- Hey, y'all, I'm Paula Dean.
0:02
And today we're going to create
0:03
chocolate confections
0:05
that are the perfect pick-me-up for any day.
0:08
And what's a better compliment
0:10
for chocolate than chewy caramel.
0:12
So first we got to go down to
0:13
River Street Sweets to pick up
0:15
some of the freshest, creamiest caramel.
0:18
and then we gonna bring it back here,
0:20
and we're just gonna drench the brownies
0:21
and ice cream with it.
0:22
Then I'm going to be going back to my kitchen
0:24
where I have my recipe book open
0:26
to page delicious,
0:28
because that's the only way
0:29
to describe my Chocolate Toffee Trifle.
0:32
And then finally
0:33
it's the Savannah Chocolate Cake
0:35
smothered in hot fudge sauce.
0:37
So y'all bring your sweet tooth,
0:38
because there's always room for chocolate.
0:42
Good morning.
0:43
Today's show is about
0:45
sexy Southern chocolates,
0:47
and I'm going to be running
0:48
down to River Street Sweets
0:50
in hopes of finding some caramel
0:52
to go with our chocolate.
0:54
It's going to be a real sweet show today.
0:56
So I hope y'all will stick with me.
1:03
- How ya doing?
1:04
- [Store Attendant] Hi,
1:04
would you like to try some peanut brittle?
1:06
- Oh, I would love to try some of your peanut brittle.
1:09
Mmm, everything looks so good,
1:11
but what I'm, what I'm here today for
1:13
is actually some caramel.
1:14
- [Store Attendant] Pat is whipping up a batch
1:15
of caramel right there for you Paula.
1:17
- Can I go in there with Pat?
1:18
- Yeah, you can go in there.
1:20
- [Paula] Hey Pat.
1:21
- [Pat] Hello.
1:22
- The girls tell me that
1:25
you are you getting samples of praline ready?
1:27
- Yep.
1:28
- What's wrong with this, right here?
1:29
- That one is been sitting around.
1:32
I don't give out crumbs.
1:35
- I'll eat all your...
1:36
- Here, try this one.
1:37
- I'll eat all your crumbs.
1:39
The girls tell me you have
1:41
my caramel almost ready.
1:42
- Yes ma'am. Right here.
1:43
- Now is this the same caramel
1:45
that you cover your apples with?
1:47
- Yes, ma'am.
1:48
We put it in the bear claws also.
1:50
- [Paula] Oh, it's so, so good.
1:52
Do you want me to lick your beaters for ya?
1:56
It's temptation, won't it?
1:58
Oh my goodness, yes.
2:04
Do you think he'll notice?
2:12
Well Pat, you're the Miami.
2:13
- [Pat] Here you go.
2:14
Careful, it's kind of hot.
2:16
- [Paula] It is hot, isn't it.
2:17
Oop, let me get a good grip.
2:19
Well Pat, thanks honey,
2:20
and I'll see...
2:21
- You're welcome.
2:21
- I'll see you next trip.
2:22
(Soft Classic Rock Music)
2:29
Isn't that a great store.
2:30
When I want to give somebody a special gift
2:32
I always call them.
2:34
Cause they've just got the sweetest candies
2:37
in the world and I lucked up today.
2:39
I came back with a caramel
2:42
and I can't wait for us to use it.
2:44
And the first recipe
2:46
that I'm going to start with
2:47
is so quick and easy today.
2:49
I'm actually going to start
2:51
with a pre-packaged brownie mix.
2:54
And you'll just follow the instructions
2:57
on the brownie package.
2:59
Do just like it says now,
3:01
I actually prefer the brownie mix
3:03
that they refer to as a chewy brownie.
3:06
So follow the instructions
3:08
for the chewy brownie,
3:09
and they'll be so good.
3:11
Now mine calls for water,
3:13
oil and two eggs.
3:18
We're going to beat this up for about 50 strokes.
3:21
It's so simple.
