- Hey everybody, and happy Thanksgiving. It's Bobby here.
0:03
And can you believe
0:06
that it's this late in the year already in 2023?
0:09
I don't know where the time goes,
0:11
but boy does it move quick.
0:14
Thanksgiving is, I love this time of year in general.
0:18
We've talked about it, October, November, December,
0:21
they're great sports months and that's good for me,
0:23
but they're also just great food months.
0:25
The comfort foods that we grew up with and the things that,
0:29
those aromas in the kitchen
0:30
that just take you back to a place in time.
0:33
Well, Thanksgiving is one of those days for me.
0:35
And my mom has always made, hands down, the best stuffings
0:40
and dressings that you could ever imagine.
0:42
And there's a wide variety of ways
0:45
that you can make dressings.
0:46
I mean, the bones of it is kind of always the same,
0:50
but my mom makes oyster dressing,
0:53
or she makes a traditional dressing.
0:55
There's just, with cooking,
0:57
there's just so many different ways to do everything,
0:59
and you can come up with your own creative ways.
1:01
But today I'm gonna show you an apple cranberry stuffing,
1:06
is the name of it, I've always called it dressing,
1:08
but it's an apple cranberry stuffing.
1:10
And I think that you're really, really gonna like it.
1:13
And if you want to, like with every other recipe,
1:17
do it exactly like I show you the first time,
1:19
and then make it your own after that.
1:21
So I'm gonna start by melting some butter in a pan.
1:25
This is half a stick of butter.
1:26
And to that, I'm gonna add.
1:29
And while I'm waiting on that butter to melt,
1:31
I'll just go ahead and tell you
1:32
that I've got some chicken broth
1:33
and cranberries mixed right here.
1:36
And the cranberries are just floating
1:38
and marrying in with the chicken broth
1:40
for about a half an hour before we use it.
1:43
So to my melted butter, I'm gonna, we're on a simmer,
1:48
I'm gonna turn this up just a little bit here,
1:50
to my melted butter,
1:51
I'm gonna add exactly what you would expect, my onions.
1:57
There's no better smell in the kitchen than onions
2:01
and some butter on the stove top in the skillet.
2:05
Some peppers, beautiful color there, and some celery.
2:11
Don't tell me you don't like celery, I don't wanna hear it.
2:13
'Cause there's celery in every stuffing,
2:17
no matter what kind, every good one.
2:20
I'm just gonna cook my vegetables a little bit
2:23
for about five minutes,
2:24
and then I'm gonna add another ingredient
2:26
that I'm gonna give you a little time to try
2:29
to guess what it's gonna be right now.
2:30
You probably won't guess it.
2:32
And I'll see you back here in just a few minutes.
2:34
Man, this smells wonderful.
2:36
This is half stick butter, onion, pepper, celery.
2:41
It's gonna be the basis,
2:42
the base, excuse me, of our stuffing.
2:45
Now, to that, I'm gonna add one more ingredient,
2:47
and I told you to try to guess what it was,
2:49
and I don't think that you probably did.
2:50
So I'll go ahead and tell you
2:52
that it is Granny Smith green apple.
2:55
Ooh whoo, that citrus in the apple,
2:58
that's unexpected, isn't it?
2:59
I'll bet you weren't expecting that.
3:02
You were guessing what it might be,
3:03
but you did not guess this, I know you didn't.
3:06
If you did, well, good on you.
3:10
That citrus is just bright and beautiful
3:14
and it's really gonna add to this.
3:21
So I'm gonna stir this in,
3:22
and I'm gonna cook it for another about five minutes.
3:25
So let me just get my green apple mixed in.
3:33
Looks great.
3:34
We're gonna give that just a few minutes to cook.
3:35
Now, while that's working,
3:37
I've got three fresh eggs over here.
3:39
And when I say fresh, I mean very fresh.
3:41
My mom has got a chicken coop right outside her front door,
3:45
and that is one of the most wonderful things ever to have.
3:48
She gets fresh eggs every day.
3:51
And these were just as warm to the touch as they could be,
3:54
and as fresh as they get, beautiful golden eggs.
3:58
Now to that, I'm gonna add a little bit of salt
3:59
and a little pepper,
4:03
and I'm just gonna beat 'em up.
4:09
You see where we're going with this.
4:10
This is a great recipe.
4:11
It's tried and true.
4:12
This is not the first time
4:13
that we've done it on mom's channel.
4:16
People really, really like it, so we're doing it again.
4:20
The things that are really good and work well,
4:22
we do 'em more than once.
4:23
Now, while that's cooking and I'm beating my eggs,
4:25
I'm gonna take one more break,
4:26
so I'll see you back in just a minute.
4:28
Fantastic, so our, excuse me,
4:31
our butter, onion, pepper, celery,
4:33
and now Granny Smith apple mixture
4:37
is really, really looking great.
4:40
I think we're all done here.
4:42
We've cooked everything just enough, slightly.
4:45
The onions are translucent
4:49
and everything smells really great.
4:52
So I'm gonna move over here to a big bowl.
4:54
You're gonna like this bowl. Check this out.
4:57
Probably some of you have got something
4:58
like this at your house, my mama does.
5:03
This is a wonderful bowl that I have no idea
5:08
what the story behind it is, but I know it's old.
5:12
And this is what Mama makes her dressings in.
5:15
So I'm gonna do the same. Here we go.
5:19
So our veg and apple mixture into the bowl.
5:24
Make sure I get every bit of it.
