We're going to use the flour tortillas. Exactly. And you already mentioned the tomatillas

We got these. These are, it's a neat, neat little thing. It almost tastes like a fried green tomato when you pull them off the grill

I've just put them on there long enough to score them, give them a little bit of color. They have a real smoky flavor, because I tell you what, I snuck one a few minutes ago

They're great. And these taste real, real smoky. And they come in almost like a parchment paper, y'all

And you just peel that paper away. That's how beautiful. And this is where the verde comes in

We're making a salsa verde for these fish tortillas. Okay. So if you can get started with this, none of these ingredients are strange to a salsa

Uh-huh. You're going to be using a little bit of salt, a little bit of sugar, a little bit of pepper

You're going to have cilantro. You're going to have jalapeno peppers. And, of course, you're going to have the tomatillas

And a little bit of onion. Okay, I'm putting a little salt here. I'm just going to chop your onions, and then I'm going to put the fish on. Okay

So there's a little fresh ground pepper. I hid our cilantro under here

Your onions are chopped. The grill is on and ready. And what I'm going to do, y'all, to get the grill started

is I'm going to just dip this towel very, very lightly into some oil

I don't want to saturate it because I don't want a big fire here. But I'm going to make sure that my grill isn't sticky when I put the fish on

because the worst thing that you can do with fish is have it stick all over the grill. Now, I'm adding a tablespoon of lime juice, son

And this is a seeded jalapeno pepper that you've got. Right. And I'm going to put the whole amount in

It is, and it's going to give it that good jalapeno flavor, but it's not going to be so hot because you know where the heat is

Yeah, we've seeded it, and we've taken the vein out of it. And I'm going to cut this fish into, if you see, I got about inch thick strips here on this fish

This is perfect for a fajita size. And you want me to put this whole onion in here

I do, every bit of it. That's about a half of a white onion there. Okay. And I'm going to lightly season this fish with a little bit of sea salt and a little bit of pepper

We're going to do a grilled rosemary lamb chops. So I'm going to go ahead and clean the grill off

Love lamb chops. I'm going to just make us a marinade. And my marinade is going to be some fresh rosemary

I got about two pounds of lamb chops, so I'm going to use about a tablespoon of rosemary

You know, rosemary is very, very potent. So I'm just going to mince this up

And now what are you doing, Bobby? What are you making? I'm putting together your portobello and asparagus salad

Okay. I'm just prepping the asparagus. We're going to be making that next. So you're just prepping

It's going to go perfectly with the lamb chops. Oh, it'll be delicious. And I know that you don't like this cut

I know you like it popped off. That's what you always taught us. So I'm snapping your asparagus. I do. I like it just kind of snapped off

And these are a couple more of my favorite things. I love asparagus. I love portabella. Love cooking with this stuff

I love portabellas too, son. Now save those stems, Bobby, because when you're making stock, you can throw those in and they'll really, you know, jazz up your stock

Okay. Otherwise, I'm just going to leave the portabellas flat like this. I'm going to put them on the grill exactly like this

So for your salad, we got the portabellas. I'm going to save the stems. The asparagus is prepped and ready to go

And I'm just gonna take a bunch of these little tomatoes, slice them in half

All right so there my tablespoon of rosemary And then I gonna mince up about two teaspoons of fresh garlic So there we go Mmm

Garlic's nice and minced. And then I'm going to just eyeball, you know, a couple of tablespoons of olive oil

Just enough to get around all those chops. Well, maybe three tablespoons of olive oil

Now, I'm just going to season our lamb chops with just a little salt and pepper

And I'm going to let these marinate, y'all, for about two hours

I'm just going to drop them in the bag. And I'm using a freezer, a freezer weight, Bobby

So they're real, real strong. Yep, and you can put that in the fridge and, you know, like you said, for two hours

or you could let it stay there overnight if you wanted to. Overnight. And it just so happens

Now, I went ahead and put our portabellas, or Bobby went ahead and put our portabellas on the grill over break

because they take longer than, like, our little pencil asparagus. So look at these beautiful mushrooms, would you

They are. They're perfect. We're just going to throw our asparagus and our tomatoes right up here on this little extra grate

Okay. Let those heat up. and if you would, just be cutting our portabellas like into strips

And we're going to do something a little different. Now, the recipe in my magazine just calls for the portabellas

the asparagus, and the tomatoes. But because we need a starch, well, maybe we don't need it

but we want it. We want it. We want a starch to go along with those lamb chops

We're going to toss this in pasta, So that'll give us our starch and our vegetable all in one dish

Now, while Bobby's doing that, I'm going to come around here, and I'm going to make us a little seasoning to go on to our pasta and our vegetables, Bobby

And I'm going to start with one teaspoon of salt, two teaspoons of dried oregano

one and a half teaspoons of dried parsley, a teaspoon and a half of onion powder
