- Let's take a walk down memory lane,
0:02
okay, with this recipe.
0:06
I remember this being on our Thanksgiving table,
0:12
and not always just at Thanksgiving.
0:14
I'm putting a couple of tablespoons of oil in here
0:17
because the first thing I'm gonna do
0:20
for our green bean casserole
0:23
is I'm gonna saute a cup and a half of onions,
0:27
and I guess this is an eight,
0:29
maybe a 12 ounce package of mushrooms.
0:33
So,
0:36
glad I moved to a bigger pan, Eddie.
0:38
(stove clicking)
0:42
(container thudding)
0:43
Gonna saute these together.
0:46
And I have,
0:49
in this recipe,
0:51
I have used fresh green beans, not canned,
0:56
and we're not using canned cream of mushroom soup either.
1:01
What you think? (laughs) (Eddie laughs)
1:02
Can you believe it?
1:05
Now I cook these green beans in chicken broth,
1:12
and I'm gonna need to measure out five cups.
1:15
And it calls for me to hold out
1:19
a cup and a half
1:21
of the chicken broth that the beans were cooked in.
1:27
Okay, so there we go. We got this going.
1:30
I'm gonna go ahead and add those onions.
1:35
So you can see that it's,
1:38
we're kind of following our mother's recipe,
1:43
but we're just doing it on the more fresh side.
1:47
Is that what you'd say? (laughs)
1:50
So while our onions and our mushrooms are cooking,
1:53
I'm gonna take our Parmesan cheese,
1:59
half a cup, and one cup of Panko.
2:03
And I'm gonna mix those together.
2:11
This is gonna make a nice topping.
2:15
It's not gonna have those fried onions on top, y'all.
2:20
But you can certainly add those.
2:23
- [Eddie] Mmhmm.
2:24
- If you wanna split the deal
2:29
with mama's recipe and this recipe.
2:31
- [Eddie] That's often the favorite part
2:33
of green been casserole. (laughs)
2:35
- I know it.
2:36
I know it, those crispy onions.
2:39
So,
2:43
I'm gonna add about a tablespoon.
2:51
Whoa.
2:55
Had trouble with that distance,
2:57
just having one eyeball. (laughs)
3:01
Alright, so I'm just gonna stir this up.
3:04
We just gonna sit it aside until it's time to
3:09
do its thing.
3:14
And that all, it's just like the same thing
3:17
as tossing it in some melted butter.
3:22
Alright, now while that's cooking,
3:25
I want to (sink running)
3:28
measure up.
3:29
I cooked more than five cups of green beans,
3:32
so I'm gonna come on ahead and get our measuring cup, y'all,
3:36
and make sure that,
3:40
(banging)
3:41
I don't use more than I know it calls.
3:43
(banging)
3:46
I'm gonna bring out the big bowl.
3:52
Okay, that's set aside.
3:58
And you're to cook these about 20 minutes.
4:02
Well, I'm not one,
4:06
I'm just not one for a crispy green bean.
4:10
You know, I'm a southern green bean girl all the way.
4:16
So I cook it up for about 30 minutes.
4:19
Alright, that's four cups.
4:21
Okay, I'm not gonna be too far off, y'all.
4:26
I think I just heard my cousin come up.
4:33
Okay, Eddie.
4:36
That's five cups.
4:38
So I wasn't too far off, was I?
4:43
- [Eddie] Wasn't a whole thing left.
4:44
- Nah uh, not much left.
4:47
And, (sink running)
4:50
we can put these on top of a salad or something.
4:53
We'll eat them.
4:56
We will eat them.
5:00
Hey, hey!
5:02
I told y'all I thought that that was my cousin coming in.
5:06
Get over here.
5:07
- [Cousin] Hey, Paula.
5:08
- And give me a hug.
5:09
- [Cousin] Come on, I'll give you a hug.
5:11
(laughs)
5:12
- You look good and I like that shirt.
5:15
- It's nice to be old, isn't it?
5:16
- I'm telling you, you can get away with so much.
5:19
- Is this my dinner?
5:21
- This is almost it.
5:22
(laughs)
5:24
So, I got to talking about this recipe, y'all,
5:26
and I forgot to tell you who that was.
5:29
That is my Aunt Peggy's oldest son,
5:33
and he has come in from Colorado to check on us.
5:38
Thank you, Lord! (laughs)
5:41
Okay, and we got our show,
5:42
and it's on the road, honey.
5:44
(stove ticking)
5:45
I've got my onions and my mushroom sauteed,
5:48
and now I'm gonna use the pan
5:51
that I boiled the green beans in.
5:53
I'm gonna put one and a half cups
5:57
of the chicken stock,
6:01
and I'm gonna bring that to a boil.
6:04
And then I'm gonna put our green beans in it.
6:09
No, I'm gonna put this, I'm gonna put our onions
6:11
and our mushrooms in it first,
6:13
and then I'm gonna make a slurry to tighten it.
6:18
So it's gonna act like we've used
6:20
a can of cream of mushroom soup, but we really haven't.
6:25
Alright, our broth has come to a boil.