3:21
You don't even have to pull out
3:23
your electric mixer for this one.
3:25
Alright, now I've given this one about 50 wacks.
3:29
So I'm going to come over here
3:30
and I'm going to lightly grease a 13 x 9 x 2 pan.
3:35
I'm just going to scrape that into our pan.
3:40
I'm going to spread those out evenly.
3:44
And now I'm going to take brown sugar and butter.
3:49
And my butter has been brought to room temperature,
3:52
so it's nice and soft.
3:54
And I'm just going to cut that in.
3:57
By the time you get it right
3:57
it should look like kind of
3:59
a very coarse corn meal.
4:01
Now I've got our butter cut into
4:03
our brown sugar and I've thrown in some pecans
4:07
and I'm gonna just stir those around
4:10
into our brown sugar and butter.
4:13
And now I'm going to sprinkle.
4:15
They sit on top.
4:17
This is a great way to take
4:18
a pre-packaged brownie mix
4:20
and make it extra special.
4:23
All right, now we're going to put this in the oven
4:25
and we're going to cook it
4:27
according to the directions on our box,
4:30
which is 350 for about 25 minutes.
4:35
All right, I've got that one in the oven ready
4:37
and you know I've got another one
4:38
right over here waiting to come out.
4:43
Oh, and it smells so good.
4:46
I'm going to sit him right there
4:49
because I'm going to dig into some
4:52
of this rich caramel
4:55
that we got from River Street Sweets.
4:58
And I'm actually gonna, ooooh
5:04
Doesn't that look just delicious?
5:07
So delicious.
5:09
Now I'm going to heat this very lightly
5:11
because I'm not through with those brownies yet.
5:14
There's some more things we're going to do
5:16
to those bad boys.
5:18
And while I'm waiting for that to soften
5:20
I think I'll go ahead
5:21
and start cutting on my brownies.
5:24
Oh gosh.
5:26
That crunchy top is so delicious.
5:32
Right now,
5:33
caramel starting to heat up a little.
5:37
Oh, I think that caramel's about to get
5:39
right where we want it.
5:42
All right.
5:43
I think that I'm going to begin by
5:46
taking me out a brownie.
5:51
You know that first square is
5:53
always the hardest to get out.
5:57
I think I got it.
6:03
Mmm, he looks so good.
6:10
I've been a good girl
6:11
so I think I might put two on there.
6:13
All right.
6:14
I'm going to turn this down, extra low
6:16
cause my caramel is just perfect
6:20
to finish off this dessert.
6:22
I've got some ice cream
6:24
already made in the freezer.
6:28
I'm going to just use a store-bought ice cream for this
6:31
rather than making any
6:33
cause I want this to be delicious,
6:35
but quick and simple.
6:37
So I'm going to just get me
6:39
a nice round ball of ice cream
6:42
and I'm going to kind of quickly form him in my hands
6:46
melt him quickly,
6:48
and I'm going to toss him in nuts.
6:50
Now you can actually do this earlier.
6:52
You can make you a bunch of these
6:54
and having the freezer right ready.
6:58
Ooh, that's looking like a pretty good Sunday,
7:01
Isn't it?
7:02
I'm going to drizzling him with
7:04
a little of the caramel from River Street Sweets.
7:09
To go on top of the caramel
7:11
that I actually baked into the brownie.
7:15
Oh.
7:17
And I can't eat this without whipped cream.
7:26
Mmm. Mm mm.
7:27
And a cherry on top.
7:29
Doesn't he just look wonderful?
7:32
And this is one of those dishes
7:34
that's nice to share with somebody.
7:39
Look the caramel is beginning to harden from the cold
7:42
of the ice cream.
7:47
No wonder they love those caramelized brownies.
7:50
Y'all grab a cup of coffee and don't go anywhere,
7:52
cause coming up next,
7:53
I'm going to be making a Savannah Chocolate Cake
7:56
with a hot fudge sauce.
7:57
So y'all stick around.
