- You know, what I'm fixing
0:02
to share with y'all is one of those dishes
0:05
that you have to have at Thanksgiving,
0:09
but it's probably the biggest leftover
0:14
of anything that you've done.
0:15
And that's cranberry sauce.
0:18
Now, I happen to love a bite
0:20
of cranberry sauce along with my cornbread dressing
0:24
but I've noticed that most of my family does not eat it.
0:31
And that's okay, but I still gotta have it.
0:34
So this is a way to just,
0:38
you know, doctor it up a little bit,
0:40
make it look like you spent some time on it.
0:45
I don't know about this cranberry.
0:46
It feels a little soft.
0:49
I'm gonna throw him out.
0:50
But it's important that you wash your cranberries,
0:54
and it'll tell you on the bag,
0:56
be sugar and wash your cranberries.
1:03
So I've got one bag of cranberries.
1:06
I think I have 3/4 of a cup of sugar.
1:12
And I have mandarin oranges.
1:16
And we're gonna need 1/4 of a teaspoon of cinnamon.
1:22
And we're gonna let this cook
1:23
for a while until the cranberries burst
1:29
and starts to get real thick.
1:34
And then we're gonna...
1:35
You definitely wanna do this
1:37
on the day before the meal, okay.
1:40
You don't wanna do it that morning
1:47
'cause you want it to be nice and chilled.
1:50
Okay, I've got my mandarin oranges
1:54
I'm gonna throw in there.
1:58
And we're gonna keep this stirred up, you know, pretty good.
2:05
Using this small pot,
2:06
at least y'all can see over in it, can't you, Eddie?
2:08
- Yes. (Paula laughs)
2:11
- You don't have to dip your head down in it.
2:14
All right, I think I wound up cooking this.
2:17
Took maybe 15 or 20 minutes over medium heat,
2:25
once it starts bubbling,
2:26
and you see the cranberries starting to burst.
2:33
This is so good, y'all.
2:36
And you couldn't see the mandarin oranges
2:40
absolutely cook away to nothing.
2:43
So Eddie suggested...
2:45
He said, "We got an orange.
2:49
Why don't you just put a little orange in it?"
2:51
And I said, "Way to go,"
2:52
'cause the mandarin orange was so pretty in it
2:58
until it, you know, got cooked out.
3:00
So this is what we're gonna do.
3:04
I'm gonna stir it in there while it's hot,
3:10
and they'll probably break down a good bit more.
3:12
But it's just pretty in there.
3:16
the little taste of cinnamon in it,
3:24
if you wind up with a lot of leftovers,
3:27
I'll share a few ways to use this up with.
3:32
It's delicious dolloped on a bowl of ice cream.
3:37
For a more healthy breakfast,
3:40
a dollop of this on some Greek yogurt,
3:47
on a block of cream cheese
3:51
as an appetizer along with crackers.
3:54
- [Eddie] Turkey sandwich.
3:57
- Turkey sandwich. - A turkey sandwich,
3:59
A lot of us around here like cranberry sauce
4:03
on our turkey sandwich, and it's very, very good.
4:07
But so that's just a few ways
4:11
that you can, you know, make use of your leftovers here.
4:18
Let's see, I think that was ice cream, yogurt.
4:23
I was thinking about several things.
4:28
- [Eddie] Spread on toast.
4:29
- Oh yes, just on toast. (Eddie chuckles)
4:33
You know what else it would be delicious on, Eddie?
4:37
A baked sweet potato would be so good.
4:41
So you'll find ways to use this up.
4:48
Mm, and see how the cranberries bursted?
4:53
It's bursted a word? (laughs)
5:01
It's amazing what that little bit of cinnamon does to it.
5:04
You wonder like, "What was that I just tasted?"
5:10
Once you just taste it,
5:13
it's called good. (laughs)