5:28
And if you're wondering where Mama is,
5:30
she is in Knoxville, Tennessee.
5:34
She frequently travels to Tennessee for business.
5:39
She's doing business,
5:40
so I'm stepping in and helping her out.
5:44
And you, helping you out too.
5:49
So that's a great, gosh, what a great bowl.
5:54
I might have to disappear this to my house.
5:57
I don't know what happened, Mama.
5:58
All right, so our cranberry and chicken broth mixture,
6:07
I'm gonna add to our vegetables.
6:09
Who likes cranberries? I know I do.
6:15
I know I do.
6:17
All right, our cranberry chicken broth, yeah,
6:19
and you see how those cranberries
6:21
have just gotten nice and soft in that chicken broth?
6:28
Wonderful, in there.
6:30
And now to that,
6:31
I'm gonna add a can of cream of celery soup.
6:40
My spatch is a little bit too big for the can.
6:44
It's look stuck, stuck, stuck. (Bobby laughs)
6:49
If any of you have ever seen "A Christmas Story,"
6:53
little boy gets his tongue stuck to the pole
6:57
and he starts saying, "Stuck, stuck."
7:00
Okay, so there it goes our cream of celery.
7:10
Get all that too.
7:13
Waste not, want not.
7:15
Golly, did my mama get onto me so many times
7:18
when we were starting our restaurant for just wasting stuff.
7:22
Man, if I would cut a pepper, or an onion,
7:26
and just leave a little bit too much,
7:27
you know the stem on a big green bell pepper,
7:30
if you leave that green around the stem
7:31
and you throw that in the trash can, oh,
7:36
you did not want that smoke
7:38
that Mama was gonna bring to you for that.
7:41
All right, so I'm gonna.
7:42
- [Theresa] What was that last ingredient, Bobby?
7:43
- That was my cream of mushroom soup.
7:45
Oh, and a little cinnamon.
7:46
I'm sorry, I didn't say it.
7:47
A little bit of cinnamon too.
7:50
I added just a touch of cinnamon.
7:51
Sorry about that, I didn't tell y'all.
7:53
I was too busy hearkening back
7:55
to when my mom used to just give me both barrels
7:59
for throwing stuff in the trash can.
8:03
Don't you throw that away, you throwing away our profits.
8:07
Okay, Mama. And she's right, by the way.
8:10
And now I'm gonna add my bread and my eggs
8:14
and toss it all together one more time.
8:16
I've got toasted bread here.
8:22
- [Theresa] And Bobby, it doesn't look toasted,
8:24
but it's been? - It is, it's lightly toasted.
8:26
- [Theresa] Yeah, it's been in a 150 oven
8:28
for about 10 minutes just to give it that stale,
8:32
that old feeling. - And you can feel it,
8:35
but you can't really see it.
8:37
It's not brown, but I can feel that it's lightly toasted.
8:41
So I'm gonna add my bread, stir, fold really, fold.
8:49
I'm folding with this spatula
8:50
so as not to beat it up too much.
8:55
And now also to that, I'm gonna add my beaten eggs
8:59
with a little salt and pepper in them.
9:05
Make sure I get every bit.
9:12
Fold, fold, fold.
9:14
This is just a wonderful bowl for this purpose.
9:17
Okay, here we go, that is all melded together beautifully.
9:23
I've got a nine by 13 casserole dish here
9:25
that I have lightly greased,
9:28
and I'm gonna add to it our stuffing.
9:33
Theresa, I don't know if I can.
9:34
- It's good. - Give you the angle I'd like
9:36
to give you there, but in we go.
9:41
Beautiful. It smells so good.
9:43
It looks so good.
9:44
I predict success. - Oh, pretty.
9:46
- It is pretty. I love the colors.
9:52
Looks really, really nice.
9:57
And I predict success.
10:01
I just can't believe that we're already
10:05
at Thanksgiving of 2023.
10:08
I cannot believe it.
10:11
Okay, this is gorgeous.
10:13
Everything looks pretty even.
10:17
Got a little bit of bread all over the place.
10:21
Cranberries are sort of everywhere.
10:25
Just gonna make it a little even.
10:28
Into the oven for about 30 to 40 minutes.
10:30
We'll check it in half an hour, take a look at it.
10:33
But 30 to 40 minutes is our time
10:35
that we're shooting for on this.
10:37
And we're gonna have a fantastic apple
10:40
and cranberry stuffing.
10:41
So I'll see you back here in just a few minutes.
10:44
Apple cranberry stuffing, different,
10:47
little unexpected, looks a little different.
10:50
This is not your traditional Thanksgiving dressing stuffing,
10:55
but it looks and smells delicious.
10:59
Let's see how it tastes.
11:01
Fresh outta the oven, so it's hot.
11:06
Mm, mm-hm, mm-hm, the cranberries.
11:13
You know what? The Granny Smith apple too.
11:15
But the onions, they're all,
11:16
everything is sort of playing together.
11:18
I've got a little bit of the butter,
11:21
I've got the onions and the pepper.
11:23
And the Granny Smith apple is just adding
11:25
some nice brightness to it.
11:27
And the cranberries are wonderful.
11:30
Mm, mm-mm-mm, that is so good.
11:37
So now you know this is another way
11:42
to make a Thanksgiving dressing, stuffing,
11:44
whatever you call it.
11:46
This is apple and cranberry stuffing.
11:51
It was simple to make and I think that you're gonna like it.
11:53
So happy Thanksgiving, everybody.
11:56
Give this one a try.