7:59
It's going to get sweeter.
8:07
I so hope y'all are enjoying the show.
8:09
And if you do.
8:11
Be sure to click like, subscribe and
8:14
notification bell so you'll never miss a video.
8:18
And we'll be right back after the break.
8:25
I'm just gathering up the last
8:27
of the couple of things that I'm going to need
8:29
to finish off my Savannah Chocolate Cake
8:33
with a hot fudge sauce.
8:34
Now I'm going to start by putting our brown sugar
8:37
in our mixer and I'm going to use
8:39
about a half a cup of shortening, not butter.
8:47
So I'm going to cream those together.
8:50
All right.
8:51
Now I'm going to add a little butter milk
8:52
and you'll see I keep playing
8:54
with the speed on my mixer
8:55
depending on the appropriate time
8:58
for high speed versus low speed.
9:02
All right, I've got some chocolate
9:04
that I've melted.
9:05
So now I'm going to just
9:07
add that to the cake mixture
9:09
and I'm using an unsweet chocolate
9:12
for the cake batter.
9:14
Alright, while that's mixing,
9:15
I'm going to take all purpose flour
9:17
and a little salt
9:20
and baking powder
9:21
and sift those together real quick.
9:26
And now I'm going to add my eggs
9:29
one at the time.
9:35
And the last one.
9:39
All right, now I'm going to lower that speed on the mixer.
9:42
And I'm going to add our flour to that
9:45
a little bit at the time.
9:48
And you can see it starting to get
9:49
nice and creamy now
9:51
and a nice chocolatey color.
9:54
All right, now I'm gonna finish off our cake
9:56
by adding about a teaspoon of vanilla flavoring
10:00
and we're ready to go.
10:01
There's nothing to it.
10:07
And isn't that a pretty chocolatey color.
10:10
Now I'm gonna pour my batter
10:11
into a prepared greased pan.
10:17
It's been dusted with flour.
10:21
And I'm gonna spread that out
10:23
evenly into our pan.
10:26
And then I'm going to give it
10:27
just a couple of wacks on the counter
10:32
to level it out.
10:34
And that'll prevent little holes
10:36
all through your cake
10:38
because you've gotten that air out of it
10:39
and brought it to the top and busted them out.
10:42
Okay, so this one's ready to go in the oven.
10:44
We're going to cook it
10:45
at 350 for about 40 or 45 minutes.
10:53
And while that's baking,
10:54
I'm going to come over here
10:56
and make our fudge sauce.
10:57
So I'm going to start
10:58
with a stick of butter
11:00
and German chocolate.
11:03
I think that's about four ounces.
11:06
And then an unsweetened chocolate.
11:09
And we're just going to let that melt together.
11:11
And then we don't have
11:12
but three more ingredients to add to it.
11:17
I'm going to add a little bit of evaporated milk.
11:22
You can hear our pan's nice and hot.
11:25
And then we're going to add
11:27
a little bit of powdered sugar.
11:29
And we're just to go back and forth
11:31
with these ingredients until they're all used up.
11:35
The sauce is going to be delicious
11:37
on that cake.
11:39
All right, the rest of the milk
11:42
and then the rest of the powdered sugar.
11:44
Now I'm going to let this come to a nice boil
11:46
and cook for about eight minutes
11:49
until it's thick and creamy.
11:50
And that's it.
11:52
There's nothing to it.
11:53
Now I've got another cake
11:54
in the other oven
11:55
that should be ready
11:57
and we'll pull it out.
11:58
Let's see what we've got.
12:03
Oh, it looks good.
12:06
And you can see
12:07
by me knocking out the air bubbles,
12:09
what a smooth finish it gives us to our cake.
12:13
Now I'm going to take this off of the stove
12:14
cause I've actually made some earlier
12:17
and I'll show you what it looks like
12:21
after it's cooked for eight minutes
12:22
and cooled a little bit.
12:24
You can see it's kinda gotten thick,
12:27
looks so good.
