Today, I'm talking about Thanksgiving
0:04
and I'm talking about fresh cranberries.
0:06
You know, every Thanksgiving, I make
0:11
one of my versions of homemade cranberry sauce
0:16
And to me, it's just so much better using the fresh berries.
0:21
So I wanna share with y'all today a recipe
0:26
for brandied cranberry sauce.
0:31
So I've got my cranberries, I got brown sugar,
0:34
I got my water, I got my orange juice,
0:36
I've got cinnamon, cardamon and...
0:42
And then, I have the brandy.
0:45
So it's up to you as to whether you wanna use it or not.
0:50
You certainly don't have to, it's optional.
0:53
So I'm gonna put everything in my saucepan.
1:00
And I'm gonna cook this.
1:03
Actually, the cranberries cook really, really fast.
1:09
They'll burst open almost immediately.
1:13
All right, and in go my spices.
1:24
In goes the orange juice.
1:28
And what do you think?
1:32
Theresa's saying, "Yes," we think yes.
1:35
Okay, so I'm gonna put in two tablespoons of brandy.
1:40
And you can also substitute bourbon,
1:44
a good bourbon for the brandy,
1:46
should you not like the flavor of brandy.
1:52
All right, so I'm gonna put that on.
1:56
Don't be making those noises.
1:59
My stoves are like me, they getting old. (laughs)
2:07
Let's see if I can make it quit.
2:08
Yeah, that made it quit. (laughs)
2:11
All right, so I'm just gonna stir all that up real good.
2:15
And don't forget to wash your cranberries.
2:26
Every year, you know, like I said,
2:29
I make some form of my cranberry sauce.
2:33
One of my favorite ways that I do it is
2:37
I alternate layers of room temperature cream cheese,
2:44
a layer of cranberries and layer of cream cheese,
2:46
a layer of cranberries.
2:47
And that's probably one of my favorite ways.
2:51
But every year I have, I'll make a bowl this big,
2:55
and I have a bowl that big when the meal's over
2:59
because people, most people don't seem to like it,
3:03
but the flavor of cranberry sauce
3:05
is so good with turkey and dressing.
3:10
So I hope you'll have more people
3:15
that will try the cranberry sauce.
3:18
So we're gonna let this cook for about 20 or 25 minutes,
3:22
and that will get it.
3:26
That will get it. (laughs)
3:28
We're back to our cranberry dish, y'all.
3:33
And I probably cook this for an hour or more,
3:38
but, you know, 45 minutes to an hour.
3:44
So I love the sound of the cranberries popping.
3:53
It kind of sounds like popcorn when they start getting warm.
3:59
So, like I said, 45 minutes to an hour until it's thickened.
4:07
And of course, after we put it in the refrigerator,
4:11
it's gonna get even thicker.
4:22
This cranberry sauce really makes me want
4:24
some of my cornbread dressing.
4:35
It's still piping hot, but the flavor's delicious.
4:39
I can taste the spices coming through.
4:44
And for those of you that like cranberry sauce,
4:48
I think you're gonna like this.
4:52
Now, you can serve it any way you want to.
4:54
I would not hesitate to put this
4:59
over a block of cream cheese and serve it with crackers.
5:04
That's one way that you can serve it.
5:08
It doesn't have to be by your dressing,
5:12
by your cornmeal dressing, cornbread dressing.
5:16
So this is gonna get much better after it's chilled
5:21
because it's pretty good right now,
5:23
but cranberry sauce to me, needs to be cold.
5:28
Happy Thanksgiving! (laughs)
