0:00
- Guess what today is, y'all?
0:03
Today, we start our 12 Days of Christmas Cookies.
0:09
I can't believe it's that time of year.
0:11
And I had just asked Eddie,
0:14
Eddie, where, where do we keep
0:16
all of our Christmas decorations and stuff?
0:20
He said, "out in the garage, Paula."
0:22
So I asked him to just show it to me
0:28
and kinda see what we've got to battle with in here.
0:35
Look, we haven't even taken up our Halloween yet.
0:39
We're talking about Christmas.
0:46
- [Theresa] Good Lord.
0:50
You might need to move out of the way.
0:54
- [Paula] Okay, we'll move out of the way.
0:56
All right, so, but this is every bit
0:58
of our Christmas right here.
1:00
- [Theresa] Y'all in the way if y'all want people to see.
1:03
- All right, those red boxes over there,
1:05
is that Christmas too?
1:09
- This is outdoor stuff.
1:15
- [Theresa] Kinda goes everywhere.
1:17
- You know, I don't think I can face this today, Eddie.
1:22
So why don't we just go inside
1:24
and start our Christmas cookies.
1:26
What you think about that and tackle this another day?
1:31
- No, I'm not a procrastinator.
1:36
All right, well, we've got all the stuff up
1:38
to start the cookies so I just love this
1:41
'cause I know somewhere in there is my Binmer dolls.
1:46
Y'all, going out in that garage
1:48
and tackling that stuff today, I can't do it.
1:53
How about you, Eddie?
1:55
Nothing like doing it tomorrow though.
1:58
All this stuff came out of a cabinet in the house,
2:00
not out in the garage.
2:01
- Yes, this is not out of the garage, y'all.
2:04
And today starts our 12 Days of Christmas Cookies
2:09
and the first one I'm starting with,
2:11
I've had this in my repertoire for a long time.
2:15
They're chocolate meringue smooches
2:20
and I'm gonna make 'em real small
2:24
so they're just kinda like bite size
2:27
and I do love meringue cookies.
2:28
Now, the first thing I'm gonna do
2:30
is I'm gonna take three egg whites
2:33
and I'm going to beat them until they're stiff.
2:40
All right, y'all, those are stiff enough.
2:42
So what I'm gonna do now
2:44
is I'm gonna add my confectioners' sugar
2:50
and I'm gonna fold it in a little at a time
2:54
and I think I told y'all that these are meringue,
3:02
I think I told y'all that.
3:04
So I've got some chocolate over here
3:06
like six ounces of melted chocolate chips
3:12
and I got to let them cool just a little bit.
3:20
Okay, I swear we added that in two dumps.
3:29
So just gonna fold, fold, fold.
3:36
I'm gonna add our vanilla.
3:49
And then I'm gonna fold in some walnuts.
3:54
You can use any kinda nut you want for this cookie
3:57
but I just really love a walnut.
4:02
And this is saltine crackers crushed.
4:11
So I'm just gonna fold all this together
4:14
and then we're gonna fold in our chocolate
4:17
and we're ready to put 'em in the oven.
4:21
Y'all, I just wrapped a cold rag around the bowl
4:26
so that helped cool it so.
4:34
I'm just gonna fold that chocolate in.
4:39
You don't want it so hot that it'll mess with your meringue.
4:59
I like it streaked like that.
5:11
It's looking pretty good.
5:36
Okey-doke, now, after we get this folded all together,
5:41
we are gonna make, it's supposed to make four dozen
5:49
so I'm gonna be using a half, a half of a rounded teaspoon.
5:55
So you can see they're just gonna be a little,
6:06
- [Eddie] They kind of puff up when they cook though, right?
6:25
Just have to be patient and actually fold,
6:31
fold that together and try not to be tempted
6:48
Now, I'm using parchment paper
6:50
but just in case, I sprayed it a little bit
6:57
so I think I might spray this too.
7:07
That helps it just come out a little easier.
7:13
Okay, to me, that's a rounded one.
7:23
They're gonna look like little kisses.
7:49
Y'all, these meringues are as light as a feather.
7:55
I mean, feel one, Eddie, they don't weigh anything
7:58
so it can't be many calories, right?
8:04
- So did you taste it yet?
8:10
Does it reminds you of Gottlieb's?
8:12
- [Eddie] It does, yeah.
8:17
I know I tried for years to formulate a cookie
8:30
and maybe I did it with this one.
8:36
Okay, so how many did it make?
8:39
You had how many on your sheet?
8:40
- 24. - And I had, I had-
8:43
- 20 so we got to 44. - 44.
8:46
- [Theresa] And I ate the rest of the dough.
8:49
- So 44 and it says, it says it makes 48 so.
8:54
- [Theresa] I've already had my four cookies.
9:00
So we got 44 plus the dough in Theresa's belly.
9:11
What'd you think, Eddie?
9:14
It's a good size too.
9:15
- [Paula] Yeah, you know,
9:16
I thought it was gonna be so teeniny
9:19
but that's a perfect size
9:20
just for a little bite of something sweet.
9:26
- [Theresa] Are you gonna try one?
9:30
- Does a fat puppy poop?
9:44
And they just cook so quick, y'all,
9:48
which I like that you can touch 'em
9:50
and they actually have like a hard surface on 'em so.
10:04
Theresa, I know you had the raw batter but.
10:09
- Oh gosh, these do look like the Chocolate Chewies.
10:18
- I'll be making these.
10:26
I guess I ought to offer Aunt Peggy and Darlene one,
10:29
shouldn't I? - [Theresa] No.
10:34
- Oh, we just gonna eat in front of 'em.
10:38
All right, there you go.
10:39
You ready for a chocolate meringue?
10:45
You looking at me like that for?
10:49
All right, Aunt Darlene.
10:51
I think they're just perfectly yummy.
10:55
Light, just a little something sweet like y'all.
10:58
- [Darlene] Very good.
11:04
- Is done and we'll do day two another day.