12:32
Well, I don't know about y'all
12:33
but I'm ready to have me a piece of that chocolate cake.
12:36
But before I serve myself a piece of cake
12:39
I'm going to add the vanilla to this sauce
12:41
because you know you don't want to add extracts
12:44
while your dishes are cooking
12:46
because you don't want that flavor to evaporate,
12:48
so we're going to add it at the last minute.
12:51
Okay.
12:52
Mm. Looks delicious.
12:54
And I think
12:56
with the aroma of the chocolate,
12:58
it just smells so good.
12:59
And you know,
13:00
I don't think I'm going to put anything
13:02
on my piece of cake
13:03
but the hot fudge sauce, believe it or not.
13:06
And maybe a few chocolate curls.
13:10
And maybe just a little extra.
13:13
Mm. Looks just delicious,
13:15
doesn't it?
13:18
That's so belly pleasing.
13:21
Y'all stick around because
13:22
coming up next,
13:24
one of my favorite ways to put a dessert together,
13:28
Chocolate Trifle.
13:37
I hope y'all are enjoying the show
13:39
and I want to hear from you.
13:40
Tell me what recipes or videos you'd like to see me
13:43
make by just leaving a short comment below.
13:47
Now, let's get back to the show, y'all.
13:55
The last dessert I'm going to
13:57
finish up with today
13:59
is a dessert that Savannahians dearly love
14:01
and that's trifles.
14:03
Now we make all kinds of trifles in Savannah.
14:05
We just love our trifle,
14:07
no matter which way we get it.
14:09
So for today's dish,
14:11
I'm simply using a boxed cake mix.
14:13
So I have just followed the directions
14:15
on the cake mix box
14:18
and I'm going to cook it
14:19
according to the instructions on the box.
14:28
I'll give it couple of wacks
14:30
and into the oven it goes.
14:39
Now I've got one that's already ready.
14:43
Yeah. It's pulled away from the pan.
14:46
Now this is a great way
14:49
for you to know if your cake is done or not.
14:52
When it starts pulling away from the dish,
14:55
you know it's ready.
14:56
All right.
14:57
Now we're going to pierce our cake.
14:59
Now you can do this with a fork or skewers
15:03
but we're just going to come in here.
15:04
And it doesn't matter
15:05
if some of your cake sticks to your fork
15:07
and it messes up.
15:08
That's all right.
15:09
It'll just make it that much better
15:10
and give it that much of a bigger hole
15:13
for us to pour liquor on it.
15:16
So that looks good.
15:17
You want plenty of holes.
15:19
And normally I'll use some kind of liquor
15:22
but you know today
15:24
I think I'm going to use something a little different.
15:26
I made a new friend the other day in the restaurant.
15:29
She was so cute.
15:31
Her name was Mary Alice Pitchfoot.
15:33
And she was telling me about
15:35
a product that she had found
15:37
that she just loves
15:39
because it has no carbs and no sugar.
15:43
So she ran to the car
15:45
cause she said,
15:45
"Paula, would you believe I have a bottle in the car?"
15:48
Normally Mary Alice puts this in her coffee
15:51
because it makes her feel like
15:52
she's almost having a rich, sinful, dessert coffee.
15:58
Now I'm going to put about
15:59
a half a cup of this
16:00
because I want this good and moist
16:02
and I'm going to stick it in the refridge
16:04
and let it sit
16:05
for about three hours
16:07
and let it soak that up.
16:08
I don't too much worry
16:09
about putting too much of this
16:11
because there's no alcohol in it.
16:12
So if any of the children get a hold to it
16:15
that they won't catch a buzz.
16:21
So I'm just going to slip this in.
16:29
And I've got another one right here.
16:33
This has been soaking.
16:35
And these are so easy to assemble.
16:37
There's no laws or rules
16:40
that you have to follow for a trifle.
16:42
Now I'm going to cut our cake in fourths,
16:44
starting down the middle
16:46
and then making two more cuts.