6:29
And now I'm gonna make a slurry
6:32
using two tablespoons of corn starch,
6:36
just a little bit of water,
6:38
you know, you don't need a whole bunch,
6:41
just a little bit, just enough that it gets mixed up.
6:45
And we are gonna add our slurry
6:49
into our boiling chicken broth.
6:54
(liquid sloshing)
6:56
(tapping)
6:58
We got, oh you know, we got,
7:04
here we go.
7:06
(liquid splashing)
7:08
By George, I think we're gonna have
7:10
cream of mushroom soup, don't y'all?
7:12
(laughs)
7:16
(glass clinks)
7:19
(liquid sloshing)
7:21
(banging)
7:24
(utensils clanking)
7:26
(drawer shuts)
7:27
(liquid sloshing)
7:28
I'm gonna use my whisk because I don't want it to,
7:32
I don't want it to gum.
7:35
(whisk clanking)
7:39
Okay, there we go.
7:41
(banging)
7:43
Now, I'm gonna add a little house seasoning
7:49
if I can find it amongst my stuff.
7:51
And here it is, we have house seasoning.
7:56
I'm gonna add
8:02
about a teaspoon
8:06
(liquid sloshing)
8:07
There we go.
8:10
(banging)
8:12
And now I'm gonna add
8:15
our onions (spoon scraping)
8:18
and our mushrooms to that.
8:23
(liquid sloshing)
8:27
Look, doesn't that look just like we've got a
8:30
(laughs)
8:31
a pot of cream of mushroom soup?
8:36
Yes, it does.
8:40
Tastes pretty good.
8:41
May have to add a little bit more salt.
8:45
Now I'm gonna add
8:48
a half a cup of sour cream.
8:52
(banging)
8:53
So this is real easy.
8:55
It's just different from the way we were raised
9:00
on green been casserole.
9:02
Eddie, did your mother use the standard,
9:05
the one that was on, was it on the green beans,
9:09
or was it on the-
9:10
- [Eddie] I think it was on the onion can.
9:12
- On the onion can. (laughs)
9:16
I bet it was.
9:17
(liquid sloshing)
9:19
Look how pretty that does look.
9:23
Alright, one finger taste.
9:30
Now I'm gonna add,
9:34
so that'll probably be two teaspoons of house seasoning
9:37
and that's got the garlic and the onion and
9:41
all those flavors.
9:43
(banging)
9:44
So now I'm going to
9:49
stir the green beans
9:53
in all that goodness.
9:55
(liquid sloshing)
10:00
Looks delicious, Eddie.
10:02
- [Eddie] Uh huh, it sure does.
10:03
- And for people that,
10:07
I don't wanna call anybody a food snob,
10:11
but some people,
10:14
like my children,
10:16
you know, they like to use fresher,
10:19
fresh ingredients and stay away
10:21
from processed or canned foods.
10:26
So, this will be right in their wheelhouse.
10:34
Alright, we'll get it all sprayed
10:36
so it won't stick.
10:40
And in it goes.
10:43
Let me know if it's gonna work, Eddie.
10:44
- [Eddie] Looks like it will.
10:46
- I want everybody else to be able to see,
10:48
not necessarily me.
10:53
Oh yes!
10:56
I think that you would be real proud of this.
11:01
Maybe you can start a new tradition in your family.
11:05
(utensils clattering)
11:14
All of that goodness.
11:17
(pan clattering) (liquid sloshing)
11:19
All of it.
11:21
(banging)
11:23
And now we're coming back to our Panko
11:28
and our Parmesan cheese
11:32
and we're just gonna evenly spread that over
11:36
on top of our green bean casserole.
11:49
And all this does, y'all, is just have to reheat,
11:52
you know, everything's been cooked in it,
11:56
so not to worry.
12:04
(glass clinking)
12:05
Okay, 350 degrees,
12:09
20, 25 minutes, something like that.
12:13
I can't wait for y'all to see it finished.
12:15
Here, Eddie.
12:18
- [Eddie] Looks good.
12:20
- Bubbly, bubbly.
12:22
We'll taste this before
12:25
I call Aunt Peggy and George in
12:30
to taste.
12:31
You know, I'll make sure it's enough for them.
12:33
How bout it?
12:34
(Eddie laughs) Alright, here's your fork.
12:38
And here's my fork.
12:42
And I want your honest opinion on this, Eddie.
12:45
Okay?
12:48
Well, you hadn't-
12:50
- [Eddie] You go-
12:51
- You haven't forked up yours yet.
12:53
- [Eddie] You go first.
12:54
(laughs)
12:59
I'm a leftie. - Hey, hey, hey.
13:00
(laughs)
13:02
That was a cheater bite.
13:07
- [Eddie] That's good.
13:12
- Isn't it delicious?
13:15
- [Eddie] Yeah, I like the Parmesan topping.
13:17
- Uh huh, it gets kind of crusty.
13:23
Delicious.
13:25
I can't wait for our friends out there to try it.
13:29
(utensils clinking)
13:33
Perfectly yummy.
13:36
It's Eddie-approved
13:37
(Eddie laughs)
13:40
