Come into my kitchen, you little preciouses! And let Jamie and I frighten you with our scaralicious dishes
0:12
like our cheesy, gooey monster mash. Come on in, y'all, for a little bite
0:17
A sweet as candy corn and butternut squash. Love butternut squash. We're gonna have you jumping out of your seat
0:24
with our crunchy crab cake spiders. Yummy, y'all. Mmm, so good. And you know, it wouldn't be a trick-or-treat without a Paula Deen Sweet upside-down pumpkin-filled cupcake
0:36
This is going to be a fun show, y'all. I can already tell. Why don't you put your broom down and let's cook
0:48
Let's get my ride and get started on the wonderful Monster Mash
0:54
So I'm going to start grating up two cups of Kobe Jack blend
1:00
While you're doing that, I'm going to strain off some tomatoes that Mom has put up this summer
1:05
And you've always canned and done preserves, and I love being able to go get fresh vegetables in the fall time
1:11
Yes. While these are straining off, Mom, I've got two cans of refried black beans
1:16
Now they're about a pound apiece. This cheese is kind of soft, and it's hard to grate
1:21
So if you'll put your cheese in the freezer, just get a nice icy cold all the way through
1:29
It grates so easily. And while these don't have any juice on them, this is really the refied pasty
1:36
So I'm going to have to dig them out of here. This is a great appetizer. So if you have people over, this is the dip that you already have put out
1:42
It cooks really quickly, and it's got a lot of flavor in it
1:46
You would eat this with the little chips. The corn chips are really, really good with it
1:53
All right. Now, I'm going to put, Jamie, a tablespoon of taco seasoning in here
2:02
And this taco seasoning just comes in little packs. It's your grocery store
2:08
So one tablespoon of taco seasoning. That smells good, too. Oh, I love it
2:13
Love it, love it, love it. about five minutes before this bakes
2:18
why don't we cover it with another layer of cheese? Can't have too much cheese. No
2:22
That looks awesome. Now, we're going to put this into a casserole dish
2:26
I'm going to spray it with a nonstick spray. Mm-hmm. I'm going to put all this dip straight into this bowl
2:36
So, I'm going to get out some more cheese, and I'll be grating that
2:41
because this is not going to take all that long to cook, y'all. It smells so good
2:46
I love Mexican food. You know... It's a good change from fried chicken and biscuits
2:51
It ain't that good a change. I didn't say it was that good. This does kind of look like a gruel
2:56
It does look like a monster mash. This is going into the oven at 325 for about 25 minutes
3:03
The last five minutes, son. Why don't we put the cheese on it, okay
3:09
So what else are we going to work on? Now, I've got a wonderful corn and butternut squash
3:13
Love butternut squash. I do, too. We're just gonna saute it. I've got two strips of bacon that I've cooked extra crispy
3:21
Two strips. Why bother, right? Why even heat up the stove? That's not even half a sandwich work
3:28
I know it. So, son, what we need to do is peel our butternut squash
3:36
Y'all be sure and join us next week when we finish our butternut squash. Best dishes
3:40
Here, smart Ellie. So I'll do your onion. How's that? Bacon grease that we've rendered out of two pieces of bacon
3:58
You know, it's not a bunch, but just enough that it's going to give our onions some fat
4:06
Now, son, I'm going to add some butter. Just a couple of tablespoons to my bacon grease
4:12
Good plan. This is not an easy thing to peel. No, it's not, son
4:16
Okay, I'm going to go in with the second half of our onion. This is a trick, not a treat
4:25
In fact, if your husband is around, you know, you might want to get him to help you with this task
4:34
We're going to take our seeds out. I'm gonna take the spoon, and I'm just gonna haul out y'all like the spidery, veiny part
4:48
Want it cubed up? Yes, please, darling. Look, y'all
5:03
This is my witch. She will scare the britches off of you if you go by and you accidentally make a loud noise and you not expecting her to start screaming
5:19
I saw Michael Groover the other night. He jumped out of his skin
5:24
He is not a scary type man, but he whistled for the dogs as he was walking by her
5:30
And all of a sudden she started that cackling and he like to jumped into the next room
5:35
It was so funny. All right. Now, I'm going to take my bacon
5:42
You know, it's so nice and crisp, I don't even think I have to cut it
5:46
I think I can just rip it up. And then we're going to drop our butternut squash into our onions
5:54
How about this corn, Mom? And we're going to drop our corn, too. Now, we're using a half a cup of just a whole kernel corn
6:02
You know, if you've got fresh, your fresh is in season, by all means, use it
6:08
Okie doke, son. Toss that in. Along with the corn, one and a half teaspoons of dried mustard
6:18
half a teaspoon of salt, half a teaspoon of pepper. I'm going to go back down here
6:24
and I'm going to finish grating our cheese for the top of our refried black bean dip
6:32
or as Jamie loves to call it, monster mash. Jamie's just adding the top layer of cheese
6:42
and then we're gonna let that melt, y'all, for about five minutes. Doesn't that smell delicious
