonna sit it in there for you.
3:12
- Yes, now it's hot - [Theresa] Hot.
3:18
I'm gonna be adding our buttermilk,
3:27
- [Theresa] Yes ma'am.
3:28
- Yes, buttermilk, eggs and honey.
3:36
I'm not gonna pour those eggs
3:37
over that hot butter. (dishes clatter)
3:41
So I'm gonna do this.
3:45
And we're using four eggs.
3:48
All right, it's time to put all of our dry stuff together.
3:56
our flour, (dishes clanking)
4:06
our salt, (dishes clatter)
4:10
and our fresh thyme. (bowls clanking)
4:13
Okay, so we just wanna stir this
4:18
up real good. (spoon scraping)
4:28
That thyme butter is heavenly, y'all.
4:36
I'm gonna go ahead and add our honey.
4:44
butter off some, so that,
4:48
before I put the eggs in there,
4:49
'cause I don't want it to cook our eggs.
5:01
I think y'all can probably see
5:02
why this was one of Phyllis's favorite recipes.
5:07
And we're gonna use the whole quart of buttermilk.
5:11
And just a little (buttermilk splashing)
5:18
when you're making cornbread,
5:21
always use buttermilk. (machine buzzing)
5:24
Always use buttermilk, because it's so incredibly good.
5:42
So it's safe to put our eggs in there now,
5:47
because that buttermilk was cold
5:51
and it cooled it off for me.
5:58
make sure this is all incorporated.
6:04
You can see that brown butter swirling through that mix.
6:20
So I wanna make sure this is mixed up real good.
6:23
I hope my pan's getting hot, Theresa.
6:25
- [Theresa] Yes, I just put it on high.
6:27
- [Theresa] And up the temperature.
6:28
- Yeah, we want it sizzling.
6:33
Just wanna make sure this is incorporated real well.
6:40
And now, I'm gonna make a well.
6:46
A well in our dry ingredients.
6:49
And I'm gonna pour that in.
6:50
Now, let's see, do we do it all at one time?
7:04
Okay, it doesn't say,
7:05
it looks like I can do it all at one time.
7:09
You know, I can't remember.
7:09
There's so many things rumbling around
7:11
in this old head, y'all.
7:16
So remember this is our buttermilk,
7:24
and honey that's been mixed in,
7:30
with our butter, with our brown butter.
7:35
It's gonna make a lot, a lot of corn bread.
7:41
All right, we got our pan good and hot, y'all.
7:44
I'm gonna just pour a little bit of that in the middle,
7:49
'cause I don't want this to stick.
7:53
Hope it sizzles. (pan sizzling)
7:59
All right, so in the oven this goes 400 degrees
8:02
for about 45 minutes, I think.
8:07
- [Theresa] I think it is. - 35 to 40.
8:10
- [Theresa] I'll come get it.
8:27
I'll never taste this again without thinking of you.
8:41
So good. - [Theresa] You forget
8:42
how good it is, don't ya?
8:48
Yes, I was gonna say, where is our butter?
8:55
I know our butter's in it, but.
9:01
a wee little butter on my,
9:16
You know this almost might work for cornbread stuffing.
9:23
- [Paula's Assistant] The honey doesn't make it too sweet?
9:25
- It's a little sweet, but that's the only thing.
9:39
Got a little heat to it.
9:52
I think you're gonna love it.
10:02
and all the Hoffman Media gang and the Paula Deen gang.
10:11
Hey, y'all, it's Paula Deen.