16:53
All right.
16:55
I'm going to put together the cake
16:55
in different layers.
16:56
I'm actually going to pour
16:57
just a little chocolate syrup
17:00
on the bottom of the trifle dish
17:02
so that the cake that I put in
17:04
will actually have something to stick to.
17:05
All right.
17:06
I think I'm going to get this bowl
17:08
a little closer to me
17:09
and I think I can do it
17:11
a little easier with it closer.
17:13
So I'm just going to drop my cake in chunks.
17:15
It doesn't matter what it looks like
17:18
just as long as you keep your layers
17:21
a little even.
17:21
Like I said, there's no rules.
17:23
You just make your own rules as you go.
17:25
Now I'm going to pour a little bit more syrup
17:28
over the cake.
17:30
Oh, this is one of those wonderful desserts
17:33
that you can make ahead of time
17:35
or even the day before.
17:37
All right, I'm going to take a little whipped cream
17:39
and just put a layer of that in there.
17:42
It's looking like a hot fudge sundae.
17:44
Looks so good.
17:47
All right, now I'm going to crumble up
17:48
a little bit of my favorite chocolate candy bar.
17:52
And this is a toffee.
17:54
So when Michael bites into it,
17:56
he'll have big chunks of crunchy candy.
18:00
All right, now we're going to come in here
18:01
with another layer of cake.
18:03
See our pretty layers,
18:04
how it's comin' together.
18:06
A little bit more chocolate.
18:07
Mm.
18:10
Another layer of chocolate candy bar.
18:13
And we'll do another little layer of cream.
18:15
Just gonna kind of spread it out
18:17
a little bit,
18:18
kind of right there in the center.
18:21
Like I said, no rules to this party.
18:23
And it's ready.
18:24
Okay.
18:25
So I'm ready to dip me up a little taste.
18:27
I can't stand it.
18:31
Oh look, I'm going to get down
18:33
and then get me some
18:34
of that fresh whipped cream.
18:40
Oh, and make sure I get some
18:41
of that candy bar
18:44
and I'm going to top it with,
18:46
I think just a little bit more
18:48
of this hot fudge sauce.
18:50
And this was actually
18:51
the same sauce that I made
18:53
for the other cake.
18:55
So you can do lots of things
18:57
with that one sauce,
19:02
You know, too bad,
19:03
this is the only size spoon that I could find
19:05
but I'll make it work.
19:15
We know what we're doing
19:16
in Savannah, Georgia.
19:18
Y'all stick around
19:19
and then I'll be right back for some tips.
19:21
Y'all don't get too far.
19:28
I so hope y'all are enjoying the show.

And we'll be right back after the break.
19:46
I just love desserts.
19:48
Now when you're baking
19:49
cookies and cakes,
19:50
you have to go by a formula.
19:52
But when it comes time to eat them,
19:55
you can do so many things with them.
19:57
You can have vanilla ice cream
19:58
and personalize everybody's bowl
20:01
with peppermint
20:02
or Oreo cookies
20:03
or cookie dough, even.
20:05
And for cereals,
20:07
try taking a sweetened cocoa
20:09
and sprinkling it onto your cereal.
20:11
It will be so good.
20:13
So I hope all of these tips
20:15
will come in handy for you.
20:18
I've changed into something
20:19
a little bit more comfortable
20:20
and I'm here waiting on Michael
20:21
and I have all of his favorite chocolate desserts.
20:24
The Chocolate Toffee Trifle
20:26
and the Savannah Chocolate Cake
20:28
with a hot fudge sauce.
20:30
And these caramelized brownies
20:31
topped with fresh vanilla ice cream
20:34
and whipped cream.
20:35
I hope I've given you some great ideas
20:38
for your sexy chocolate night
20:39
with your favorite person too.
20:42
So until next time America
20:44
I wish you sweet dishes
20:46
from my kitchen to yours.
20:51
