Grilled Corn and Watermelon Salad

Well, y'all, we're still tailgating here in the kitchen

Jamie and I are fixing to make y'all the most incredible grilled corn and watermelon salad

You know, during the summer, we have so many wonderful watermelons here in South Georgia

And one of my favorite salads is a watermelon with feta. Well, today we're going to make a watermelon and corn

We've got three ears of a beautiful, fresh, white corn. Jamie's going to olive oil it

He's going to salt and pepper it. And we're just going to char it off here on the grill

This will take about eight minutes, y'all. Yeah, about eight minutes. And after our corn is charred, we're going to let it cool

so that we can actually touch it without burning ourselves. and one of the most wonderful little tricks to..

It's the dumbest kitchen idea I've ever seen. Well, to me, it's just so easy and it's just so neat

It does hold it for you. It's so controllable. Whoa, just as I said it was controllable

What a great idea. Mom, you remember how many watermelons Bobby and I ate when we were boys

Oh listen as many as I ate when I was a girl A couple years we got gnats down in Albany that just get in your ears and in your eyes and they stay on your watermelon

So for a year or two, I used to swish them away, and then I just started eating them instead of getting rid of them

They go up your nose, into your ears, into your eyes, but we actually call them dog pecker gnats in southwest Georgia

because that's where you will find them. I've never called them a dog pecker gnat

Well, son, that's really their name. That's their name? Dog pecker gnats, Bobby

That's what they call them in southwest Georgia. You know it, Bobby, don't you

That's what they call me in high school. All right, so we got our bowl

We're going to transfer our corn to our bowl. We're going to toss in our watermelon

And this recipe, originally, I would chop up cilantro. y'all, into this salad

But Jamie is one of those people, and he's not the first person that has said this to me

Some people think cilantro tastes like soapy dishwater. And I find that so strange

But he swears that's what it tastes like, so I substituting fresh mint today for cilantro So just put that in the back of your memory bank and remember if you a cilantro lover swap out this mint for that herb

This is one of those things that I really didn't believe in until I tasted it

You know, a watermelon, feta, onion, corn salad, but it's really so good

It is so good. Some of these bites are so very big

I'm gonna, Jamie is like Gordon Elliot. They eat a filet mignon, they cut it in two

take two bites and they're done with it, it's gone. You're gonna go back and redo everything that I've done

No, I'm just gonna make it so a bite will fit in your mother's mouth

All right, you're dicing up green onions, or as we call them down here, spring onions

Dog pecker onions. We call them down here. Where is Miss Georgia

Come here, Miss Georgia. Miss Georgia happens to be from the town that we were all born in, Albany, Georgia

Am I lying when I tell everybody that's what the name of that name is

Mama, come on. Tell everyone what the name is. Come on, Mama's right

Now you tell her. Dog pecker knife That me That exactly what they call them Thank you Miss Georgia

Okay, well, we'll salt and pepper this because I have never in my whole life

eaten watermelon without first salting it. Now, while I was busy looking into Miss Georgia's beautiful face

Jamie tossed this in a little rice wine vinegar. He chopped up two or three green onions

or spring onions as we call them down here, threw those into our bowl

I have since salt and peppered it, and now I'm gonna serve us up some

It is delicious. And the feta cheese in it brings it to a whole new level

And you know what? It's almost as good as having a dessert