6:48
Mm. My little precious prince and princesses. He, he, he, he, he, he
6:56
Coming up next, one bite of our Monster Mash is gonna have me under a spell
7:01
We're gonna do the mash. Then these are not gonna be your normal crab cakes
7:06
Crunchy crab cake spiders. And later, you know we've been tricking you all day
7:12
Boo! Well, now it's time we get started on the treat. Don't go anywhere, y'all
7:20
Things are looking very, very spooky here in our kitchen. Kitchen of the Good Witch of the South
7:29
We got some delicious recipes. In fact, Jamie's fixing to get the first one out of the oven that we made in
7:37
and it's a monster mash. We're going to do the mash. We're going to do the mash
7:44
Be careful of that, Mama. Oh, Jamie. Look how beautiful it is
7:48
It looks fabulous, doesn't it, y'all? I put some cheese on top a few minutes ago, and that's just what it needed, I think
7:54
If you'll guess, please. It'll be hot as fire. Yes. Oh, looky there
8:03
You better get back up on my chip, you piece of cheese. You cheese head
8:12
Mmm. So good, y'all. A little monster mash. That's going to be a big hit
8:18
And how quick and easy. It's awesome. Mmm. Mmm. So yummy. Come on in, y'all, for a little bite
8:28
Did you like it? It was good. That's good. Yes, it was very good, wasn't it
8:39
Well, we got something else good working down here on the other end of the counter, y'all. We're going to make crunchy crab cake spiders
8:47
What are we going to start with? Is this a pound of lump crab meat
8:51
Mm-hmm. So, son, I've got my pan here. Now, I'm going to use a little vegetable oil
8:56
to saute our crab cakes in. I'm going to get started on this red pepper, okay
9:03
Along with just a tablespoon or two of butter. I'm going to hold back a little bit of this pepper for the legs, Mom
9:09
I'm going to come down here, and I'm going to mince up a can of water chestnuts
9:15
I'm going to need a fourth of a cup. The red bell pepper is going to be so pretty
9:20
and add color to our delicious crab cakes. Jamie, what is Jack going to go as this Halloween
9:27
This year, he's going to be a shark. He told me the other day, he found a little tiara upstairs in the guest bedroom
9:35
I mean, it's not but about this big. And he said, what is this, Ginny
9:40
And I said, that's a tiara, son. That's what princesses wear. He said, my mommy is a beautiful princess
9:50
Yeah, he started saying that. Yes, if you would like to take that for Mommy to wear, you may
9:57
But how sweet is that? His Mommy is a beautiful princess. Now I've got some green onions
10:04
I'm going to use a little white and a little green for the color. All right, I'm going to put in like a quarter of a cup
10:10
Okay. So in that goes with our bell pepper. And I'm going to go ahead and crack our egg
10:18
All right, so I'm gonna beat our egg. Mom I putting in a half a cup of green onions All right I gonna put in two tablespoons of mayonnaise I gonna add a quarter of a teaspoon of wasabi powder
10:34
I wish y'all could have seen me about, oh, 18 years ago
10:40
I know, it was... 19 years ago, when we first started our business, we were doing the bag lady business, and it was Halloween, so..
10:45
I know what you're gonna say, son. Mama made me dress up like a bag lady and get in a pink and green truck
10:50
and drive around town and beg people to buy tuna sandwiches. What a sport you were, son
10:55
Well, one of the best lessons that I've learned from you, Mom
11:00
and it's a good lesson for everybody out there. Don't take yourself so seriously because nobody else is
11:05
So, you know. No, laugh and have a good time. If you laugh at yourself first, you can't hear the other people laughing at you
11:10
That's exactly right. Come on with them crackers, Mom. Y'all, I just took one sleeve of soda crackers, y'all
11:19
Beat them to death. Beat them to death, yes. son, so this looks like a cup
11:24
And this is going to be our binder. We're not going to go
11:28
heavy with our salt, just like a fourth of a teaspoon, because seafood comes out
11:35
of salty water. So, just by nature, this is salty. So, we're going to need a teaspoon
11:43
of lemon juice, son. I've got my pan heating over here just waiting on your
11:48
crunchy crab cake spiders. Want me to fold this crab in here yet
11:52
Yes, son. I'll be careful. You don't want your crab cakes like a tuna fish salad
11:59
Yeah. You know, you want to know that you've got real chunks of crab in there
12:06
So we're going to lightly toss our crab meat in. What size are you thinking
12:11
Whatever you think for a spider. This is good patty sauce. Because we are going to turn these crab cakes into spiders, boys and girls
12:22
So tell everybody, Jamie, what we've got next planned for y'all. When we come back, we're going to turn our crab cakes into spiders
12:33
Y'all come right back. Coming up next, this spider is just too cute to eat
12:43
No, it's not. And later, all our cupcakes need is just a little pumpkin filling
12:49
Cream cheese and pumpkin. Love it. Boo! Welcome back
13:00
Happy Halloween, y'all! I'll pay you back. So our wonderful corn and butternut squash is ready
13:12
And I'm just going to do a little chiffonade of fresh basil. Sprinkle that over our squash
13:21
See these black plates? Got a little bit of sauce here, and now all this is is mayonnaise, a little bit of paprika
13:27
Got some salt and pepper in here. Now, look what I'm going to do here. Okay. I'm going to make three little circles
13:33
Uh-huh. Those are three big circles. Yeah. We're going to take a stick that we're going to drag through here
13:44
Oh, how cute. Looks like a spider web, son. Yeah, and this is where our spider's going to go
13:50
Oh, how cute. Isn't that pretty? Oh, yeah. Put the spider right in the center
13:56
Okay. So I'm going to just reach over here and get one of my spiders
14:03
and we're just going to take our red bell pepper strips, y'all
14:08
and we're just going to gently put those into our crab cake
14:13
I got a granddaddy long leg. Oh, you do. Love him. Look at that spider
14:22
Look how cute those look. You want to taste them? Yes, yes I want to taste
14:28
Oh, thank you. This spider is just too cute to eat. No, it's not
14:34
Mm-hmm. It's yummy, y'all. Mm, so good. Mm, mm, mm. Mm, I'm going to try our squash
14:45
Mm. Mm. Is that good, too? Mm-hmm. It's delicious. All right, well, come on down here
14:54
because we're gonna be making upside-down chocolate cupcakes stuffed with pumpkin. All right, y'all, I am gonna make a ganache
15:05
So I have a half a pound of semi-sweet chocolate that I have put into my double boiler
15:11
And when the chocolate melts, I'm gonna add 3-4ths of a cup of heavy cream, y'all
15:16
The cupcakes are so simple, and you know why? because I'm using a box
15:21
cake mix. Why wouldn't you? So you'll just need to follow the
15:25
instructions on the particular brand that you buy. I'm taking half an 8-ounce pack of cream cheese
15:32
I've got one cup of a prepared pumpkin. You can get it from the can at the store
15:37
I've got one cup going in here. I guess you could use sweet potato too if you wanted to But we using pumpkin today And I going to put in one cup of powdered sugar And I just going to beat this up
15:49
All right, in goes my water. I already added my three eggs
15:54
In goes my oil. Half a cup. And this is what's going to make these cupcakes so rich and moist
16:06
All right, son. So if you'd take that mixer and mix up my cake mix first, that would be great
16:21
And I'm going to spray my muffin tin so our cupcakes will come out beautifully simple
16:30
While you're doing that, Mom, I'm going to mix up my filling. Okay. I'm just going to give this a few stirs
16:39
and I'm going to use an ice cream scoop to fill up our
16:46
muffin tins, three quarters of the way full we're going to put this in the
16:55
oven y'all, 350 degrees for 15 minutes great, quick my chocolate smells
17:02
So now I'm going to add three-fourths of a cup of heavy cream
17:09
That's all ganache is. All right, so in goes my heavy cream
17:16
You can always melt your chocolate in the microwave, but you would have to be so very careful, y'all
17:23
because chocolate will scorch. Yeah. And once it's scorched, forget about it
17:30
When we come back, we'll be ready to stuff our upside-down pumpkin chocolate cupcakes
17:39
Yum. Yum. Eek! A spider! Killing! Killing! Coming up next, you know, I would try and help Jamie add the finishing touches to our cupcakes, but..
17:49
Looks like you've already been in the cupcake! Also, a few bites of our treat and..
17:54
The fat lady has sang. Hey, y'all. Welcome back to the Hallow-Dean Spooktacular
18:05
We've had Monster Mash. We've had spiders. We've had some delicious butternut squash
18:09
And now we're going to have our dessert. Here's where we're going to start. We've got our cupcakes that we've pulled out of the oven
18:15
And I'm going to take these and cut them right in half. Oh, look
18:19
Here she comes now. It looks like you've already been in the cupcakes
18:24
Happy Halloween. I ate too many cupcakes, y'all. How are the cupcakes coming, son
18:33
They're coming good. Do y'all like? I dressed up just for y'all
18:41
Well, let me ask the question that all of America is wondering right now. What do you have on under that
18:46
Nothing. Trick. All right, so what are we doing, son
18:55
We're just going to split these in half. and we've got two more left to do
19:00
and then we're going to take a mama if you want to get a knife and we're going to feel the inside of that
19:06
Can you work with your big arms? Yes. Like the Pillsbury Doughboy
19:24
Okay, we've got our ganache as it were. This looks beautiful. The little bit of that oil that you had in that measuring cup has made this really shiny
19:33
I'm just gonna put a little bit on top here. What would you like on yours? We got sprinkles. My tea. Or candy corn. Candy corn please
19:51
They're a little transparent. Yum. Would you like a fork? No. You're going to have to hold my plate. Okay
20:07
Mmm, mmm, mmm. Yum. Come here. Let me fix you up, son
20:16
No, I'm okay. I'll take a bite of yours. I feel bad. Look at me
20:21
Go like that. I feel right now. All right, now smile at everybody
20:26
I'm going with chocolate. and tell them happy Halloween. Happy Halladain. Until next Halloween
20:44
We wish you loving best dishes. From our kitchens to yours. The fat lady has sang
20:55
Happy Halladain, y'all
